Weekly Menu | Catz in the Kitchen | catzinthekitchen.com | #mealplanYou may have noticed (or maybe not!) that I was a little MIA last week. I was going to send an email out and explain to subscribers who don't follow me on Facebook or Instagram that I was taking a social media break for the whole week. In the end, just decided a silent sneak out the front door was best. Josh and I flew to Maui for a few days last week for our 16th wedding anniversary, and it was amazing! It was a perfect getaway to reconnect, reminisce, and relax. The funny thing is, Josh and I are not really lay-by-the-beach people - but we completely fell in love with Maui (it was our first time). The sounds, sights, and of course the food - a dreamy place, as I'm sure many of you already know!

But now I'm back and it's back to business, which is not such a bad thing because there's a lot to love in everyday life. Josh and I always say how nice it is to still love coming back to your life and home after vacation. I think it is an important aspect of gratitude, but you have to choose to see it that way!

We actually have a very busy week here at home this week. Our daughter Eden turns 11 years old on the same day as her grandmother and we're surprising Eden with tickets to see The Piano Guys (shh, don't tell her!). She loves them...I mean, who doesn't?! We've also got our county fair this week among a few other things, so I'm not cooking all week, but I'll supply all of you with lots of great dinner options I know you will love.

Since I'm getting this post out late (Still a bit on vacation mode over here), I'm going to keep this post brief and share my Salad board with you from Pinterest. I ate the best salad for lunch one day in Maui and I'm still dreaming about it - it had avocado and goat cheese on it and I need to recreate it ASAP!
