Catz on Holiday: Recipes Inspired by England

Hello from England! Our family is on a long-awaited two week vacation, and currently we're in London. We spent two nights in NYC before flying across the Atlantic, and let me just tell you, to the eyes of this first time visitor, London is magical! I'm so enamored with this city. I believe I could people watch, walk around, sight see, and, yes, sample the English food, for much longer than the five days we have here. This city is so rich in history and beauty that is at once so different from the United States, and at the same time just familiar enough. I was telling Josh it feels so neat to suddenly be outside of my U.S. bubble. I totally understand why people choose to invest in travel. A book, magazine, or even a movie can do a lot of things for you. But it cannot replace the experience (especially a first experience) of visiting some place far removed from your own.

I could go on and on, and I will write a post about our travels...but since we're not doing a Weekly Menu this week, and we're over here in the UK, we thought it would be fun to do a little highlight of some of our English or English-adjacent inspired cuisine that we have on the blog. None of these recipes claim to be anything authentic, mind you. I didn't know what a proper scone was meant to taste like until yesterday (or Devonshire clotted cream and ...WOW)! But, I do have several recipes that are "inspired" by this side of the pond, if not really at all traditionally made...

3 Ingredient Roast
