After taking the summer off from weekly menus, we're back! I know for a lot of you, back to school began last week; for us, it begins this week. We spent last week in Sunriver (Central Oregon) for a family vacation, which was so nice, but, alas, not super relaxing because we also have a 14-mo old toddling around and teething. But it was still a really good time, much of it spent outside, with each other.

This week is Ruby's birthday (and my brother's birthday), and as our birthday tradition goes, she picks dinner and dessert. She's requested waffles and a fruit salad with a chocolate pie and whipped cream - so I'm going to make this French Silk Pie from Handle the Heat.

Here's the rest of the weekly menu for you guys!

Apple Pie Ricotta Waffles

These apple pie ricotta waffles are comfort food through & through - warm, indulgent, and suitable for breakfast, brunch, dinner, or dessert!

Spaghetti and Meatballs

Finding spaghetti and meatballs a bit bland? So were we! This recipe for the classic pasta dish is easy, cheap, and bursting with flavor!

Greek Chicken Bowls

This "build your own" recipe for Greek Chicken Bowls is simple, healthy, and flexible - use it for lunches, dinners, or even meal ministry!

Carne Asada Tacos

A bit like a slow cooker recipe without the slow cooker, these carne asada street tacos cook low and slow in a dutch oven until they are absolutely irresistible!

Smoked Sausage Grill Packets

Looking for a quick and easy meal you don't have to babysit on the grill? These Grilled Chicken Sausage Foil Packets are tasty, fun, and flexible!

Garlic Butter Spread (and bread)

Ever wanted your own garlic butter spread recipe for making garlic bread at home? Well, now's your chance! This one is easy, quick, and keeps in the fridge!

Chai Apple Pie

This recipe for chai apple pie is an easy way to dive into autumn baking season! You can use a store-bought pie crust, or make your own!

I know a lot of you are over summer and ready for fall...I'm definitely not falling (haha, get it?) into that category yet, but I'm getting there. But for those of you who are ready for the next season, I'm sharing my fall and Halloween food board. There are a ton of ideas on this board of all kinds - not just dessert, but snacks, dinners, breakfasts...essentially, something for everyone. Go check it out! Also, let me know...what is one meal you're looking forward to cooking this week for dinner?

Have a great week everyone!
