Why, yes, I did post a quick bread recipe last month. I’m of the opinion that you can never have too many quick bread recipes under your belt. When I came across this bread recipe, I was so intrigued and I just knew I had to try this spiced pistachio pumpkin bread…and wow is it a special kind of bread! I’ve never tried anything like it before.
This isn’t a bread that takes a long time to prepare. As long as you set out some eggs at room temperature and allow the butter to soften ahead of time (like 30-45 minutes ahead of when you plan to bake this), you’re golden.
Despite there being some sugar in this recipe, it is actually a savory bread, which I love. The spiced mixture comes from the pistachios getting tossed in browned butter (which, if you’ve never had brown butter before, you’re in for a treat) and some spices.
The batter for the bread is fairly basic and don’t be surprised if it comes out a little thick. It’s supposed to be that way.
One of the great things about this recipe is that it makes two loaves of bread – and I think we all know how much I am a fan of bread that you can share with others. Make one for yourselves and give one away – oh, speaking of that, this would make a delightful hostess gift for a holiday…or make this a day or two in advance and set it out with some other appetizers for Thanksgiving or another holiday. Not only will it stave off any hunger pains anyone might have from standing in a kitchen and socializing while immersing yourself in all of those savory aromas, but it will look pretty, too! I like things that look pretty! 😆
You might find that if you don’t end up using it to serve alongside your holiday feast, this bread also pairs really well with coffee, with a bit of butter, or even with some soup or chili! It’s a nice change from rolls or cornbread.

Spiced Pistachio Pumpkin Bread
For a recipe with such complex flavor, this Spiced Pistachio Pumpkin Bread is surprisingly easy and quick to bake. Make a loaf (or two)!
Ingredients
- Nut Mixture
- 3 TBSP butter
- 1 cup chopped shelled pistachios
- 1/2 tsp ground tumeric
- 1/2 tsp ground cumin
- 1/4 tsp cayenne pepper
Batter
- 2/3 cup butter, softened
- 2 2/3 cup sugar
- 4 large eggs, room temperature
- 1 can (15 oz) pumpkin puree
- 2/3 cup water
- 3 1/2 cups self-rising flour
- 1 tsp pumpkin pie spice
Instructions
- Preheat oven to 350 degrees. In a small saucepan, melt the butter over medium heat. Cook until butter is golden brown and speckled - it will smell slighly nutty, about 5-7 minutes. Remove from heat; stir in pistachios and spices. Allow to cool.
- For the batter, in a large bowl, beat the butter and sugar together until crumbly. Add eggs one at a time, beating well after each addition. Beat in pumpkin puree and water. In another bowl, whisk flour and pumpkin pie spice; add to butter mixture just until moistened. Fold in pistachio mixture.
- Transfer to 2 greased 9x5 in loaf pans. Bake until a toothpick inserted in the middle comes out clean, 65-70 minutes. Cool in pans, completely. Once cooled, remove to wire rack. To store, wrap in plastic wrap for up to a week (if it lasts that long) alternatively, you can freeze the loaves after they have completely cooled. Wrap in plastic wrap and then foil, then freeze. To use, thaw at room temperature.
