I hope you all had a great weekend. Our last few weekends were filled with a lot of busyness, so we made a point of this weekend to rest and relax as much as we could. It was just what we needed. As I'm sitting here I've got some chicken in the oven that's cooking. I thought I had some shredded rotisserie chicken in the freezer last week, and when I realized I didn't, I had to pivot one of the meals on the menu. So I'm baking some chicken breasts up to shred for that same meal this week.

Have you started your Christmas shopping yet? I've got a few things bought, but my goal is to have all the shopping done by the end of the month - I've never been able to do that before...but this year, I am determined!

Here's what's cooking on this week's menu...

Easy Pumpkin Custard Pie

This easy pumpkin custard pie is flavored with cinnamon, ginger, and allspice - which gives it all kinds of warm, fall flavors.

Pumpkin Spiced Biscotti

Pumpkin Spiced Biscotti is such a fun treat to make and give to fellow coffee lovers. Perhaps a great gift for your Thanksgiving host this year?

Balsamic Roasted Brussels Sprouts

This simple but "fancy" recipe for tasty brussels sprouts that the whole family will love is warm, a bit crunchy, and full of deep balsamic flavor.

Homestyle Mini Meatloaves

These homestyle mini meatloaves finally won my husband over to meatloaf! What's the secret? Besides scrumptious flavors, broiling right at the end adds a yummy crusty texture to the outside!

Szechuan Green Beans & Pork

Szechuan Green Beans & Pork is an approachable, easy recipe that is incredibly tasty and feeds a family in about 15 minutes!

French Bread Pizza

Wanting to make your own pizza but a little intimidated by making your own dough? Try this easy, flexible recipe for pesto French bread pizza!

Polynesian Chicken

This ultra-simple, super-fast recipe for Polynesian Chicken is one of our busy week night go-to favorites! Five ingredients, 30 minutes, and so much flavor!

Slow-Cooker Sloppy Joe Sliders

Sweet & tangy, slightly sophisticated and fun, these slow-cooker sloppy joe sliders up the ante and are perfect for your game day munchies!

Cheesy Honey Mustard Chicken

This is one of those recipes that you crave as soon as the aroma begins to fill the house! You've got to try this Cheesy Honey Mustard Chicken!

Easy Lasagna Casserole

Easy to put together and easy on the wallet, this tasty recipe for Easy Lasagna Casserole is, well, just plain easy!

I'm just going to keep sharing the Thanksgiving/Leftovers Pinterest board with you until we reach the end of the month, but if you're already thinking about all the recipes you might want to try for Christmas, I'll link that board as well.

BTW - did you make the Tik Tok Pasta recipe yet...or at least put the ingredients on your menu? Let me know!

I hope you all have a great week and be on the lookout for a new recipe this week!
