Chels is over at Evermine today sharing this amazing homemade skinny salsa recipe! Unfortunately, Chels got pretty sick on Tuesday, so she hasn't been able to do any posting here at Catz, but we'll be back soon... When Chels made this salsa, I snuck off with a small extra jar of it that we didn't need for photographs, a bag of Juanita's, and ate it all. It's simple, fresh, and so easy to eat, well, really a lot. She made quite a few jars with the simple ingredients, and we've since shared them with family, who loved it just as much as we did! It is finally March! We lose a whole hour come Sunday, but gain sunshine...er...more light! We've had such a beautiful weekend full of sunshine and I'm just itching for spring, aren't you?

And...spring break is right around the corner! Does anyone have plans yet? Josh and I are going away for a few days just before the week off and I cannot wait. Hi everyone! I'm over at Pint-Sized Treasures sharing this recipe for Eggplant Lasagna! I don't cook with eggplant very often. In fact, I think the only eggplant recipe I have on my blog is the Eggplant Parmesan. So I think it's fair to say that it is something I need to cook with more often.

That being said, I took the elements of Eggplant Parmesan and turned that into a lasagna that tastes amazing! The eggplant acts as the noodles while the tomatoes act as the meat. And I promise, you won't miss the meat at all! [Read more...]

1. I think this is the first year in so many that I haven't watched the Academy Awards and you know what? I do not think I missed anything at all!

2. I never buy myself perfume, but I had small Amazon gift card that needed to be used, so I indulged and bought myself Fancy, one of my favorite fragrances. A girl should treat herself every once and awhile.

3. I know this isn't a Leap Year, but almost every year, Josh and I watch the cute movie Leap Year. We haven't watched it this month, but I have a feeling we will very soon. [Read more...]

I don't know about you, but I am ready for spring. While the weather has been windy (and even a little colder because of the wind), it has been beautifully sunny the last few days, and Josh and I took the opportunity yesterday to get outside and weed the flower and garden beds, rake leaves, and get rid of the limbs laying in the yard. Our yard looks better already!

I feel like we've been really blessed in Oregon this month because aside from about a week where it was really rainy, the weather has been exceptionally beautiful, and we've reached record highs on several days. One of my Josh's favorite dinners is stroganoff. But I never, ever make it! I've tried a few crockpot chicken versions before, but I've never really enjoyed them. They always tasted a little meh to me. I never even attempted a beef stroganoff because there were always mushrooms in the recipe and for the longest time, we didn't like mushrooms.

Josh makes fun of me because I tend to get these dreamy, unrealistic ideas in my head of how I want things to be. Is it just me or do bread and pasta just go together? Like bacon and eggs, or peanut butter and jelly, or meat and potatoes? I cannot serve my family pasta without some sort of carby goodness on the side. Yes, I know, carbs + carbs = BAD, but you know what? I don't care.

Carbs are only bad if that's all you eat, so I always serve a salad or a veggie on the side to balance all that carb out.

1.  For Valentine's Day, we stayed in and Josh gave me complete control over what movie we watched. Guess What? I couldn't decide, so we still haven't watched my movie choice, lol!

2. We're having such beautiful weather here in Oregon. The kids have played outside for two days and have loved every second of it.

3.  One of my favorite websites to buy cute little scarves and other random things is Jane.com. The site has a lot of good deals and even if I don't buy anything from them, it's fun to browse through. [Read more...]

How was everyone's Valentines weekend? We had a very quiet one. The kids ended up falling ill towards the end of the week, so we cancelled our dinner plans and laid low. Thankfully, the virus seems to be only that of a cold, so not too terrible.
