Weekly Menu | Catz in the Kitchen | catzinthekitchen.com | #menu #mealplanI hope you all had a wonderful Easter weekend! Our weekend was pretty full (which is why the weekly menu is going up late!), but really nice. On Sunday, we got up early for our Easter breakfast at church. Grace had made mini blueberry muffins the night before, and Josh made not one, but two of these overnight  sausage egg casseroles for the church potluck.

As soon as church was over, we came home - where I proceeded to put my pajamas back on (no judging!) and relaxed for the bit of day that was left. No cleaning. No cooking. Our Easter dinner consisted of leftovers, macaroni and cheese, and cereal. And you know what, this Easter, I wouldn't have wanted it any other way. It helped that last week had a lot of activities - I think Tuesday was the only day we didn't have any plans. It feels like these last few months have just been such a busy time for everyone, but I think things are starting to or will begin to slow down a little. I hope!

Easy Homemade Chicken Strips

A simple, fun finger food, especially for the kiddos, these easy homemade chicken strips can help replace (or replicate) that run to the deli counter!

My parents divorced when I was really little, so I grew up splitting weekends between mom's house and dad's house. I was so young at the time, I don't even remember, and since both of my parents remarried, I actually can't remember life without my step-dad or step-mom!

You've heard me talk about what a great cook my mom was and is, I'm sure. Home cooked meals were on the table by 6:15 almost every evening. She put a lot of time and love into those meals.

But...I haven't really shared about my dad's cooking, which was also delicious! On the weekends, I would be with him and my step-mom, and they would make tacos, which are really similar to my baked turkey tacos, or we would do huge breakfasts on Saturday or Sunday mornings (we always had biscuits and gravy with scrambled eggs...and maybe some bacon!). 1. I have this problem. Sometimes, Josh or even other people will suggest a show for me to watch and I'll drag my heels on it until I'm in the mood to watch it. This could be months, sometimes even years! I know. I'm ridiculous. Josh has been wanting to try Stranger Things for awhile, insisting that I might like it - seeing as it's kind of a semi-creepy thriller show set in the 80's, but I've been dragging my feet. Finally, I gave it a try and wouldn't you know it? I love it! Bonus points for all of it's awesome 80's music, too.

2. I did another FB Live video recently. I made my family's Lasagna Casserole for dinner last night and decided to show everyone how easy it really is to make! Check it out if you get a chance?

3. For those of you who are active gardeners, what are some of your favorite, most hearty perennials to plant that you think make your landscaping look fresh and alive? On Sunday, we had some blue skies and I even saw the sun briefly. It wasn't a warm Sunday since it only got to about 50 degrees, but plenty of people took advantage of the dry weather and mowed their lawns (I've always loved the sound of that, all the mowers starting up around the neighborhood). This recipe for making yourself a yummy chocolate danish at home is easy, fun, and a great way to experiment with puff pastry!

So...we've been playing with puff pastry a bit, as you may recall from this Easy Marionberry Danish post from December. We haven't tried anything particularly fancy or challenging yet, and we certainly don't feel ready to try making our own puff pastry from scratch (so, in the meantime, thanks, Pepperidge Farm!). Right now, it's just a lot of fun to try these simple fillings, usually with help from the kiddos, and glory in the fluffy, flaky, buttery goodness as it emerges from the oven.

I think Chels was the one who originally came across Giada's recipe for chocolate and cheese danishes. Once found, we obviously had to make them. We had puff pastry in the freezer, we had mascarpone and cream cheese in the fridge...it was meant to be!

These Slow-Cooker Korean BBQ Beef Tacos have everything - texture, flavor, and timing! They're quick, easy, and oh-so-tasty!Now that the cat's (haha) out of the bag, so to speak, and we've announced that we're pregnant (I think this is the first time I've mentioned it here, actually, so...surprise!), I can finally talk about some of my cravings and foods that have sounded good to me. Which, there really haven't been that many. Usually my "go to" craving is Mexican food. But this time around, for the first time in all of my pregnancies, I am not craving it the way I usually do.

We had a few breaks and they were nice to have. We even got out on Saturday for a bit without any rain at all. But then, Sunday showed up and so did the rain again. I told Josh that I feel like I'm going to start growing gills soon!

But of course, if April's nursery rhymes happen to ring true, "April showers bring May flowers..." and we could still be into this wet weather for at least another solid month.

Speaking of April...the month and the giraffe. I've been watching that giraffe for a month now and still no sign of that baby? Maybe she'll have her baby in April. Wouldn't that be funny! [Read more...]

Carrots, apples, oats, blueberries, cranberries, walnuts, cinnamon and a bit of brown sugar make these healthy cookies amazing & safe for indulging!If I'm being honest, I don't bake quite as much as I used to. I mean to, but between you and me, I don't really need the temptation around the house. Usually, just a taste or a sliver of whatever I bake is enough. But then there are the nights when I can picture that sweet treat on the counter or in the fridge and it calls to me...or my husband.

Whoever gives in usually brings it to bed and then the other is stealing bites from their plate, which of course leads to another plate of said treat being brought up to bed.

Which means...this week's menu is brought to you entirely by Grace and Eden! They had dinner ideas thrown out so quickly, and within 10 minutes, I had a whole week's worth of menu ideas on paper.

Some weeks, it's easy to plan out meals and others it is just harder. Real life!

Apparently, it's supposed to rain for the next 15 days straight! If you don't live in Oregon, then you may not have heard that we've already met our quota for yearly rainfall (and then some). That's right, kids, in 5 ½ months we're good in the rain department for the whole year. [Read more...]
