Um, guys...we're halfway through December and only 12 days away from Christmas! How is that possible? As of today (Sunday, Dec 13), I have still not finished all of our shopping. I'm so close, though. Josh and I got quite a bit done the other night which was a huge relief. How are you all doing with your Christmas shopping? And how do you keep the (materialistic) stress of the shopping from taking away the focus on the things that really matter at Christmas?

This week, we celebrate Christian's birthday and he's requested sliders and a birthday cake with dinosaurs and a volcano...hmm? The sliders I can do, but the dinosaurs...I'm going to need to get creative about how to go about that. Hello, Pinterest!

Maybe it's just me, but I have been so cold lately, so this week is going to have dinner ideas that will warm me up and hopefully you, too, if you live someplace cold (and wet).

Here's what's cooking this week:

Tuscan Tomato White Bean Soup

This flavorful, creamy Tuscan Tomato White Bean Soup recipe elevates traditional tomato soup in every way, and is perfect for the fall season!

Mexican Lasagna

This delicious family favorite Mexican Lasagna recipe is made mostly from ingredients we always have in the pantry and it comes together in just 30 minutes!

Easy Garlic Spaghetti

In need of an easy, inexpensive meal that's still full of flavor and popular with the whole family? Try this go-to recipe for easy garlic spaghetti!

Chinese Meatball Sliders

These sweet and zesty little Chinese Meatball Sliders are easy, quick, and serve equally well as a family meal or a fun appetizer for a group!

Carbonara Pizza

This carbonara pizza recipe is easy, quick, and inexpensive, with some strategic substitutions! Eggs, cheese, and bacon - how can you go wrong?

Coconut Chicken Tikka Masala

This coconut chicken tikka masala recipe is kid-friendly, make-ahead easy, and ready to add some variety to your weeknight meal plan!

Trainwreck Crock Pot Taco Salad

"Trainwreck" crock pot taco salad is simple, inexpensive, easily customizable, and incredibly tasty! It will please your family, or a crowd of almost any size!

Christmas Eats & Goodies

Over 700 ideas on this board for Christmastime baking, cooking, and more! I'm working on the organization here...

Since Christmas is literally right around the corner AND I know a lot of you are going to still be baking cookies and other treats, I'm just going to reshare the same Pinterest board as last week - the Christmas food board! It has everything you need and I'm in the process of putting everything in folders to make it easier for you to find what you're looking for.

I hope you all have a great week!
