How is it that we're midway through September already? If only January would go by this fast every year! Is it just me or is that January is always the slowest month? Anyway...the official first day of fall is September 22, which means we have about a week of summer left. Officially, that is. It is beginning to feel more and more like fall - my daughters even bought PSLs yesterday! 🍂

Just so we're clear, I am not there yet!

Our family is taking one last quick family getaway and we will be gone a portion of next week so there won't be a weekly menu then. However, there will be a new recipe next week. I am just trying to avoid working while we're gone with our family. Who else tries to cram in all the work before a trip? Yeah, me too.

This week's menu will reflect the seasonal changes and the seasonal produce that is still being gathered. I hope you enjoy it!

Roasted Zucchini & Tomato Pasta

You can't go wrong with this hearty, tasty roasted zucchini & tomato pasta. It's full of fall flavors and gets your kids their veggies incognito!

Oven Baked Turkey Tacos

Saucy taco meat, gooey melted cheese, and crisp taco shells make taco night a snap when you bake it all together and serve it at the dinner table.

Ham, Gruyère, & Apple Panini

Savory, sweet, and easy to make, this simple but elegant Ham, Gruyère, and Apple Panini recipe is one you want on your table this weekend.

Chicken Tortilla Pie

Sometimes you need your pantry to come to the rescue at dinnertime, and that's exactly what it can do with this easy, flexible chicken tortilla pie recipe!

One Pot Country Lentil Soup

Your pantry can come to your rescue again with this easy, hearty, super tasty, and crazy healthy one pot country lentil soup!

Spiced Apple Cider Pancakes with Maple Bourbon Syrup

Warm up your autumn weekends with spiced apple cider pancakes, and to really take them over the top, whip up a little maple bourbon syrup!

Drop Biscuits

Buttery and flaky, these easy drop biscuits are not only quick to make but compliment just about any meal, too.

Chocolate Zucchini Bread

Looking for a way to use up zucchini from your garden? Look no further, this chocolatey, rich, loaf has got tons of flavor and looks gorgeous too, with all the pops of green from the zucchini. Your family will gobble this down!

As for this week's Pinterest Cooking #inspo, check out these Pantry Friendly recipes to help get breakfast and dinner on the table quickly, with ingredients you probably already have on hand!

I hope you all have a great last week of summer, friends!
