It's been a few weeks since I've done a weekly menu. I'm sorry about that! We recently upgraded the look of our website and we're still working on customizing the categories + we've had some very busy weeks and I had to choose what I could do well...and family life won over!

Despite the lack of posting, I have a ton of new recipes waiting in the wings, and I've been recipe-testing like crazy over here. I'm hoping to get more testing done this week because we're in our seventh week block of school which means we all have a week off. This year we decided to school six weeks on and one week off, so every seventh week is a break. I think it's been really good for the kids and I to plod on, and I think we work better with the variety and knowing the break is coming.

Even though I haven't shared a weekly menu with you, my personal weekly menus over the last few weeks have looked the same. We've been having some form of soup or chili on Mondays, and I've been alternating the same recipes over each week to get them right where I want them. We've been having fish on Wednesday, pizza on Fridays, so that leaves Tuesday and Thursday for other days of experimentation!

Here's what you can find on this week's menu:

Tex Mex Chicken Tortilla Soup

This comforting, brothy take on tex mex chicken tortilla soup is easy to make in a hurry, and features simple, staple ingredients and easy directions!

Teriyaki Meatballs

Basted in a simple, sweet and tangy homemade sauce, these teriyaki meatballs are baked in the oven, making them easy, quick...and yummy!

Easy Chicken Enchiladas

For us, these easy Chicken Enchiladas are classic, one of few recipes we still make from our first year of marriage...you’ll be hooked, too!

Broiled Rosemary Salmon

Have a New Year's resolution to live healthier? Start with this recipe for broiled rosemary salmon! It's easy, low-calorie, ready in 15 minutes, and incredibly good for you!

Beef Stroganoff

Ready in under 45 minutes, this rich and creamy recipe for beef stroganoff is sure to make mushroom lovers out of your entire family.

Mini Crustless Quiche

These mini crustless quiche are an easy, make-ahead breakfast that will save you time while being healthy & flexible with what you can add in!

Crispy Breakfast Potatoes

These potatoes are cooked three different ways. And tossed in butter. This is it, people. These ARE the crispy breakfast potatoes you're looking for.

Coconut Raspberry Oat Bars

These sweet-but-not-unhealthy coconut raspberry oat bars are a delightful little snack...or breakfast...or dessert!

Looking for more recipes? St. Patrick's Day is coming up! Come check out this Pinterest board for some fun Irish recipes! I'm quite partial to this Irish Mac & Cheese. It's everything you want in a macaroni and cheese!

Have a great week everyone!
