Josh, my husband and the brains + talent (Editor’s Note: Or lack thereof…) behind the all the back end stuff for the blog as well as all of the beautiful photography here, does, believe it or not, have a full time job that is not this blog. I know, it would be so much more fun if this could be his full-time job! 😆 Josh’s full time job requires that he actually do a bit of travel each month. Which means I am occasionally the sole parent, taxi-driver, chef, bath-giver, book reader, and all of the other things a parent has to do (I’m sure many of you can relate – and I can’t even begin to express my respect for those of you with military spouses!). This is one reason I am constantly on the lookout for quick and healthy recipes, especially for dinnertime, that I can whip up easily and that my kids will enjoy.

I shared, at the beginning of the month, a recipe for chicken and rice in the instant pot which is so good – seriously, if you haven’t made it yet, what are you waiting for? I’m bringing you another recipe that I’ve been making for probably about a year now fairly consistently. You see, Cub (my 2 yr old) loves rice, but he really enjoys these chicken and rice meals, and I keep playing with different varieties because they’re really easy to make and they’re kind of a one bowl wonder. You don’t really have to have any sides, because it can all be put together in one bowl.

It is easier to preheat the oven and throw some taquitos or a frozen pizza in there (which I admit I do on occasion), but I just honestly feel better when I am serving my family something that offers more nutrients (and I don’t just mean I feel better mentally!). I physically as a human feel better when I serve something with ingredients I bought for the sole purpose of making a meal at home. It may take longer, but I’ve discovered that as a woman in my 40’s, my body also responds more positively than if I were to feed it something that is premade. However, balance is important and so I don’t begrudge myself the times when I need something that is quick and easy. It is why I buy it in the first place!

My kids really love my Greek Chicken Bowls. If you haven’t made those yet, I highly recommend you do! They are a rather quick and delicious meal. For that meal, I have Josh grill the chicken – but grilling in Oregon isn’t something we love to do all year round because rain is a very real thing here and my smoke detector hates it when I use a grill pan. That’s why this skillet version is an excellent variation of that bowl – still lots of Greek flavors, a few different ingredients, giving you a different look and taste.

This dish quite simply is chicken, artichoke hearts, capers, sun-dried tomatoes, Kalamata olives, and roasted sweet peppers served over rice – I serve it with brown rice (which I make in my rice cooker). However, white rice would work or you could make this garlic butter rice. All can be made in the rice cooker – so convenient. Just be sure if you use the rice cooker and if you’re serving brown rice, be aware it takes longer. I would give the rice at least a 20 minute head start before starting the meal, otherwise you will be waiting for the brown rice to finish cooking.

How many ingredients did I list that come directly from your pantry? Oh yes, this is one of my Pantry to the Rescue meals that you can count on during the school week when you’re tired and don’t want to think or put too much effort into a meal.

If, and only if, you have the forethought and time, I like to marinate my chicken in some olive oil, lemon juice and zest, and garlic for a few hours before adding the Greek seasoning. I find that it just deepens the flavor a bit. But, the Greek seasoning alone is quite delightful and flavorful as well. I like this seasoning blend the best – I always have it in my pantry.

If you want to make this “more of a meal” I would serve it with some naan. My kids love naan and it takes only a few minutes to warm up in the oven.

Ingredients

  • 1 lb. boneless, skinless chicken breast, cut into 1 inch chunks
  • 2 tsp Greek seasoning
  • 2 tsp extra virgin olive oil
  • 1 jar (12 oz) marinated, quartered, artichoke hearts, chopped
  • 1/3 cup oil-packed sun-dried tomatoes, chopped
  • 1 jar (12oz) roasted sweet peppers, drained and chopped
  • 1 jar (3.5 oz) capers, drained
  • 1/2 cup Kalamata olives, sliced
  • Toppings * 1 tbsp Fresh parsley minced
  • Crumbled Feta Cheese

Instructions

  1. Start rice in rice cooker or in pot on stove or ready made - I usually make measure out 2 cups of rice for my family, but I know every family serves more or less. So make the amount of rice that works well for your family.
  2. Rub Greek seasoning into chicken breasts before chopping. Heat olive oil in a skillet over medium heat ( I use my cast iron) and add the chicken, cooking until no longer pink, 8-10 minutes. Stir in artichokes, sweet peppers, sun-dried tomatoes, capers, and olives. Cook and stirring for 3-5 minutes or until heated through.
  3. Serve rice with the chicken. Top with parsley and feta cheese and serve right away.
