Ingredients

  • 2 3/4 cup all-purpose flour
  • 2/3 cup sugar
  • 2/3 cup packed brown sugar
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 large egg, room temperature
  • 1 cup milk (I used 2% milk)
  • 1/2 cup orange juice
  • 3 tbsp coconut oil (or use could use applesauce, canola oil, or vegetable oil)
  • 3 tbsp orange zest
  • 2 cups coarsely chopped fresh or frozen cranberries
  • 1 large apple, peeled and chopped (I used a honey crisp apple)

Instructions

  1. Preheat oven to 350 degrees, In a large bowl, combine the flour, sugars, baking powder, salt, cinnamon, and nutmeg. In a medium sized bowl, whisk the egg, milk, orange juice, oil, and zest; stir into the dry ingredients just until blended. Gently fold in the cranberries and apple.
  2. Pour batter into 2 greased 8x4 -inch loaf pans. Bake until a toothpick inserted in center comes out clean, 50-55 minutes. Cool 10 minutes before removing from pans to wire rack till completely cooled.
