How is it already mid-July? Summer is just whizzing past and I'm not okay with it. We're having the most beautiful, warm (sometimes downright hot!) weather and it is just glorious. I was never a summer person until my 30s, and now I just wish summer would never end. Some people complain about how hot it is, but when is fall coming, I'm like no, let summer hang on for as long as it can...

So Josh and I have been doing a ton of recipe testing lately. You know I've been working on clotted cream and scones for a few months, but we've also been working on a new fish taco recipe, baked beans, and some summer desserts, just to name a few. I cannot wait to share them with you! I really think you're going to love them!

Here's what's on this week's menu:

BBQ Chicken Skewers

BBQ chicken skewers are full of juicy moist chicken, crisp bell peppers, and saucy, sweet pineapple. This easy meal is perfect for hot summer days when you don't want to heat up the house.

Slow Cooker Lime Chicken Tacos

Looking for the simplest, easiest way to get healthy homemade tacos on the table without browning up some beef? Try this easy recipe for slow cooker lime chicken tacos!

Grilled Burrata Salad

This grilled burrata salad recipe is the kind of simple and rustic (but elegant) late summer dish we love - the torn croutons are amazing!

Grilled Shrimp Scampi

This recipe for grilled shrimp scampi couldn't be easier. A few ingredients for a quick marinade, followed by about five minutes on the grill - delish!

Grilled Teriyaki Chicken

Looking for an incredibly simple weeknight dinner that's tasty, healthy, and pairs with, like, everything? Try this grilled teriyaki chicken!

Summer Squash Caprese Salad

A late summer salad that is simple, healthy, colorful, and easy to make for crowds? That's where this summer squash caprese salad comes in!

Blackberry Mascarpone Popsicles

Yes, you can actually use your grill or smoker to make these smoked blackberry mascarpone popsicles (but you don't have to). But, you do have to make 'em!

Blackberry Coffee Cake with Streusel Topping

This blackberry coffee cake offers the best of both worlds with blackberries scattered throughout a buttery, crumbly cake topped with streusel.

What's your favorite summer dessert? I love cobblers and crisps, but ice cream is just...I mean it's the perfect time of the year to eat it. Here's my Ice Cream Pinterest board for some summer dessert inspo. You'll find lots of homemade ice cream recipes, but also some other cold recipe ideas that I think you and your whole family will enjoy!

Have a great week friends!
