Cod & Vegetable Skewers with Basil Chimichurri

I am always looking for fun new grilled dinners. I love playing with skewers, too. There is something about having your food on a stick that instantly makes it more fun and seemingly exotic. This dish is both of those things.

I've been wanting to make a chimichurri sauce for awhile now. I've seen Rachael Ray make them several times on her shows. Whether it was drizzled over steak or chicken, it always looked insanely good. I had yet to see this sauce drizzled over fish though, until I was watching Melissa d'Arabian make this meal on her show Ten Dollar Dinners.

From the marinade, to the skewer ingredients, to the chimichurri sauce (I dare you to say chimichurri ten times fast) this dish is easy, affordable, and so aromatic. As Josh commented while we were washing the few dishes that it took to make this meal, this dish tastes exactly the way you think it's going to taste after you smell it. It's hard to describe specifically, but suffice to say, smelling the dish is a lot like tasting the dish.

I can't promise this is going to be a dish your kids are going to love. Surprisingly, mine did. My girls are pretty good about trying new things at least once. They happened to adore this dinner. Eden was practically drinking the sauce and begging for more fish and Grace helped herself to seconds and maybe even thirds. By the end of the meal, all the food was gone except for a little bit of rice, which I will say complimented this dish really well. So if you're looking for an easy dish that tastes like something you might order on an island paradise vacation, try this!

Cod & Vegetable Skewers with Basil Chimichurri

For the Marinade:
¼ cup chopped white onion ( I used ½ of a large shallot)
1 clove garlic, minced
¼ cup vegetable oil
juice of ½ lemon (about 2 TB)
2 TB white wine vinegar
Kosher salt and freshly ground black pepper
For the Fish Skewers:
10 ounces firm white fish, such as cod (about 1-inch each)
3 small zucchini and/or yellow squash, about 1 ¼ lbs, cut into 1-inch pieces (used both veggies)
10-20 cherry or grape tomatoes (the amount depends on how much you like to load your skewers up with veggies-we like a lot of veggies)
For the Chimichurri Sauce:
1 ¼ cups fresh basil leave, coarsely chopped
¾ cup fresh parsley leaves, coarsely chopped
1 TB finely chopped sweet onion (we used a shallot because that's what we had on hand)
1 clove garlic, minced
pinch crushed red pepper flakes
Kosher salt and freshly ground black pepper
⅓ cup olive oil
juice of ½ lemon (about 2 TB)
1 TB white wine vinegar
8-10 (wooden skewers, soaked in water for at least 30 minutes.
For the marinade: In a medium glass bowl, mix together the onion, garlic, oil, lemon juice, vinegar, salt and pepper, to taste. Add the fish and squash and marinate at room temperature, about 15 minutes.
For the chimichurri sauce: Combine the basil, parsley, onion, garlic, red pepper flakes, salt and pepper, to taste olive oil, lemon juice, and vinegar to a food processor bowl and pulse until the ingredients are just combined and chunky. (A blender would probably work just as well)
Pre-heat the grill on high.
For the fish skewers: Thread the marinated fish and squashes, and tomatoes onto the soaked skewers. Place on a well-oiled grill and cook until lightly charred on the outside and the fish is just cooked through, about 3-4 minutes per side. While the fish is still warm, drizzle with a little chimichurri sauce and serve more on the side for dipping.
Serve over a bed of rice.

1. I'm posting this later in the day only because I have spent the morning with Eden doing fun things. We had lunch with Josh and then I took her to go see Ice Age 3 because she's been wanting to see it. It's cute. If your theater is cool like ours and you can get in on a $5 day, then I would spend the money. However, my nearly 4 yr old decided that after she inhaled an entire small bag of popcorn ( yes, she ate more than ¾ the bag) that it was naptime and became very tired and spent the entire movie shifting positions on my pregnant lap. So now, we're home, she's napping and I'm resting.

2. It seems as though I need a lot of resting. I like to rest everyday. I think it's a pregnant thing, because I'm not necessarily tired, I just kind of get worn out easily. I feel worn out, but in a good way ya know?

3. I still haven't made a menu for the week. Do I have to this week?

4. So, three movies I'm excited for that I saw trailers for today at the theater. An animated movie called "Epic" looks really good and interesting. Despicable Me 2 looks great. And here's the one the surprises me the most...I'm actually excited in seeing "The Hobbit!" I think it's because I've only seen the trilogy a half a million times because of Josh's siblings which there in forced me to like it, because now I really enjoy the movies. I wouldn't call it love, I would call it enjoyment.

5. My pregnancy is wrecking havoc on my dreams. Seriously...if Josh keeps up what he's doing in the dreams, he will find himself sleeping on the couch, lol!

6. In all actuality, Josh is amazing. I mean, he bought me a Mcflurry last night. If that's not love, then I don't know what is :)

7. Please don't bombard me with hate mail, but I really don't care about the olympics. I like the Gymnastics and ice skating when they have it. Otherwise, I'm bored and would rather do something else...anything else! Well, except clean the bathrooms.

8. Grace is camping with my parents. Normally this mean, Eden makes a gigantic mess of their bedroom and since Grace is gone, that leaves me to try and coax Eden to clean it. This morning, she came in my bedroom while I was trying to wake up and handed me a Barbie doll. She couldn't get the top buttoned on Barbie ( go figure, she was trying to dress Barbie in Skipper's clothes), anyways...back to Barbies. These kids, have a lot of Barbie things, thanks to yours truly. I saved everything from when I stopped playing with them. Anyways, I knew I was going to be the one to clean up the mess. So I begrudgingly got in the shower and began to mentally prepare myself and my body that I knew would be crawling around on all fours picking the stuff up. When I began the make-up and hair process (yes, in that order) I reminded Eden two times that I needed the room picked up. She said," I did!" I wandered into her room prepared for what I was about to see. What I saw, I was not prepared for. EVERYTHING, was picked up and put neatly back in it's place. And that's not all. Her bed was made too! I stood there and blinked forever, and then made a huge deal over her great deeds! Seriously, I swear, her room looks like Grace cleaned it.

9. I'm dreading Josh coming home and asking what we should do for dinner. Like I said in yesterday's menu, I do have two meals planned out. But they don't sound good. Nothing sounds good! Except some cold lemonade. That sounds marvelous.

10. This week, I have to go through all of Grace's school supplies and see what she needs and doesn't need. That's a big job! But I'll do it, because I enjoy buying school stuff. I think it's fun. In the next few weeks, we'll look into and actually order her school books for the following school year. I can't believe she is going to be in 3rd grade! Yikes!

No Weekly Menu This Week

I was going to make a menu this week. I really was. And, I still am. I have every intention of making one to help me get through this week. But because Grace is gone camping, again :( and our week is really up in the air until she gets back...okay, you got me! The real reason that there is a barely there menu at the moment is because my pregnancy cravings are preventing me from committing to anything.   One minute something sounds delicious and then it doesn't and I don't know what I want. Josh and I managed to do a great job and completely stick to the menu last week. There was some rearranging we had to do, but everything got made and it was really delicious.

This week I think is a different story. Nothing sounds good to me. Josh came home for lunch and wanted to know what we had planned, and the two dinners I had planned out for Monday and Tuesday before we go grocery shopping sound horrible. So I'm not sure what to eat. I'm sure I'll figure it out and eat something, but the menu is kind of off the wall this week.

And just a heads up for next week, I do plan on posting a make shift menu, but next week is so busy for us. My dad and his new wife (whom I haven't met yet) are coming into town for a few days. His wife is from China and she would like to make some real Chinese dumplings, which I would love to learn how to make or watch. I guess it's like an all day process though, lol! And, we also find out the gender of the baby (Whoop Whoop), it's about time!!! And, let's throw two more things into the mix, Josh and I are celebrating out 9 year anniversary and my 10 high school reunion. So a lot of dinners toward the weekend are not really planned out. But I do have an idea for the beginning and middle of the week. That's a step in the right direction right?

1. Did anyone else have a really hard time dealing with Aurora, CO shooting? I felt like I was in a fog all weekend and that I'm just now kind of coming out of it. I think it's important to keep all the victims and their families in our prayers.

2. The baby is now the size of a mango!!! I'm 18 weeks and feeling some definite movement now. I'm loving it. Last night I was laying in bed and I could feel the mango squirming around trying to get comfortable, perhaps. I was pushing all over my stomach trying to locate it and I finally found a hard lump near the bottom of my stomach. I was pestering it like crazy and it just kept moving away from me, which was pretty funny. I used to do that when Eden was in my tummy too. It was always endlessly entertaining.

3. My deep dark craving this past week was ice cream bars! Not just any kind of ice cream bar, but the kind that is really coated in chocolate and makes a big crunch or snap when you take that first bite into it. That was what I wanted. Josh went out and bought me a box of the Magnum Ice Cream bars (which happened to be on sale) and they were awesome. Not only were the calories really low, but that first bite was AAAAmazing!!!!

4. I can almost set my clock to it...I get hungry every two hours after a meal. Like starving! I need more healthy snacks in this house.

5. So there is this guy at the gym who is really nice, but kind of won't leave me alone. He is younger than me at the prime age of 21 years old and is always striking up a conversation with me. I told him a few months ago, very casually, that I was married and expecting my 3rd child. This didn't really seem to phase him much. So last week, Josh met me at the gym on his lunch break and planted a big smooch on me while the guy was there. And then when I went back later in the week for another workout, the guy proceeded to talk to me while I was on the elliptical for 15-20 minutes! Clearly, at this point I look like I'm pregnant. He clearly knows I'm married, seeing as though I bring up the husband's name every 5 secs. Either he just likes my company and thinks I'm oh so sweet or what...I don't know. I'm kind of afraid to think of the latter. So I'm just not flattering myself and going there. I'm just going to keep thinking that he likes my sparkling personality and that's all there is to it.

6. I gotta tell you, collecting your shows on dvr is awesome. Josh and I ended up letting a couple seasons pile up on our dvr and we've slowly been working our way through each show. I love this, because I don't have to wait weeks in between each episode and no commercials and it's just awesome! We just finished watching the Fringe season finale! So awesome! I think, though, now we're out of shows. He wants to watch X-Files and I'm like Nooooo! These are the times I really miss and wish 24 was back on tv. Speaking of good old Kiefer, has anyone watched his new show Touched? I know it got picked up for another season. Is it pretty good?

7. I found a dress to wear to my 10 yr reunion! I was kind of struggling with what to wear. It's been suggested that we dress in Cocktail wear. And while I love this, I was debating on what to dress my pregnant body in. I really hated the idea of buying a maternity dress just for the occasion. So I went through my closet the other day and found one of my Little Black Dresses, that will work perfectly! The material is very breathable and non squashing, but yet still elegant enough to work. And the funny thing is, I don't even look pregnant in it. I'm debating about buying a pair of heels to go with it. I've still got those Neon Yellow Peep-Toe Slingbacks in the back of my head. I think I need to head back out to DSW and grab them.

8. Speaking of reunions, how many of you (if your old enough to have already had one) went to your 10 yr? I really debated about it for a long time. High School wasn't exactly the best experience I've ever had, but there are a lot of people I've kind of reconnected with, that I didn't really talk to much back then, and it would be nice to mingle and get to know them better and maybe strike up some more friendships. At any rate, at the price I was able to lock in for the reunion, it's not a lot of money for Josh and I. I mean, well it is, but it's not and it's only for a couple of hours. There will be an after party at a nearby bar, but seeing I'm part of the no drinking club right now, we won't be attending that. Either way, it should be a fun night, right? Right????

9. Did I forget to tell you that my cough is completely gone? I can't remember. Anyways, it's so gone it's in Norway by now! The rib fracture, however is still here. But, each week I like to tell myself that the pain is more bearable than the previous week.

10. We ate shallots last night! I've been wanting to try them for awhile, but I was kind of scared...cuz I hate me some onions! But these, we're really good. Crunchy, yet they didn't have that horrible flavor that most onions have. Even my girls gobbled them up, and loved them!

Weekly Menu 7/23-7/29

How was everyone's weekend? Ours got so busy so fast! But, we did end up having some fun too. Our weather here has been pretty odd. Last week, we were being threatened with thunderstorms, that never really happened and cooler weather for this time of year. Today, the blue skies are fighting their way out from behind the clouds and the sun is trying to peek out. I like the cooler weather, but not the cloudy skies. I shouldn't have  to wear a cardigan all day long.

In other news, my tomatoes are growing! I have 3 or 4 roma's that are taking their time doing it's thing. It makes me really sad that we never got the chance to plant that garden Josh and I were dreaming about. But I do have one roma tomato plant and two different kinds of basil that are growing and I feel like I should be grateful just for that. Is it still to late to plant anything else?? I really want too!

Thoughts on Grilling Salmon

I wouldn't consider this a recipe in the traditional, full-blown sense. That being said, we've been experimenting with grilling seafood in general and salmon in particular quite a bit for the past few years, and I've gotten pretty comfortable with a base concept for tender, flaky, moist salmon fillets. There isn't necessarily anything incredibly original about my thoughts here - they are gleaned from a variety of magazines, blogs, and cooking shows. I've tried a number of different ideas, but this is the surest way I have found to hit a home run every single time. These directions also work very well for steelhead - if you see a better deal on that, grab it!

First, cut your salmon fillets into "steaks" about two inches wide down the length of the fish. Not only are these smaller pieces easier to portion, they are far more attractive for presentation, and much easier to grill evenly. In my experience, a one pound fillet will yield about four of these "steaks," and you'll probably want two for each adult you're feeding (one is fine for most children). Rinse your cut fish under cold water, dry it with paper towels, and lay it skin side down in a glass baking dish.

In a small bowl, mix a couple tablespoons of lemon juice, a couple of olive oil, and some freshly ground black pepper together with a wisk. Pour the mixture over the salmon in the baking dish, being sure to let the mixture run over each piece of fish. It will pool in the bottom of the baking dish. I normally complete this step of preparation about half an hour to an hour before grilling time, and then cover it and put it in the fridge until I'm ready for it.

When dinnertime arrives, oil your grill and preheat to high. Reduce the heat to medium before putting the fish on the grilling surface. Take the salmon out of the fridge, and spread some loosely packed brown sugar on each piece. Take some foil, fold it in half (to provide a doubly thick barrier for your fish), spray it with a non-stick grilling spray, and lay it over the grill. Using tongs, very gently pick the pieces of salmon up out of the baking dish and place them "face down" (skin side up) on the foil. Depending on the thickness of your salmon fillet, you'll need to give the fish about five to eight minutes per side. When you turn the fish over so that the skin is facing down, spread a little more brown sugar on the top of each "steak." Once your cooking time has elapsed the second time, gently lift each piece of salmon and place it directly on the grill, skin side up (depending on the size of your grill, you may have to remove the foil to achieve this - for larger grills, simply leave one side of the grill uncovered). Let the salmon cook this way for about one minute, and then remove it from the heat and serve immediately. This final step puts some beautiful grill marks on the fish, and helps carmalize the brown sugar topping.

This is my favorite way to grill salmon and steelhead. It reliably produces moist, tender fish with a delicious carmelization. You can serve it with a variety of toppings, add limes, lemons, and oranges to the grilling process, spice it up with a chili carmelization instead of brown sugar, and add an infinite number of side dishes (potatoes, salads, breads - you name it!). Enjoy!

two to three tablespoons of olive oil
two to three tablespoons of lemon juice
freshly ground black pepper
roughly half a cup brown sugar

Tuesday's Tidings for July 17, 2012

1. I've been given permission by my dr./obgyn to get back to the gym. As long as I don't push it. So far I've gone twice since last Thursday and loved it! It felt so good for me to have some sort of release and listen to my music and zone out. I've discovered though, that my treadmill days are over until after the baby is here. My body can't handle the impact of it, but the elliptical is more than willing to take me on without any pain. YAY!!!

2. We've scheduled the Ultrasound!! Next month on our 9th anniversary, we will find out what this little dumpling is...I hope. Please cooperate little dumpling! Mommy will buy you all the ponies in the land! Okay, that's a lie! But I will love to you pieces!

3. I get way to wrapped up in my soap opera drama. I watch the Young and the Restless. I've been watching it since I was a wee little thing. One of the characters, Nick Newman...looks like my husband. I'm convinced of it. And this is a huge compliment to Mr. Joshua Morrow (who plays Nick) because my husband is just the hottest male specimen EVER! Anyways, every time he's on screen I feel like I'm  watching my hubby embrace other woman. This doesn't jive well with my pregnant hormones, lol! I guess I could stop watching the show. But then What would I do for entertainment, hahaha?

4. My hubby is planning on going to see Dark Knight Rises this weekend. I will not be going because I can't deal with Imax theaters. I walk away with a migraine, as I do when I watch 3D movies. I'll put up the with rare 3D animated movie only because it's for my kids. I wish I was going, but at the same time, I really don't care that much. How is that for decisiveness, lol!

5.  Josh grilled salmon on Sunday. It was the most incredible thing ever. I'm still drooling over it!

6.  The hubby has got us playing a game of Monopoly on his iPad. I think I'm addicted, lol!

7.  I happen to be one of those pregnant girls who loves buying and wearing maternity clothes. Goodwill is making a heyday out of my pocketbook. So many key pieces I still need though...and not enough money to go around, lol!

8.  I think I need a nap!

9. Today, I watched my cat try to catch this darn fly for 15 minutes. I just stood there. Completely entertained. I need another hobby.

10. What Not to Wear is on tonight! I love love love that show. Sometimes I dream about trying to dress really really bad and getting on that show. But I just couldn't walk around the world in my pi's all day. I just couldn't, lol!

Weekly Menu 7/16-7/22

I'm watching Inception right now, for oh, I don't know...the 50th time it seems. This movie gets me every time. I always walk away thinking that inception is real. I feel like there have been many times when I've had the experience of a dream within a dream thing go on. Anyone else experience this?

Okay, maybe I'm thinking too deeply, or maybe a bit too crazed like. It is, after all a Sunday evening when I'm writing this and I'm trying to forget that the reality of tomorrow is Monday and not Sunday all over again. I don't want my weekend to be over.

So, how was your weekend? Ours was really good and really busy. Josh really felt the need to mow the lawn today because it's the weekend. But I was able to convince him that after our busy weekend of running around and having fun that all we really needed to do was relax and unwind for the last remaining few hours of our Sunday evening. That's what we did. He prepped our delicious dinner as well as made it, and I sat on the couch and did nothing. Well, I drank my iced coffee and hung up some clothes, but really I allowed myself to just kind of do nothing. I was really tired and my feet hurt because I insisted on wearing my wooden Michael Kors wedges all weekend (they are my favorite shoes) and so I let myself unwind. Believe it or not, this actually means that I didn't even make my bed today. *GASP* Shocked, aren't you? Are you ready for my menu?

Creamy Garlic Pasta

I get a lot of requests for one pot dishes. That can be a tall order to fill sometimes, because so many recipes have many different steps that most of the time require a lot of dishes, pans, and pots. Summer is here now and we all want to be outside enjoying the beautiful weather, not slaving over a hot stove/oven in a stuffy house.
I found a recipe winner for you! I was cruising Pinterest one afternoon - like I do almost daily - and my attention was grabbed by the title of a garlic pasta. You all know how much I love garlic. The more the better. So if you are not a garlic lover...I'm sorry, but you will NOT like this dish at all. I have a suggestion for ya though - learn to love garlic! It's amazing!
Not only does this dish promise a creamy delicious garlic flavor, but it's a breeze to make. I'm talking like 20 minutes start to finish cooking time. The noodles get infused with a garlicky chicken flavor from the very beginning and then it's finished with a blast of cheese and a splash of cream and the end result is just a decadent pasta dish that tastes like something you would've ordered from your favorite Italian restaurant.

Creamy Garlic Pasta

Creamy Garlic Pasta

Yield: 4-6
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes

So if you are not a garlic lover…I’m sorry, but you will NOT like this dish at all. I have a suggestion for ya though – learn to love garlic! It’s amazing!

Ingredients

  • 2 teaspoon olive oil
  • 4 cloves garlic, minced
  • 2 tablespoon butter
  • ¼ teaspoon salt
  • ½ teaspoon pepper
  • 3 cups chicken stock
  • ½ lb spaghetti or angel hair pasta
  • 1 cup grated parmesan cheese
  • ¾ cup heavy cream
  • 2 tablespoon fresh chopped parsley

Instructions

  1. In a pot, bring the olive oil to medium-low heat. Add the garlic, and stir for 1-2 minutes until fragrant. Mix in butter until melted. Add the salt, pepper, and chicken stock. Raise the heat and let it come to a boil.
  2. Once the stock is at a boil, drop in your pasta and cook according to the box's direction. Reduce the burner heat to medium heat and mix in the parmesan cheese until it's completely melted. Turn off the heat and stir in the cream and parsley. Serve immediately.

Tuesday's Tidings for July 10, 2012

1. I got my hair done this past Friday and I am so thrilled. It is exactly what I wanted!!! It's amazing how much better you feel after getting your hair done!

2.

I'm 16 weeks pregnant this week. And I definitely have a bump! The babe is the size of an Avocado...which is really to bad, because right now, avocado's make me want to hurl, lol!
3. So I just have to commend DSW on fantastic customer service. I had bought a pair of heels awhile back, but they were to big. So I was able to return them without a problem. So I bought another pair of the same shoes in a smaller size online. They were wayy to small! Unfortunately, I was slipping all over my carpet so I wore them in my driveway to see if I was at all able to deal with it. But no, I couldn't handle it. So I took them back to the store. The sweet girl who helped me let me return them anyways, even though they can't sell them again and I got store credit for the shoes. I found the hottest pair of neon yellow peep-toe sling backs, and they were calling my name! But alas, I got something very practical that I can bike ride in.
Say hello, to my new blue friends that I got for dirt cheap on clearance! These are sooo not my usual shoe, but they will do the trick for what I needed!
4. So we got Noel her own set of fake nails! These little plastic do-hickey's go over Noel's nails and keep her from scratching our furniture. Believe it or, she was a pretty good kitty about getting them on. We rewarded her handsomely with a nice can of icky wet cat food for her!
5. I am finally feeling better. My cough is so much better and my rib is healing. It still gets really sore if I over-due which I did a lot this past week, but compared to where I was the first week, I'm happy to say that I think I am well on my way to getting to be 100%! However, sneezing and hiccuping is pretty dang painful!
6. Did any of you guys ever watch the new tv series "Awake?" Josh and I started watching it and then felt it was a little boring, and then we found out it didn't get picked up for a second season, but heard the last episode was really good. The last like 4-5 episodes rocked. If they had all been like that, I have no doubt it would of been picked up for another season. It's to bad. It was clean and interesting which is hard to find on tv these days. Now, we're making our way through this season episodes of "Fringe." 
7. My satellite got fixed on Wednesday and I have all of my favorite channels back! YAY!
8. I want to go shopping in a bad way!!
9. I had a mini heart attack this morning. I thought I had lost my coupon envelope at the grocery store with a few very precious coupons still in it. Thankfully, after tearing my purse, my grocery bags, and my bedroom apart...I found the envelope. In the very back of my coupon binder. Ugh, my pregnancy brain is making me lose stuff nearly everyday. Don't even get me started on my weird dreams. 
10. Has anyone else ever had problem with Walgreens and getting them printed out because they looked "Professional?" I had an encounter with a Walgreens employee on Friday who encountered my wrath. Let's just say if he had been nicer, and handled to situation with proper customer service, the outcome could of been a lot different. But I got my pictures and we are going to file a complain with this employee. Ugh!
