Weekly Menu | Catz in the Kitchen | catzinthekitchen.com | #menu #mealplanI hope you all had a nice Father's Day weekend! Our Sunday was pretty low key, which I think was really nice for Josh. We went to church, saw my whole family for lunch, talked to our both our dads, and relaxed around the house.

Josh even got a chance to wash his car! Which he almost never has time to do (thanks carwashes everywhere - though he would rather do it himself), which is why I'm mentioning it. The weather was also nice enough for the kids to get into the pool for awhile. However, our allergies are kind of killing us, slowly. It's a sneezy, itchy eye kind of mess over here.

Grace had to have a few teeth pulled this past week - five, to be exact! She's doing fine, but my pregnant scatter-brain forgot to factor in soft foods for her this week, which is why you'll see some dinner repeats on the menu again.

I woke up at about 2 a.m. with really strong contractions...that were actually Braxton Hicks. I know they say they can get stronger with each pregnancy, and that must be true because some of them were downright painful, but not all consistent. They finally let up after 4 a.m. and things seem to have normalized for me. The little one is still kicking up a storm, and despite being totally exhausted, we seem to be okay!

Word to the wise - pregnant and otherwise - drink more water! We realized in the early hours of the morning that not only did I not really take time to rest yesterday, but I didn't drink any water! Only coffee, an iced coffee (that has water...right?) and a smoothie. Not so smart. I drank a lot of water on Saturday, but apparently, you don't get rollover water. I think the combo of those two things were the problem. [Read more...]

Can't make it to your favorite Mexican grill, but still craving some fresh, flavorful southwestern style eats? Make this Baja Chicken Burrito Bowl at home!I was going to totally share a different recipe with you all today, but the weather isn't as warm as it was a few days ago, which makes me want to share something else instead.

You don't mind do you?

So, we live out in the country, and while we are blessed with two very awesome Mexican eateries in our area (and a taco truck!), we don't have anything like a Chipotle or Taco Del Mar nearby. In fact, the closest Taco Del Mar is about 25 min away and Chipotle is even farther.

#FirstWorldProblems, I tell ya!

Since I'm pregnant, one of the things I'm constantly craving is food with really fresh ingredients. I usually get one of two things at Chipotle: the salad or the bowl! I happen to really favor the burrito bowl, and since I don't actually make it to Chipotle that often, I figured I needed to make my own version of a burrito bowl. Not an imitation of anything at Chipotle, just a yummy, fresh burrito bowl that I could make here at home.

Weekly Menu | Catz in the Kitchen | catzinthekitchen.com | #menu #mealplanLet's talk allergies. Okay? They suck! Allergies mess with your taste buds, not to mention your breathing. Which I basically cannot do right now.

So...how is everyone else's allergies? Is the pollen count or hay fever unusually bad this year or is it just me? While Eden was lucky enough to not inherit any allergies (yet), Josh, Grace, and Christian are all suffering.

It sucks! Okay, enough negativity...

Aside from allergies, we've (by we, I mean Josh) been busy working on the baby's room. If you've watched my insta stories on Instagram, then you've seen some of the progress we've made. One of our favorite smoothie standbys, what we call the Sunday Morning Smoothie - orange, banana, ginger, mango, pineapple, spinach, coconut, and more!We make a lot of smoothies here at Catz. I'm not sure there is any one particular reason for that - more likely that it's a combination of many reasons, all of them good ones! Smoothies are (or can be) healthy, energizing, filling, pretty to look at, a good way to sate a sweet tooth, and easy to make. I guess I was a bit shocked awhile back when I looked at our smoothie section in the recipe index and discovered that we had only blogged three smoothies...ever...and one of those is seasonal! How is that possible, when we have 12 different recipes for French Toast, almost 40 burgers and sandwiches, and closing in on 50 different recipes for pasta? We made a quick trip to the Magnolia Silos in Waco, TX - here are some thoughts about our experience, and some (hopefully) helpful tips!

Chels has mentioned a few times in her posts recently that she and I took a quick trip down to Texas - a little "babymoon" getaway (this is what I'm told it's called...anyway). Honestly, Chels just wanted to get away for a few days together before she got to the third trimester and traveling became more complicated, or even downright discouraged. She's been wanting to visit the Magnolia Silos in Waco ever since they were featured so prominently in Fixer Upper (Season 3, I think - why is it that DIY and being a foodie go together so well?), plus, she's never been to Texas...ever! I did a little digging around, found a great deal at a beautiful, relaxing resort just outside Dallas, and so off we went. In truth, the destination wasn't too important - we were just after a little alone away time. Dallas seemed like an odd choice for a romantic getaway, but the flights and the hotel and the weather seemed to work perfectly, so we went for it! Weekly Menu | Catz in the Kitchen | catzinthekitchen.com | #menu #mealplanI just thought I would take a moment and start by saying that today is, of course, Memorial Day, a somber holiday, to be sure, but one for gratitude above all else. So many have lost loved ones who fought so bravely and selflessly for our country and the freedoms we enjoy (and so often take for granted!). At the same time, we know that they fought and died not so that we would live lives of sadness at their loss, but in pursuit of their family's, children's, and nation's future peace and happiness - to bring it back to what we celebrate here at Catz, the simple pleasures of family life, like gathering around a table.

So, thank you to those who serve, and especially to the families of those who made that ultimate sacrifice we remember today.

Since the observation of this holiday grants many a three day weekend, I hope that for you and yours it is celebrated with laughter (and good food!) among those you love! [Read more...]

It's perfect paired with a bit of ice cream.I used to have this "attitude" about wish lists. You know, Amazon has a wish list category on their site. And I always thought it was kind of a presumptuous thing to make for yourself so other people could buy for you.

Well, my feelings on this have changed quite a bit over the years. I now have a wish list on Amazon as well as wish lists for each of my kids. But hold on, before we get all judgy (you know, like me, for example), hear me out. These wish lists are not necessarily so that other people know what to buy for me. They are mostly for me... Yes, me!

You see, randomly throughout the days, weeks, and months I get to thinking and it usually goes something like this: "Oh! That would be helpful for me to have. I'll throw it on Amazon so I don't forget later." Or there's this thought..."That would make such a great gift for so and so's birthday or Christmas. I'll throw it on their list so I've got some ideas when that time rolls around."

Ever since Thursday, the weather has been remarkable and we've been outside enjoying the cloudless skies as much as we can. How's the weather in your area? Please tell me you don't live somewhere that's getting snow! Several people I saw on Instagram are still dealing with snow!

WHAT?!

As for us, we've officially wrapped up our homeschooling year. Eden took her state achievement test on Saturday (of which we're awaiting the results) and then she and I went out on a date shopping while Josh took the other kids and bought a pool for the backyard from Target and mostly everything we need to get started on working on the baby's room. Have I mentioned that we haven't touched the room since we moved in? It's a bit of job - just with moving things out and making the changes we want to make, but Josh is confident we'll get it done quickly.

Recipe testing is the name of the game this week in terms of the menu. I apologize, I don't have links for everything that is actually on "our" menu, but we'll try to share other ideas for ya!

This delicious family favorite Mexican Lasagna recipe is made mostly from ingredients we always have in the pantry and it comes together in just 30 minutes! We're rolling down to the end of the school year, aren't we? Raise your hand (or a coffee cup) if you're glad! I think the beginning of the school year and the end of the school year look very different from each other. I know for a lot of parents it's a bit of a "happy dance" moment when we finally get the chance to send those youngsters out of the house for awhile.

I cannot relate to this at all because...homeschooling! Even on those days when I find I have a few hours to myself in the middle of the day, I have no idea what to do because I'm so used to having them around!

But, I think I can relate to most of you when the end of the year rolls around - for me as a homeschooling mom, I'm ready to call it a school year in April! But, if it's a state testing year...then my school year runs a bit longer (like this year). Thankfully, we're done as of Friday! Well, Saturday.
