I had no intention of sharing this recipe on the blog.

Why? It's on virtually every site on the Internet. Seemingly every blog, every show, every YouTube channel has shared this outrageously easy recipe for Dalgona "Whipped Coffee."

Apparently it blew up on Tik Tok (Hyphen? No hyphen? Capitalization?) originally. I'm a millennial (barely), and even I'm too old for that, so I didn't follow it all the way back to the viral source. But I was reminded of my intention to make it over the weekend when my sister put a picture of it in our sibling group chat...and several of us proceeded to stop everything we were doing and make it immediately. That was it. We were hooked.

Weekly Menu for the Week of Apr 6

You guys, we're about to get into some amazing weather, according to the forecast. Listen carefully, on Thursday, we could get to 70 degrees! SAY WHAT?! I plan on wearing a dress to welcome the occasion.

Grocery shopping sure is a process right now, am I right? I'm been using Grocery Pickup (formerly Clicklist) via Fred Meyer (which is a Kroger affiliate) since it launched three years ago and have never had so much trouble scheduling an order to my groceries until now. Are you in the same boat? I basically have to have my grocery list and weekly menu planned out a week in advance, which means that by the time I go into pick up my current grocery order, the next list and menu needs to be on the verge of being completed.

It's a lot of brain work. No wonder I'm tired of cooking and planning by Thursday.

But, hopefully these menus offer you a little bit of dinner inspo that helps make your own grocery list and menu planning a little bit easier.

12 Pantry Dinners that are Meatless

I like to include a meatless meal into my weekly menus at least once a week. It stretches my creativity as well as my wallet because a lot of times, making a meal that doesn't include the typical protein can be very cost effective, not to mention delicious!

I've gotten requests to share more vegan, vegetarian, and gluten-free recipes here on the blog more often, and that is something I'm working on. However, you might notice that this recipe round up includes a variety of all of the above for you guys!

I went through all of my favorite "meatless" meals and rounded up my 12 favorites. This list does not include desserts, drinks, or sides, though. However, if you're looking for recipes that are not just "for dinner" please check out the categories section in the recipe archive. You can look up gluten-free, for example, and it will take you to a page of recipes that are strictly gluten-free.

With that, here we go! All of these 12 recipes are frequently-requested and loved by our family, and I hope you will enjoy them as much as we do!

Last week of March, guys! For me, this is the home stretch of the school year. We usually end up finishing school the last week of April for the kids who don't have state testing. Grace still has her British Literature class that will extend into May, and it's a testing year for her, but, to be quite honest with everything going on with the world, I'm not completely sure what that will look like come May...

I think I mentioned last week that we were going to be enjoying spring break - and I think despite being stuck in the house, we had a lot of fun. I let the girls do my makeup some of the days, we played games, cooked at home for every single meal, and spent time talking and resting. Honestly, it's been good, all things considered.

This week, I'm cooking entirely with the food in my freezer. I didn't buy any proteins (other than eggs) from the store. I'm trying really hard to supplement with items that I'm actually legit out of and working to create menus that are pantry friendly and I gotta say, I'm actually pretty excited about the meals I'm cooking this week.

We've just completed an ultra-low-budget "refresh" of our kitchen, which ran us about $500 all-in. This post about painting our kitchen cabinets with white milk paint is the first in a series of about five articles sharing our learnings and experiences from this little project, which would be an easy, affordable one to tackle in any kitchen that needs a little breath of fresh air! In fact, if you already have the painting supplies and aren't changing the hardware, this part of the project should be under $100!

Chels and I have always enjoyed the kitchen in our current house. We purchased our home about five years ago, when it was about ten years old. Due to the relatively recent build date, aside from a few typical early-2000's red and brown accent walls, nothing was particularly dated or out of style. The kitchen itself isn't huge, but it has lots of cabinet and counter space. Since moving in, we painted the walls, and, not by choice, replaced almost all of the appliances (one by one, they all went out - the microwave, the faucet, the oven, the dishwasher...the fridge is hanging in there, but showing ominous signs of giving up the ghost!).

Maybe you're like me and you like to stock up on ingredients for your freezer in fear that when dinner rolls around you'll have nothing to offer! To avoid this anxiety...I often buy those huge packs of ground beef from Costco, or I'll buy a few here and there when there is a good deal at the store. 

No matter what, though, I always have ground beef in the freezer...and that was before Coronavirus! So...if you're stocked up on a ton of food and aren't sure what to do with any of it other than tacos and burgers...I've got 7 recipes for you to rotate through your weekly menu that your family is sure to love.

Our kids finished school last week, so we're officially on spring break and this homeschooling mom is ready to take a break from school and focus on just having fun and lightening up the mood with movies, games, and baking. Which is perfect because the weather is supposed to be on the rainy side all week - typical spring break weather for Oregon, I'm afraid.

I'm working on two more recipe roundups for you guys during this whole quarantine/lockdown/stay-at-home thing. Last week, we shared a post on easy pantry and freezer meals that you can make. We were flattered to be included in a Parade Magazine round up featuring 20 recipes from various food bloggers that are easy, cheap meals from the pantry. The two recipe roundups I'm currently working on are for recipes that use ground beef and then meatless, vegetarian, and vegan meals. I don't do a ton of vegan cooking, but we

With the ongoing disruptions related to COVID-19 and everyone wanting/needing to eat at home more due to social distancing, which I totally understand and agree with, I wanted to attempt to provide you (my readers) with some recipes that won't break the bank using ingredients that should be easy to find and use. I know for a lot of you, you might have kids at home and you might even be missing work. Hopefully we can help make choosing recipes for you and your family as easy, inexpensive, and simple as possible for you. 

You may already have a decent supply of frozen proteins in your freezer or perhaps you stocked up on some ground beef and chicken at Costco and want to use those ingredients wisely. Gatherings like church services have been postponed. We've never seen anything like this before - at least we're in this together, as a world. 

I'm not going to be discussing too much COVID-19. I talked about it quite a bit in my IG stories and every where I look it's a topic of discussion and now I'm just feeling like I need to step back and take a much needed break for my own sanity and stress levels. With that being said, I know a lot of people are going to be cooking from home more and I want to encourage that cooking to consist of more than pre-made frozen meals! Hopefully if you have to be stuck at home, you can be stuck at home cooking hearty meals with aromas that waft into the hallways of your home make everyone a little happier to be there.

Don't underestimate the power of cooking a meal from beginning to end. Cooking from home can save money, bring joy to the home, fill kids with a feeling of security, give us more control over fat, salt, sugar, etc. It can also reduce calorie consumption and help promote a healthier lifestyle.

Okay, so, from the time we tested, remade, and finally photographed this recipe until now, things have definitely gotten a little crazier out there. Most St. Patrick's Day activities have been cancelled due to precautions taken to slow the spread of COVID-19 (even in Ireland!), along with pretty much every other kind of public gathering. At the end of the day, though, from a recipe sharing standpoint, I guess this probably just means a lot more people will need to be cooking at home! So, whether you choose to celebrate St. Patrick's Day from the comfort of your own home, postpone to another time, or simply refrain from celebrations this year altogether, we thought we'd go ahead and share this fun and easy Irish Whiskey Mug Brownie recipe with you.
