Weekly Menu for the Week of June 17

Hey there, friends, how was your weekend? We had a very slow weekend. Of course we got some things done, like laundry and groceries. We started watching The Hobbit (Josh finished reading that book about a month ago), visited a local nursery for some hanging flower baskets, and then we played The Oregon Trail game Saturday night. It was just a lovely time!

Let's talk about what I've been working on behind the scenes...English scones, for one. As you all know we went to London in April/May (full trip post coming soon) and I fell in love with their scones. I've been working on something similar. I've tested a recipe twice now, but I plan on trying a slightly different method to compare flavor, texture, and ease. I'm fairly partial to the version I just tried because it was so simple. In addition to English scones, I've also tested a recipe for clotted cream twice - another British staple that earned our affection! That one I'm still working on, too. While I haven't gotten the texture where I want it, the flavor is perfection.

Onto this week's menu - I'm keeping it simple, as I have some errands and more recipes to test. Here's what's on the menu this week:

Lemon and Pea Alfredo

This Lemon and Pea Alfredo is an Italian summer pasta dream come true! Bright, fresh, nutty, creamy, and tangy, it's flavor-forward in the best possible way.

Chile Relleno Casserole

It's easy, pantry-friendly, flexible, works for breakfast, lunch, or dinner, & makes great leftovers! What's not to love about this chile relleno casserole?

Grilled Pineapple Teriyaki Turkey Burgers

These grilled turkey pineapple teriyaki burgers are simple, practically foolproof, relatively healthy, & make-your-tastebuds weep yummy. Make, eat, repeat.

English Muffin Pizzas

These fun, easy, quick English muffin pizzas are a family favorite - we make them all the time! The kids love designing their own mini pizza masterpieces!

Tropical Chicken Kabobs

This tropical chicken kabobs recipe with a pineapple honey dipping sauce is a perfect way to enjoy gathering around your grill this summer!

Coconut Rice

This recipe for coconut rice, with its warm, nutty flavor, has become our go-to simple side for weeknight dinners!

Strawberries & Cream Overnight French Toast

Easy, fresh, bright, sweet, & creamy, this Strawberries & Cream Overnight French Toast features frozen Oregon berries so you can make it all year long!

Farmhouse Blueberry Pie

Have some blueberries around the the house this summer? This farmhouse blueberry pie is a classic, simple, and approachable way to use them up!

I don't know about you, but the closer we get to full-on summer (which is Thursday of this week, kids) I just want burgers. Josh makes this amazing turkey burger he's been testing out and it is incredible! But I thought I would share my Burger Pinterest board for you all, because BURGERS are just wonderful!!! Right?

Have a great week, friends!
