Weekly Menu 9/12-9/18

We're all coming off of a very hot week here in Oregon, but last night the temperatures really started to dip.  When we went to bed, the air was cool and there was a breeze. This morning I woke up to clouds and I had to shut all the windows because the kids were to cold. But now it's afternoon and the sun has come out and so has some warm sunshiny rays. We're expecting still a warm week, but quite cooler than it was last week and I for one am ready for it.

This is the time of year where we begin to really reap the benefits of of our gardening. Sadly though, our one huge heirloom tomato didn't make it due to bugs, but, our bell peppers, herbs, and Roma tomatoes are doing beautifully and since I wasn't able to plant veggies like I really wanted to this past spring, but thankfully I have a very generous church family who've been dropping off tons of fresh veggies at our church so we can all take as much as we like. I've grabbed some zucchini, yellow squash, tomatoes, and cucumbers :) I've got plans for the zucchini and yellow squash this week.

Monday
Grilled Salmon 
( I've found a few recipes online that I'm drooling over, so I'll let Josh pick)
with potatoes and corn
Tuesday
I've got some beautiful cherry tomatoes I need to use, so I think this Cherry Tomato Pizza Margherita is just thing...of course, we will grill the pizza though :) 
Wednesday
BBQ Chicken Sandwiches with green beans
Thursday
I'm going to try out a Pumpkin Macaroni and Cheese from my sister in law's blog with a side salad
Friday
Oriental Chicken Salad with rolls
Saturday
Crockpot Minestrone Soup with some "Olive Garden" inspired Breadsticks
Sunday
I'm sure we will come up with something :)
I forgot to mention earlier that Grace is leaving to go camping with my family for a few days at the end of the week.  Her leaving is always sad, because I love cooking for her because of her great appreciation for awesome food.  I plan to do some baking this week as well :)
Desserts and Treats

Chocolate Zucchini Bread
I'm going to make some cookies for Josh's lunch maybe tomorrow. I'm contributing to a crazy cooking challenge and the challenge for October is Chocolate Chip Cookies. I need to find a recipe on a blog that is a cookie and has chocolate chips in it...so I'm thinking about doing a cookie with chocolate chips and sea salt ;) I've got a few recipes bookmarked that I'll show Josh later on tonight to see what he thinks he would like the best :)
