WOW! Last week was a busy one! Out to the Oregon Coast on Monday, followed by a trip to Cali and back to Oregon again all in a matter of 24 hours, and then we spent a few days at Salishan Resort back at the coast (I think we may be planning a blog post on this resort for you all). I'm so glad we took those few days at the coast because we really just lazed around as a family. Slept in until 9am (admittedly, mostly because Rue got us up every few hours...), had pastries for breakfast, took walks in the early afternoon, and while Ruby napped in the afternoon, Josh took the kids to go swimming. We finished our evenings with s'mores and yummy food.

Grilled Blueberry French Toast

It's July in the Pacific Northwest, which means the sun is more reliably out, the average temps are pushing the mercury higher (quite a bit higher this week, actually), and our summer is really beginning to feel like a proper summer. Sometimes we get some summer in May or June, but you really can't count on it until the latter part of July, and sometimes even August. But, regardless, with the sunshine...comes the grilling!
What We're Loving this June!
Hi, so...it's July! I feel like this month came out of nowhere?! Didn't I just say the same thing last month, too? Maybe it's just being a busy mom of four or maybe it's because summer never really slows down as much as I think it will. But regardless, June is gone and July is here. Baby Stuff!
- OXO Tot On-The-Go Feeding Spoon with Travel Case
Ruby is often on the go with us and maybe it's just me, but I have a really hard time remembering to always replace the feeding spoon in our diaper bag with a clean one or even finding the spoon in the first place. This spoon is awesome for where she's at right now with solids. It's got a great grip, comes in multiple colors, silicone coating for her to gum on or bite on - which she does both of - and I really like the depth of the actual spoonful itself. She really likes it, too - it's definitely a step up from what we've been using and I can always find her spoon in the diaper bag now. In fact, I liked this so much, I bought two more spoons just for the house. - Graco Extend2Fit Convertible Car Seat
As you all have pretty much seen, Ruby is growing a lot! Giant baby! And she needed a new car seat. In Oregon, babies have to be rear-facing for two years now! Josh did a ton of research before purchasing, but in the end, we chose the Graco brand. It's a brand we've used from the very beginning, a trusted brand, and one of Josh's coworkers has the same car seat and loves it. Good enough for us. So far, Ruby seems to really enjoy this and I know my wallet enjoys not paying a fortune...carseats get expensive so fast!

Maybe it's just me, but I'm kind of freaking out that not only is it officially summer now, but that 4th of July is next week! *the end to my allergy suffering is in sight* Please tell me I'm not the only one kind of unprepared for July officially starting on Sunday?
We live in a pretty small town with a lot of "U-S-A" pride around the Fourth. We have a buckaroo, a parade, and a whole festival - which we've never been to (well, the rest of the family did the parade last year, but I stayed behind - very pregnant at that time!). One of these years, we'll have to have everyone down to our house so we can join in on some of the small town fun. But I do love that we live close enough to our families so we can trade off on holidays and spend time with everyone.
Lemon and Pea Alfredo
This Lemon and Pea Alfredo is an Italian summer pasta dream come true! Bright, fresh, nutty, creamy, and tangy, it's flavor-forward in the best possible way.
You probably know by now that on Mondays I try to serve meals that are meatless (vegetarian...ish). Now, oftentimes that can mean I'm getting our protein in some other way, perhaps by using beans or some sort of fish.
And sometimes it just means we eat pasta.
Now, I love me some pasta A LOT! But I've scaled back on how often I actually serve pasta in our home, simply because I'm trying to limit the amount of carbs we're eating at dinnertime. We're not on any kind of diet and we don't have any food allergies preventing us from eating some of our favorite foods. But I hope by limiting foods that are bread or pasta heavy, our general diet will be healthier!
That doesn't mean we don't eat pasta, though, because we do, and it always feels like a treat. In the summer months, I serve pasta a little less. I think it's because when it's hot out, you don't (or I don't) want to feel weighed down by anything heavy.

Weekly Menu for the Week of June 25th
Some of you may have heard either through the Catz Facebook page or Instagram that Grace left at the end of last week for a missions trip to Mexico. Our home is a little quieter with her gone and I'm definitely missing her sweet smile and snarky jokes. But, I'm so excited that she's had this opportunity to do something so good and so challenging and I believe she'll have grown a lot as an individual through this process and maybe even have a newfound mindfulness of life (just) outside the American bubble. I'm just praying that God will use her for His glory during this time and she'll have a chance to do some good and help some people!
But, oh, how I miss her...
However, with her being gone, I'm reminded of what a big help she is and that I have to be even more mindful of how I use my time and use it wisely so that I can get all of the things done that I need to get done and still have time to play with the kids!

Grilled Teriyaki Chicken
Looking for an incredibly simple weeknight dinner that's tasty, healthy, and pairs with, like, everything? Try this grilled teriyaki chicken!

Some evenings I just really want teriyaki chicken. It doesn't necessarily have to be grilled teriyaki chicken (though I am quite partial to the smoky flavor imparted by cooking it over charcoal), but there are nights - like, quite a few - when I want something I can eat a lot of without feeling guilty, something slightly salty, something that pairs well with a variety of sides, but can stand equally well on its own with a bowl of rice, something that's...easy.
Enter this recipe for grilled teriyaki chicken. I found it maybe a year ago, and we've made it over and over again since then. It takes all of ten minutes to prep, and all of the ingredients are already in the pantry (if they aren't in your pantry...fix that!). Then you get an hour to do stuff while it sits in the fridge.
Who doesn't need an hour to do stuff?
Cowboy Steak Salad
This is not your typical salad. It's got blue cheese. It's got potatoes. It's got steak. If you want a hearty, tasty dinner...cowboy steak salad!

When someone loves salads, you would think that they make salads a lot for lunch or dinners at home. Maybe that is true for some people, but not for me. You see, I love love love salads. I craved them constantly when I was pregnant with Ruby, but usually the only time I eat a salad is when I go out and order one!
Which I've been doing A LOT lately.
I had a delicious salad at Chick-Fil-A over the weekend and the weekend prior I had a grilled fajita salad which I want to recreate here at home.

Weekly Menu for the Week of June 11th

Well, this was one weekend that did not feel like summer one bit, unfortunately. We can't (well, we can, but we shouldn't) complain - this May and early June have been far drier and sunnier than we normally get here in the great Northwest. Typically, May through early July is something of an extended spring, with lots of showers, temps in the 50s and 60s, and lots and lots of green, growing things. While the last few weeks have been gorgeous, this weekend was wet. And there was hail. And lightning. So...no grilling.
However...the coming week looks quite nice, and so we've optimistically (naively?) put a number of grilled meals back on the menu. With all of the deck construction last summer (that post should be coming soon, by the way), we didn't grill as much as we would have liked, so we've been trying to make up for it this year. Breakfast Chorizo Hash
Brunch must be the best meal of the day, right? It certainly will be if you serve this yummy breakfast chorizo hash! Not a chorizo fan? Sub in some sausage!

I'm a big believer in the power of a delicious brunch. But also...just a believer in brunch in general. I'm not really big on the whole getting up early thing, however my new alarm clock has definitely made it easier for me. But, hey, the idea of getting to sleep in a little, which, let's face it, is pretty much a rare occurrence with four kids in the house and the youngest under nine months old. She sleeps good, people, but not that good!
The other reason I adore brunch is because a brunch takes the pressure off the whole "what do I eat for lunch" thing. Which is definitely a problem for me. Lunch is the one meal a day I don't like to plan, make, or eat. Period.
Lunch doesn't excite me in the least. But brunch...oh, how I love a good brunch recipe.
