Weekly Menu 8/15-8/21

I'm back!!

We had a fantastic week at the beach, I'm wishing we were still very much there. But there is such a thing called reality and to quote Owl City, " Reality is a lovely place, but I wouldn't want to live there!" Yup, that can sometimes sum up the way I think most people feel sometimes.  Since, we've been back, it's been go go go...but as Josh and I were laying in bed talking last night, we said it was maybe a blessing we were so busy being busy because we have Monday morning on the forefront of our mind, that he would be back to work and I would be here missing him like crazy. However, Monday was a pretty wonderful day because Eden turned 3 years old and that is something to celebrate!

Because of Eden's birthday being yesterday, the menu took the back seat. Well, that and we haven't gone grocery shopping yet either...in fact, I'm sitting here at the desk with the grocery list staring me in the face. I have a good idea of what we'll be making, but I like to post the menu once the shopping is all done. We are going grocery shopping tonight, so at least we will finally get some food in the house.

The order of the menu...except for obviously Monday and Saturday are subject to change...so just go with me here :)

Monday
We took Eden out to California Pizza Kitchen because she had her free b-day meal.
Tuesday
I have a feeling we'll be grabbing food from the deli and eating while we shop. I would of gone grocery shopping by myself this afternoon, but Josh said he wanted to come with me to look at the seafood choices...but honestly, I think he just wants to be in my company ;)
Wednesday
From the week before last, Sausage and Bell Pepper Grilled Pizza
Thursday
Grilled Balsamic- Chicken Salad with rolls
Friday
BBQ Chicken drumsticks, Chipotle Lime Corn on the Cob and my dad's BBQ potatoes 
Saturday
Eden's Birthday Party
Grilling Hot Dogs with Oriental Chicken Salad and other foods
Sunday
Chicken Chimichangas with Mexican rice
I've got two other dinners on standby, if for some reason these meals don't sound good to us for some reason.  I'm excited about the corn on the cob dish because Josh is not a fan of corn on the cob, but I thought if I could dress it up with flavors he likes, maybe that would seal the deal for him ;)
Desserts/Treats
I'm going to be making cupcakes for Eden's birthday party again. I gave her a choice between a cake or cupcakes and she wanted the cupcakes. I haven't found a recipe I like yet and I'm kicking myself for not buying the CupCake Bible that I saw at Barnes and Noble last night. Eden wants chocolate and white cupcakes, so we'll see what I come up with it. 
My family's incredible Blackberry Cobbler
Cookies for Josh's lunch...I'm not sure which ones I want to make though...
You see, I still feel so scattered brain when it comes to my menu. I'm just not as prepared as I would like. Oh well. I will figure it out and I'm sure it will all be good.

    Yummy stuff and keep busy..rwality is not always bad but agree beach is better;)
