Weekly Menu | Catz in the Kitchen | catzinthekitchen.com | #mealplanIs the 4th of July really next week? Josh and I had to run into the store briefly today and pick up some steak for the Steak Street Tacos we were going to make for dinner and as we were pulling out of the parking lot, we saw a big tent setup on the grass...and we were puzzled as to why there was this big empty tent just sitting there. Then it dawned on us that it was for fireworks.

Every year it sneaks up on us.

Really, I just cannot believe that June is almost over. I really feel like it was just the end of May - summer hasn't even really hit here yet; our temps are still all over the place (including rain for this week) - and I'm paranoid that summer is already halfway over, even though we just welcomed the season on Friday! I always feel like summer is the season that flies by the quickest.

This week, I'm doing a TON of recipe testing. I think I'm going to try to test somewhere between 5-6 recipes...?! Maybe even one to two more if I have time, plus brainstorming pumpkin and holiday recipes. I was telling one of my sisters the other day that with school being over, I only have so much time to get as much done as possible before it starts back up again! I'm sure I'm not alone here.

I'm attempting to be more prepared this year...attempting being the operative word...

Queso Mac & Cheese
Oven Baked Fried Chicken
Southwest Chicken Salad
We have struggled with making good classic sliders at home, but these bacon skillet sliders with homemade thousand island dressing are getting it RIGHT.

Love the classic combo of steak, cheese, and fried onions? Turn that sandwich craving into pie form with this easy and quick Philly Cheesesteak Pizza!

This easy recipe for one pan honey apricot pork chops is not only tasty and healthy, it's a winner all year long, with fresh fruit or canned!
One Pan Honey Apricot Pork Chops
This crockpot taco soup is easy, tasty, and works equally well in fall as well as summer - pair it with some simple quesadillas and you've got a full meal!

4th of July Pinterest Board

Because the 4th of July is next week, I'm going to share my Memorial Day/4th of July Pinterest board with you. Hopefully, if you don't already know what you're bringing or making for the holiday this will give you some ideas.

I hope you all have a great week, and I'm looking forward to sharing some of the recipes I've been working on for you!
