So, I’m kind of in love with this dish! I have found myself getting inspired by some of the seasonal vegetables that are showing up in the farmer’s markets and stores. While we were on vacation a few weeks ago, I took some of my cooking magazines that I had set aside specifically so that I could take my time flagging through the recipes the peeked my interest. I came across this recipe in my October edition of my Rachael Ray magazine and knew I had to try it. Not only did it look incredibly simple, but I knew I wanted to give kale another try. I think it’s such a misunderstood superfood.
I was shocked at how much my family and I enjoyed this meal. This recipe was budget friendly and so so flavorful! The kale, took on a flavor very similar to broccoli which I wasn’t expecting. I had expected it to be mushy and more like creamed spinach I think, but it was delicious! The sausage gave the pasta just enough spice while the sauce was light and took on the flavor of the rest of the ingredients. This is a meal I think we’ll end up making quite a bit during the colder months.
