I'm having one of those weeks. You know, the week that seems to zoom by and you've got a million things to get done and but you're so overloaded that there aren't enough hours in a day to get it all done? You know what I'm talking about?

I have my week completely planned out by the day and all the tasks that need to be done on each day. I was doing well until last night when I realized some of the projects I had hoped to have finished haven't gotten finished. In fact, somehow, I've fallen behind.

How did that happen?  [Read more...]

Tuesday's Tidings for August 25, 2015

Tuesday's Tidings

Hers

1. If you guys want to smile, then you need to watch this video. It is one of the sweetest things I've ever seen.

2.IMG_8303

When I find a company that I really like, I enjoy tooting it's horn so other people can enjoy it too. I've talked off an on about Thred Up. For those of you who don't know anything about it, it's like an online consignment shop with great quality, brand name clothing. You can send in bags of clothes, shoes, and purses you don't use anymore (granted they are the brands they accept) and they will give you credit or give you cash in return. I always take the credit. I've bought several items for the kids and myself and I've never been disappointed by their customer service or efficiency. If you are interested in trying it out, here's $20.00 to go buy something cute. As a referral, for making a purchase, I too, get $20.00. So it's a win/win for everyone!

3. I came across this shirt last week on Pinterest and I'm very tempted to buy it. It's kind of amazing! [Read more...]

Weekly Menu Aug 24 - Aug 30

I don't know what the weather is like where you are, but it is dry, dry, dry here. We desperately need rain. Over the weekend, the wind drifted the smoke from the various fires in Washington and Oregon into our area. It's not pretty and our prayers are with all the people displaced and the firefighters who are putting themselves in harms way.

I can't believe this is the last week of  August! Where did the summer go? I'm ready for fall. My favorite time of the year. But since summer is still here for a few more weeks, I guess I'll just sit back and enjoy the sun and warmer days. It has been nice that it's been cooling down faster in the evenings.  [Read more...]

Tuesday's Tidings (on a Thursday!) for August 20, 2015

Tuesday's Tidings

Just Chels this week! Josh apparently doesn't have anything interesting to say on Thursdays...

1. If you haven't seen these two pictures yet of the momma lioness feeding her four newborn baby cubs, then you need too. It is just adorable!

2. I got some new boots from Target over the weekend. You guys, I rarely buy myself shoes anymore. The last time I bought shoes was in March. So I was a little overdue, if I do say so myself. #FirstWorldProblems, I know.  [Read more...]

Coffee Rubbed Blue Cheese Bacon Burgers

Coffee Rubbed Blue Cheese Bacon Burgers | Catz in the Kitchen | catzinthekitchen.com | Partnering with Castelo for a Summer of Blue | #BluesdayTuesday

We're partnering with Castello for a Summer of Blue!

We're all fans of blue cheese here in the Catz household (or bleu cheese, if you prefer - Gracie and I are currently trying to learn French, so...), but no one is a bigger fan than my six...er, seven (happened over the weekend - I'm in denial)...year old Eden. Edie gets ridiculously excited when she finds that blue cheese is an ingredient on the menu, whether it's topping a salad, a sauce to pour over steak, or a layer in a sandwich. Actually, especially when it comes to steak, that goes for all three of the decidedly petite ladies in our family - they all want a blue cheese butter sauce to pour over the top! Healthy? We'll just keep the servings sensible and not worry about that one. Tasty? Oh, yeah....

As you can imagine, when we were asked if we would like to participate in Castello's Summer of Blue campaign, which just involves creating and sharing blue cheese recipes, we didn't hesitate for a moment. Our cheese? Castello's Burger Blue.

YES. [Read more...]

Happy Monday guys! As I'm writing this, I've got a houseful of girls munching cereal and talking up a storm in my kitchen. Eden celebrated her 7th Birthday with a big backyard bash at our house last night (Sunday evening) and I have never seen so many little girls screaming and squealing their little heads off, haha!

We're in the last few weeks of summer, guys. Officially, we only have 4 more weeks of summer. Can you believe it? I'm ready for fall. I'm ready for pumpkin, mums, and chilled early mornings with colorful leaves.  [Read more...]

Homemade Granola Bars

Back to School Granola Bars | evermine occasions | www.evermine.com

Happy Thursday, guys - how's your week going? I'm over at Evermine today sharing these "Back to School" Granola Bars for the lunch box or for an after school treat.

At this point in August, everywhere I look "back to school" is the theme of the stores. Next up, Halloween, Thanksgiving, and you know what comes after that... [Read more...]

Tuesday's Tidings for August 11, 2015

Tuesday's Tidings

1. I stayed up super duper late Sunday evening to finish reading Moby Dick. Have you guys read it yet? It took me almost 2 months to finish it. Most of the chapters aren't too long, there's just a ton of them; as in 135 of them. But if you are considering it for a read, you can check out my review of it here.

2. I can finally say I've tried escargot. No, I didn't have to pry the little buggers out of their shell. The texture is...what you would expect. But La Provence (the restaurant we ate at for our anniversary) prepared them beautifully in this rosemary sauce with blue cheese and smoky bacon while nestled in a mushroom cap. As a foodie...you gotta be a little adventurous right? [Read more...]

What a week! Josh was gone on vacation for most of it and then we spent the weekend celebrating our 12th anniversary, and the girls and I got baptized! It was one amazing weekend!

This week won't be as busy, a little bit back to routine which will be nice. Eden turns 7 years old on the 15th - I'm not even sure how this is possible. I was just holding her in the hospital, like yesterday!  [Read more...]

Mediterranean Turkey Burgers

August 7, 2015 By Chelsia Rief 6 Comments

Egg whites, feta cheese, and cranberries in a turkey burger? You bet! These Mediterranean turkey burgers are lean, tasty, and family-friendly!

Mediterranean Turkey Burgers | Catz in the Kitchen | catzinthekitchen.com | #burgers

While I'm not the biggest fan of summer, mostly because of the heat and the fact that the sun tends to give me headaches, I do love the food! Give me barbecue chicken, cold pasta salads, saucy ribs, and corn on the cob any day! But my favorite food of summer (and probably the one I associate summer with the most) is the burger.

In my opinion, it's not really summer until you've fired up the grill for that first burger of the season. And in my family, we love them. We'll eat a simple cheeseburger, we'll cover it with strips of bacon, or we'll top it with an egg. It doesn't matter if it's beef, chicken, or turkey - chances are that as long as it isn't smothered in anything spicy or decked out in a colorful array of onions (I'm looking at you red onion), I'll eat it.  [Read more...]
