We customize these easy, healthy, & convenient Overnight Oats to make them "His & Hers"! They save us time & money, while keeping us full in the mornings!

For close to two years now, we've been meal prepping mine and Josh's weekday breakfasts on Sunday evenings before bed. Not only has it saved us money, but also time. And time, as a parent, is a precious thing, let me tell you!

Overnight Oats have the added benefit of being a healthier breakfast option than most, in addition to being filling enough to get you through to lunch time without snacking! We bought cereals. We did yogurt. We even bought the oatmeal packets in the store. Overnight oats just have more "filling power" than all the others. Which is saying a lot because Josh, ya know, is a pretty energetic dude...and if it fills him up and give him energy, then it's a win in my book.

We've honestly been meaning to share this recipe with you for a long time. In fact, when we visited with some friends last fall, they were like, how have you not shared that yet!?

Good question! But, not only am I sharing this post today, but I also did a Facebook Live for it, and Josh filmed me giving a quick tutorial on YouTube. It seems as though that now we've made the decision to actually share the recipe, we're sharing it in ALL THE PLACES. Do bear with us as we work on our video-making skills. It's new territory for both of us, and it's going to take some practice. Weekly Menu | Catz in the Kitchen | catzinthekitchen.com | #mealplanIt's November! GAH! When did that happen? Was it really only last week that we celebrated Halloween? I don't know about you, but not only am I happy to get that extra hour of sleep back (thank you daylight savings), but I'm also eagerly anticipating Christmas now!

I know! What changed?! Just a few weeks ago I was bawling my eyes out about how I wasn't ready...but on Thursday I went to my friend's house for her homemaking and hospitality class and it was all Christmas-y and fun and now I'm in the spirit!

I'm even listening to Christmas music right now! SO. MUCH. FUN. Or, alternatively, I'm one of those people you love to hate because I'm listening to Christmas music in the first week of November. Just instrumental. Not the big stuff. Calm down.

So, Chels found this amazing little recipe and suggested it for me to make...because I do the hot oil around here...and the egg roll wrappers...so this one was definitely going to be me. And I was fine with that for a couple of reasons. One, I love apple pie. Two, I love appetizers that involve egg roll wrappers. I mean, have you had the Avocado Club Egg Rolls at California Pizza Kitchen? Have you?

They're good. And so are these apple pie egg rolls.

Of course, I wasn't all on my own in the kitchen. Gracie was a big help, as always, and Mr. Christian gets seriously stoked anytime we break out the apple peeler. I can't blame him - it is a pretty epic old school piece of kitchen machinery. It's metal, it has a crank handle, you have to oil it before you put it away...even guys can get into this kind of kitchen accessory. It's like the Tonka truck of kitchen gadgets.

This chipotle turkey chili recipe originally appeared on Catz in April of 2014. It's a perennial family favorite from fall all the way through our rainy Pacific Northwest springtime. We've updated the photos of this tasty meal, and actually made some updates to the recipe itself. If you're looking for an easy, healthy chili recipe with a bit of chipotle smokiness, well...this is your jam.

I realize that April is not a typical time to eat chili. But here in Oregon, we're still having days of 45-50 degrees and rain. The days when I know rain is forecasted, I really enjoy serving my family comforting food. Chili is comforting and this is hands down, probably my favorite chili recipe with the crockpot sweet potato and turkey chili coming in a close second. [Read more...]

Weekly Menu | Catz in the Kitchen | catzinthekitchen.com | #mealplanThe weekend started out beautifully! On Saturday, Josh and I took little Miss Ruby out for brunch (and she was a perfect angel). It was sunny and fairly warm for this late in October...and then Sunday morning and we woke up to cold weather and unexpected rain (though I guess rain should really never be unexpected here in the Pacific Northwest).

We were going to take the kids to the pumpkin patch, but because of the weather and because we're also on Ruby time, we didn't. The little one did not sleep AT ALL during church and when we got home, we had one tired little girl who fought sleep for over an hour!t

Thankfully, the forecast is not predicting rain for Halloween (say what?!), and as is our Halloween tradition, I'll be making chili before we head out for ALL the candy!

We weren't going to blog (or even make) this silly little recipe, but our nine-year-old, Eden, found it in the Food Network Magazine, and simply had to have it. We had an extra sheet of puff pastry in the freezer (leftover from making apple tartlets...coming your way soon!), along with some breakfast sausage, so we gave in. In the end, the finished product was adorable, festive, and outrageously easy to make, so we figured that we ought to share it. Consider it a break from #pumpkineverything as Halloween approaches!

Saturday night we got a ton of rain and wind dumped on us. It literally poured and howled until about 4 a.m. Sunday! And let me just say that not only did Josh and I not get much sleep, but poor little Ruby slept rather fitfully as well.

So, we were a bit of a zombie family on Sunday. There wasn't enough caffeine in the world to perk us up (well, and we also try to keep Ruby off the caffeine...). Thankfully, today is Monday and last night was much easier!

Also, it would appear that Ruby may have a touch of colic that likes to show its pretty face around 4:30-5 p.m. and go until near bedtime. Each of our kids have had it to an extent, so I guess I shouldn't be surprised!

But she is so darn cute and so darn worth all the crying. [Read more...]

We sat down with the kids this month to decide which Chef'd meal to review, and, frankly, it was tough. There's a lot of good stuff on there! If you missed our full intro review to Chef'd last month, you can read it here. We decided we wanted to try something new, that none of us had ever eaten before, so we settled on...shawarma! Now, historically shawarma could have been a tough sell, at least for our 9-year-old and 4-year-old, but thanks to Marvel and the Avengers, shawarma is a decidedly known quantity with a very high cool factor (if you don't know what we're talking about, you need to fast forward to the post-credits scene in The Avengers...or just watch the YouTube clip below!).  [Read more...]
