
I like to include a meatless meal into my weekly menus at least once a week. It stretches my creativity as well as my wallet because a lot of times, making a meal that doesn't include the typical protein can be very cost effective, not to mention delicious!
I've gotten requests to share more vegan, vegetarian, and gluten-free recipes here on the blog more often, and that is something I'm working on. However, you might notice that this recipe round up includes a variety of all of the above for you guys!
I went through all of my favorite "meatless" meals and rounded up my 12 favorites. This list does not include desserts, drinks, or sides, though.
