We're officially being bombarded with "back to school" ads, reminding us that summer is...do I dare even say it...ending? We're looking at class schedules for Grace, curriculum for Eden. Surely we can't be this far into summer already!

And then of course, our baby will be here by then, too! So much to look forward to!!! Actually, I only want to "half" think of that...because, you know, there is the whole delivery thing...

Anyhoo, this week's menu is completely made up of dinner requests from the kids. I love it when they request meals - it makes the whole meal planning thing really easy! I think I'm even going to enlist Grace's help in making dinner a few of the those nights. It makes it easier on me, of course (over the past week and a half, standing in the kitchen to cook has become hard on my feet and they just feel achy), but she also really wants to be capable in the kitchen (and, for the most part, she is!). This carbonara pizza recipe is easy, quick, and inexpensive, with some strategic substitutions! Eggs, cheese, and bacon - how can you go wrong?It's not a secret that Friday nights are family nights reserved for eating pizza around the coffee table (and salad - balance y'all!) and watching a movie (or Fixer Upper or Chopped or Next Food Network Star or The Great Food Truck Race...you get the picture) as a family. This has been a weekly tradition for as long as I can remember and one that I'm all about.

And while all of that has certainly been happening over the course of the last seven months, our pizzas have mainly been prepared by Papa Murphy's. Like I mentioned in the weekly menu post, I really haven't had a lot of energy to cook, and while homemade pizza is probably one of the easiest things you can make, so is ordering a pizza that's made with fresh ingredients just for you on Fridays after grabbing your groceries! Tuesday's Tidings: Pregnancy Update!

This post is honestly a little late in coming. I meant to actually get on here and share an update several weeks ago, but we got busy with family and life and it just didn't happen. So here it is! This is a newsy, journally little chance for me to get out my thoughts, so please only read on if this sort of thing is of interest to you...

I'm officially in my third (and final) trimester and I've only got eight weeks and three days to go (I'm not counting down or anything), which means I'm now 31.5 weeks pregnant! Cue all the nerves, anxiety, and fears that go into preparing for labor and delivery. This is my fourth time, so you would think I wouldn't be scared or nervous, but I am. Somehow, even knowing what to (kind of) expect doesn't make it any easier. Each pregnancy and delivery is different and that unknown factor is the part I always worry about. The first time I was worried about not having enough time to just take a break and have some "me time." Luckily, we looked through our options and found a way for me to fit in some time to myself. At one point we were going to get an au pair but there wasn't the right one for us because there were so few available! So if you want more experience with kids or experience a new culture then go to Cultural Care Au Pair and sign up to help out a mom like me!

Weekly Menu | Catz in the Kitchen | catzinthekitchen.com | #menu #mealplanMaybe it's just me, but the summer feels like it's flying by fast (not these last 10 weeks of my pregnancy, of course), but I'm sitting here thinking...we just celebrated the 4th of July and here it is the middle of the month, which gives me less than a month till one of my daughter's birthdays...

Eden's going to be nine and that number is freaking me out just a bit! Both she and Grace got cute little haircuts this week, not to mention, Grace started wearing mascara! Which was my suggestion, because I thought she may enjoy it, but...my babies are growing up!!!

Thank goodness I'm pregnant with another baby, because between you and me, I guess I just wasn't ready for Christian to be my last "first" baby everything. [Read more...]

We love ice cream over here at Catz. We don't all love it in the same way. Chels, for example, just loves it, in all it's wonderful forms, though she admittedly has better self-control than the rest of us. I love it, mostly, in milkshakes and malts. Or with brownies. Also on pie. And with chocolate lava cake. Did I mention malts? I did. I should stop.

The kids like it, too (um, duh - they're kids). They love ice cream sandwiches and sundaes and sprinkles and cones. We all love frozen yogurt, especially from those crazy little places where the fro-yo literally spews from spigots in the wall and you buy it by the pound. There's an inventor somewhere who needs a medal or a knighthood or something for that idea.

Weekly Menu | Catz in the Kitchen | catzinthekitchen.com | #menu #mealplanYeah, so you may have noticed that I've (we've) been pretty quiet on the blog and on our Catz Facebook page. I've gotten on Instagram a few times, but that's been about the extent of my social media reach.  We've had a ton of family in town for nearly three weeks and I think out of the last 2 ½ weeks, we've only eaten dinner at home maybe once or twice. Which has been fun, actually!

And while having a bunch of family in town has been a blast, it's also been really exhausting for this pregnant mama! But, all the family has headed home, which means things will probably begin to return to normal - and that includes dinners back at home.

Which reminds me, I need to go grocery shopping! Basically, the meals on this week's menu are going to be whatever we've got around the house that I can get away with making without running to the store (or, at least, not too often).

If you're a regular reader of Catz, you know we love to eat, mix in, cook with, bake with, and pick berries! In fact, I think the berry recipe archive is closing in on 40 recipes now, running the gamut from french toasts and crêpes to popovers and healthy cookies! The possibilities really are delectably endless, and as we've mentioned before, we have the added benefit here in the Pacific Northwest of easy access to lots and lots of local berries - local frozen berries during the winter and spring, and, often, fresh picked berries during the summer and fall. While blackberries aren't quite in season yet (you can literally walk down just about any park trail and pick them right off the bushes here in Clackamas County come August), flash frozen Oregon berries are readily available in the freezer section, perfect for smoothie duty!

July 4th is next week and that is just all kinds of crazy to me. Did the month of June go by in a big hurry for you too?

Unfortunately, I've spent most of my time sequestered indoors because of allergies! I know I whined about this last week, too, but let's just say that now that I'm in my third trimester, I'm uncomfortable as it is, and when you tack on allergies, everything, and I really do mean everything, seems so much worse.

But, anyhoo! Josh has a few vacation days we're using this week, so we plan on heading to the beach one day and possibly doing a few other fun things with the kids this week, too, like miniature golf and possibly berry picking. I'm just going to leave you with that thought for a moment...

Have you ever walked past your local grocery store when the sun is out and they've got someone outside manning a grilling station and all you can smell is that delicious BBQ smell? I'm telling you...that smell is right up there with olive oil and garlic simmering in a pan...

I'm not even joking right now.

1. We recently started watching Victoria, which is one of PBS/BBC's Masterpiece productions and we are loving it so far. It came out near the beginning of the year and we're just a little late to the game in watching it. I didn't know much about Queen Victoria and while I'm sure some of the storyline is made up or presumed, I am learning quite a bit.

2. I just bought this nightgown from Target yesterday to work as a maternity gown, something I can wear in the hospital, and for after the baby is born! It is so soft and so comfortable - I bought mine in black in grey, however, I wouldn't mind owning one in every color, haha!

3. If you want to be entertained and possibly laugh a bit, go check out this Instagram feed for Tiff the Barbie! The captions and photos seriously have me rolling in laughs (Is that a thing? That's a thing, right?)! [Read more...]
