Hiya, friends! We had such a beautiful weekend and it was relatively low key. I mean, I got things done, but I was also single-parenting it for pretty much the a good chunk of the week and whole weekend. Josh left for a business trip on Sunday afternoon, got home that Wednesday, and then left again for a quick men’s camping trip with his dad, brothers, nephews, and Christian. Gives me a little more respect (and I already had a lot) for you single parents out there – major kudos – it is hard work balancing it all and I am in awe of you!
I cooked ALL week and weekend, and while I’m in major need of a break, I do have some tasty meals planned for the week, and since Josh will be home, we will be doing some grilling and I am very excited to share these recipes with you!

Did you know that 4th of July is next week? That also means that it’s Cub’s second birthday (I cannot believe it, I get teary eyed just thinking of it). Last year, we combined the 4th of July with his birthday because his birthday is just a few days away, and at this age, he doesn’t really know the difference. I think we’re going to do a Bluey-themed celebration – it’s the only show he watches and he LOVES it and of course, who doesn’t.
