
You guys, we had the most beautiful, briefest few days of spring. The temperature was in the mid-60's and we had blue skies and sun. I spent about an hour or so one day just working in the backyard, piling all of the dead leaves into our compost bin and weeding the areas that needed it. I had forgotten how much working in the yard can feel like therapy. We even grilled salmon and burgers over the weekend, which was the most perfect thing. We're back to clouds and rain this week, but I'm already anticipating more days like that in my future!
Since the weather is back to its usual self, my menu is back to its usual self. I'm retesting two different soups at home again this week, as well as a frittata dish I've been working on for the past few weeks. I'll link similar recipes for ya.

Did you notice I added a few Irish recipes into the menu? Our family happens to love these Irish recipes. I fully stand behind enjoying them the whole month, so of course I'll share my St. Patrick's Day Pinterest board but I also highly recommend you try this Irish Apple Butter Coffee Cake recipe out. It is beyond yum! Perfect to make if you're a homeschooler or a weekend breakfast. But if you're looking for dessert, I do love this Irish Apple Pie too. I don't know how "authentic" these recipes are, but I'm also of the opinion that...who cares? They're just fun to make and better to eat!
