After putting off buying a new pair of running shoes for nearly a year, I finally found a pair that were majorly on sale at DSW at the beginning of November – and super cute, too! I do a lot of my workouts at home (only venturing out to our local gym for the treadmill), so I was able to break in the shoes in the comfort of my own home doing Zumba, HIIT, stationary bike, and several other workouts without blistering my feet and bumbling around like a dork at the gym.

The first week was tough. The shoes were tight on my feet and I was going through the phase where you almost regret buying new shoes. But after purchasing some thinner socks and stretching out the shoes a bit more, I was in business and no longer teetering on the edge of regret.

Now, I live in the country and I feel lucky that we even have a gym in our area, and overall a very nice one at that, but it is a bit lacking in updated equipment. There are about seven older treadmills (not my favorite) and one newer treadmill which happens to be the most coveted piece of equipment in the cardio area of the gym.

Someone is always on that treadmill, but on the rare occasion that I happen to snag it, I never like giving it up to go home because I don’t know when I’ll get to use it again!

Such a first world problem, I know…but my workout time is sacred for me and I like to enjoy the machine I’m using!

Fast forward to two weeks ago when I headed out to the gym to give my newly broken-in shoes a test drive, and my favorite treadmill was taken by someone who was walking…I’m not sure this person understood the importance of the equipment they were using. Regardless, I hopped on an older treadmill down the line from that one because I’ve got personal space issues and I don’t like working out right next to another person (is that weird?).

I’m in my own little world running and listening to Taylor Swift tell me to “Shake it off,” when all of a sudden the treadmill just stops, which of course knocks me off balance and propels me into the dashboard of the treadmill. And then I smell it… burning rubber!

I look around and everyone near me is looking in my direction.

And, to tie my little story into this recipe…popovers are kind of an awkward looking little breakfast, too (like that?). Are they a muffin? Are they a pastry? What are these popovers? I’ll tell you what they are – they are delicious, soft, and fluffy! You bake them in a popover pan (I found mine at Goodwill – SCORE) and the batter you use is a crepe batter. The cavities of the popover pan allow the batter to puff up as the heat of the oven steams the pan, resulting in pillowy, tasty goodness!

These breakfast goodies are incredibly easy to make and I’ve heard rumors to the effect that if you don’t have a popover pan, a muffin pan will work in a pinch. But I haven’t tried that yet, so don’t quote me.

Ingredients

  • 2 tbsp butter, melted
  • 1 cup milk
  • 2 eggs
  • 1/2 tsp almond extract
  • 1 cup flour
  • 2 tbsp sugar
  • 1/4 tsp salt
  • 1/4 cup fresh cranberries

Instructions

  1. Using a basting brush, coat the inside of the cavities of the popover pan with the melted butter. Preheat the oven to 375 degrees and place the pan in the oven while it heats.
  2. In a large bowl, whisk the milk, eggs, and extract together. In another bowl mix the flour, sugar, and salt together. Combine the dry ingredients to the wet and whisk until incorporated.
  3. Remove the popover pan from the oven and place on a baking sheet and pour the batter into each cavity, about 2/3 full and top with 4-6 cranberries in each cup.
  4. Bake for 40-45 minutes, until puffed up and golden.
  5. Serve right away, as the popovers cool, they will deflate a bit.
