We were promised snow and then "they" changed the forecast and we didn't get anything except some hail and the briefest 90 min of mixed snow that I have ever seen. How are you fairing with weather? Usually in February or March we're promised snow and we get an ice storm instead. I don't know if we will get any of that this year, but my pantry is locked and loaded with all kinds of comfort ingredients to make soup, grilled cheese, and breakfast foods.

What's your go-to snow day comfort food as a kid or an adult? We don't have many snow days, so I wouldn't even know where to begin, but I would think some sort of warm drink is necessary. This Grown-Up Hot Chocolate definitely isn't a bad way to go!

Here's what's on the menu for this week!

Crockpot Taco Soup

This crockpot taco soup is easy, tasty, and works equally well in fall as well as summer - pair it with some simple quesadillas and you've got a full meal!

One Pan Salmon, Asparagus, & Sweet Potato Dinner

Sometimes you need a superfood fix, and this one pan salmon dinner with asparagus and sweet potatoes provides a full meal that is easy, healthy, and quick!

Ham and Cheese Quiche with Fresh Spinach

Once you try this classic ham and cheese quiche version of this tasty breakfast pie, you’ll want to make a different one for every morning of the week!

Slow Cooker Pot Roast Au Jus

Special occasion, holiday dinner, family get together? Keep it low stress without sacrificing the wow factor with this slow cooker pot roast au jus recipe!

English Muffin Pizzas

These fun, easy, quick English muffin pizzas are a family favorite - we make them all the time! The kids love designing their own mini pizza masterpieces!

Breakfast Chorizo Hash

Brunch must be the best meal of the day, right? It certainly will be if you serve this yummy breakfast chorizo hash! Not a chorizo fan? Sub in some sausage!

Mashed Potatoes

These rustic mashed potatoes are super easy to put together, but have a creaminess and richness to them that makes them surprisingly craveable for such a staple side dish!

Chocolate Red Wine Cake

Need a dessert that's easy, yet complex, not too sweet, but totally addictive? This Chocolate Red Wine Cake is for you...

Since we're talking about snow days, I'm going to share my chili, soups, and stews Pinterest board with you. Even if you don't have any snow or ice in the forecast, I've been making some sort of soup every Monday for the last month or so, and it has been so fun to have a different variation each week. I hope you find something you like, too.

Have a great week, friends!
