Weekly Menu | Catz in the Kitchen | catzinthekitchen.com | #mealplanUm, September is here and I'm all kinds of not ready at all. In fact, leading up to this week, I kept forgetting that Josh wasn't working on Labor Day and that Grace had school starting this week! Now, it's actually here and I still feel like I'm trying to convince myself that September is here and kids are starting school this week.

Also, can we just talk about how it's starting to feel like fall in my little corner of the world? I don't know what the weather is like where you live, but here, it's dropped to the 60's and 70's generally, and there is a definite crispness to the air with that distinct autumn aroma.

I actually wore long sleeves and jeans over the weekend and it just felt wrong. I know the first day of fall is technically still a few weeks away, but am I the only one who feels like fall always hits the same time as back to school? Seems coordinated... [Read more...]

Weekly Menu | Catz in the Kitchen | catzinthekitchen.com | #mealplanIt feels very strange for me to be writing out this menu right now. This is the last week of August. School starts next week and I don't feel ready at all. And by ready I mean, I haven't done any school supply shopping! Where has the month gone? Actually, I'm wondering where summer has gone...literally and figuratively. The high temperature has officially dropped to the low 80's (or 70's) and it's raining right now if that tells you anything. I knew I smelled fall in the air last week when I stepped outside. For the first time in I think my whole life, I'm not ready for fall. I'm not ready to let go of the warm summer days and the evening walks that Josh and I take. It's getting darker out faster and my heart is all kinds of grieving right now.

It's a mixture of grieving the passing of summer and the coming of Ruby's first birthday. They both symbolize the time's forward march of progress, when no matter how much I wish I could make it true, time just doesn't stand still. I'm not sure if you caught it, but last week on Instagram, I shared that Ruby started crawling. Well, she's gotten faster on her knees and gained boldness in walking around the furniture. Suddenly, we're aware that it's time to baby proof, because the last few evenings while we worked on dinner, it's been a constant, "Where's the baby?"

I guess we just can't leave her and walk away anymore expecting her to stay in the same spot. There's a whole world out there and she's ready to see it! [Read more...]

Weekly Menu | Catz in the Kitchen | catzinthekitchen.com | #mealplanIt was big week in our house last week. Eden turned ten - and she's been anxiously awaiting those double digits. We celebrated by taking her to the county fair and eating hand-dipped corn dogs, taking her on a "date" with Josh and I to go shopping and dinner at Panera Bread, and then cake, ice cream and presents at home. Basically, it was a birthday week for Eden and I don't think she's been complaining!

Two weeks ago, I asked on the Catz Facebook page for content ideas - what you want in meals for back to school. One person said meals for picky eaters, so I'll be working on that! But I would love more suggestions. Comment below and tell me what you're looking for. It can be anything! I also heard a lot of interest last week on Instagram for "Pantry to the Rescue" meals, so that's in the work. I'm really excited about this idea and I think I'll be working on a series for this. Grilling these simple chicken foil packets is an easy, tasty way to get a flavorful, healthy meal on the table, whether you're camping or at home!I'm guessing you won't be surprised to hear that I'm not much of a camper. I could possibly be a "glamper" and do the whole "glamping" thing. But, between you and me...I still just don't want to go camping. It's sad, I know.

But in an effort to get my kids excited about camping without actually going camping, Josh and I bought a tent off Amazon and set it up so the kids could go camping in the backyard. All the best aspects of camping (from my perspective) minus the dirt, the smokey campfire smell that sticks to your clothes (and hair), and lack of electricity. 15 Things We've Learned in our First 15 Years of Marriage

15 Things We've Learned in our First 15 Years of MarriageWhile I wouldn't say that Josh and I are marriage experts by any stretch of the imagination, we have picked up a few things over these past fifteen years that have made our marriage fun, successful, interesting, exciting, and passionate!

Our His and Hers list is not in any kind of order - some of these answers are fun and others a bit more serious, but these are some of the things we have applied (or at least attempted to apply) to our marriage over the last decade and a half.

Hers

  1. Communication is worth the work, the effort, and the frustration. Even when you feel like giving up, don't. "Be angry, yet do not sin. Do not let the sun go down on your anger." Ephesians 4:26
  2. Make out in the kitchen (and on the back porch, and in the hallway, and...), I mean like long-winded kisses. Kissing in front of the kids? Even better. While they may be grossed out (I mean, don't be inappropriate, but...), it makes them feel secure.
  3. Laugh often and laugh hard! Even if it's at 11:30 pm and you wake the kids up! It's just the two of you - if you can't be silly with your soulmate and best friend, when can you?
  4. Be your husband's biggest cheerleader. Build him up. Thank him for working so hard to provide for your family. Tell him something specific you appreciate about him - like faithfully waking up at 5 am every morning with a good attitude, in our case!
  5. Encourage him to be active, and help make the space for that to happen. He'll feel better if he makes some time for his physical well-being, and it benefits the whole family in the long run.
  6. Read the Bible and pray together. When you're united in Christ, you'll be better united on the home front.
  7. Spoil him with...books, in my case! It's his love language!
  8. Tell him that you think he's hot. A lot. Like People magazine's Sexiest Man Alive hot!

I spent Wednesday - Saturday down in Central Oregon for the Club31Women's writer's retreat with nine amazing, godly women. It was beautiful, encouraging, and very restful. It's was incredible to hear how God has worked in their lives over the past year.

I'll do a recap for you in a week or two, but for now I'm home and today (Monday) starts the beginning of back-to routine for my little family. Josh's sabbatical is officially over and he's back at work - which means I can work extra hard on getting Ruby to say "Mama" more...because right now it's "Dada" all day, every day!

Real quick, let me just ask this question. Is it just me or has summer really been moving fast? I feel like it was just June!? I know for a lot of you, school starts soon. This recipe originally appeared on Catz in September of 2011. While the text of the post has remained the same, the recipe itself has been remade, rephotographed, and updated. You can certainly still use chicken breast for this delectable, easy meal, but we would recommend using chicken thighs, which are typically more flavorful and a little more forgiving on the grill. Also, check out the awesome new Grilling Time & Temperature Chart from BroBBQ after the recipe card - super handy graphic to bookmark for grilling! PS - if you have leftovers, use them to make sandwiches for lunch with arugula and dijon. Very tasty!

I have a confession to make. I occasionally rip cooking pages out of magazines when I'm waiting around in various appointment-type places. There, I said it! I know a lot of us do it when we're waiting to get our teeth cleaned or whatever, but it's not something that's really talked about and I know I always feel very guilty afterwards! But thanks to my page-stealing fetish, I found this fantastic recipe for grilled honey lemon chicken! 

I don't exactly remember where I was when I found this recipe, but I was bored and was skimming through a magazine. It wasn't a cooking magazine, but it had a bunch of great recipes in the back to try out and one of them was this honey lemon chicken recipe by former Bachelor contestant Jake Pavelka. I have never watched any of those shows, so my only opinion of him is he created one flavorful chicken dish. Oddly enough, I can't find the recipe online so I'm glad I tore it out of the magazine I was reading.
