I don't know about you, but not only am I happy to get that extra hour of sleep back (thank you daylight savings), but I'm also eagerly anticipating Christmas now!

I know! What changed?! Just a few weeks ago I was bawling my eyes out about how I wasn't ready...but on Thursday I went to my friend's house for her homemaking and hospitality class and it was all Christmas-y and fun and now I'm in the spirit!

I'm even listening to Christmas music right now! SO. MUCH. FUN. Or, alternatively, I'm one of those people you love to hate because I'm listening to Christmas music in the first week of November. Just instrumental. Not the big stuff. Calm down.

Stir-Fry

Crunchy on the outside, soft and hot on the inside, with just the right amount of zesty kick, these Copycat McMenamins Cajun Tots are where it’s at.
Cajun Tots
Turkey Meatloaf
Chickpea Pot Pie
What’s better than a tasty recipe for traditional lasagna? One that’s freezer friendly with two different ways to make it (quick or from scratch)!
Traditional Lasagna
Garlic Three Cheese Pizza
Tuscan Tomato White Bean Soup

Before I forget, I'm going to point you in the direction of my Thanksgiving/Leftover board on Pinterest so you can start preparing for the holiday now. There are a ton of delicious recipes on that board - some are mine and some are other bloggers, but I'm especially partial to our two beloved family recipes on that board. The sausage egg casserole we eat everything Thanksgiving morning while we watch the parade and my mom's Candied Yams. But, if you're looking for a dessert...you can't go wrong with my Sweet Potato & Nutella Pie. It's really a thing of magic and beauty, you see...

This week's menu is yummy. I'm making meatloaf for Eden, and since I can't share the recipe, I'll link up a different one that is really good. Then Stir-fry, because I love me some veggies (and it's easy), as well as some other goodies.

Don't forget to check out our Healthy Apple Pie Egg Roll post to enter to win a fun little giveaway!

Have a great week everyone!
