Today is our last 80 degree day for the next 10 days and I could just cry! Am I ready for fall weather? No. Do I have cute fall clothes to wear? Yes, yes I do. The problem is, though, that Oregon gets perpetually grey as the cold months persist and it really wears on my spirit a lot. So while I appreciate the months that come after August, the weather just begins to chip away at my soul and I really have to work hard at not letting the gray steal my joy and contentment.

We have a couple of things going on this week including a birthday for Ruby! My baby girl is going to be seven years old and I cannot believe it! Time just keeps going by faster. She has asked for a Paddington Bear birthday party which is proving to be a challenge decoration-wise. I ended up buying some Union Jack plates and flags on Amazon and I am going to attempt to make a cake for her with Paddington's face on it. I am not artistic so this will be interesting! 😆

Here's what's on the menu this week!

3 Ingredient Roast

Fancy roasts in Dutch ovens served with wine and music by candlelight are great...but sometimes you just need to get a decent meal on the table! This 3 ingredient roast is that meal, and this busy mom loves it!

One Pan Chicken Sausage with Summer Vegetables

This one pan sausage dinner recipe includes lots of bright, flavorful, and healthy summer vegetables, and it's easy to prepare - just chop those veggies!

Bruschetta Chicken Pasta

Juicy tomatoes, fresh basil & garlic, seasoned chicken breast - this bruschetta chicken pasta makes dinner a snap on back to school nights.

Puff Pastry Waffles

Recipes don't get simpler than this. One ingredient. One waffle iron. A few minutes. Flaky, buttery breakfast is served.

Slow-Cooker Pizza Fondue

Easy, fun, flexible, and ridiculously kid-friendly, slow-cooker Pizza Fondue is a recipe your little ones will beg for on a regular basis!

Caramel Pecan Sticky Buns

This recipe takes some time and work, but it's so worth it. The dough, the topping, the caramel...these caramel pecan sticky buns are straight up addicting.

Honey Glazed Carrots

This recipe for honey glazed carrots is a sweet, healthy, and cheap 15-minute side dish that your kids will love, too!

Healthy Apple Pie Egg Rolls

Craving the crunchiness of pie crust and the gooey sweetness of apple pie filling? Try these healthy apple pie egg rolls and skip the guilt!

Since you all are about two weeks back into the school schedule now, I thought sharing my Meatball Pinterest board with you would be a great dinner suggestion. There are so many ways to use meatballs in recipes that are separate from pasta. So here are some ideas - also, meatballs are so easy to double and freeze for later which is great for those busy days.

I hope you all have a great week!
