Breakfast Kale Salad

February 13, 2015 By Chelsia Rief Leave a Comment

Kale Breakfast Salad

This recipe for Breakfast Kale Salad from Melissa d'Arabian's new cookbook is healthy, tasty, colorful, and ready in about half an hour!

Kale Breakfast Salad | Catz in the Kitchen | catzinthekitchen.com #Kale

I'm pretty new to the whole kale thing. I've used kale once before in this ridiculously old Fettuccini with Sausage and Kale Pasta, and it was so good. I think by now we all know about the health benefits of eating kale, and if you don't, then climb out from under your rock and join me on this wild ride of kale! ...um, does that actually make sense? Anyway.

Josh bought me Melissa D'Arabian's new cookbook, Supermarket Healthy and I've loved looking through it. So many recipes I still want to make, but as soon as I saw her recipe for the kale breakfast salad, I knew I needed to try it.  [Read more...]

White Chocolate Macadamia Nut Blondies

White Chocolate Macadamia Nut Blondies

White Chocolate Macadamia Nut Blondies | Catz in the Kitchen | catzinthekitchen.com #ValentinesDay

I was talking to Josh the other night and I was telling him all the things that he should NOT buy me for Valentine's Day. Yes, you heard me right. I went on a little tangent listing off things he wasn't allowed to buy me.

For example, he can't buy me roses (even though they are my favorite flower) because the stores and florist shops jack the prices up. He can buy me flowers, but not roses. Something cheaper is always better. He's not allowed to buy me jewelry. I like jewelry and I wear it everyday, but I would rather have meaningful pieces that I really enjoy, rather than several strings of necklaces or bracelets that I won't wear often enough. Of course, if he bought me a pair of pearly earrings to go with my necklace, I don't think I would turn it down. I also said he couldn't buy me chocolate, because I'm still working on all of my Christmas chocolate.

Tuesday's Tidings

Tuesday's Tidings

Hers

1. Josh has started serving me French press coffee and I've discovered that I love it! I thought I wouldn't like the flavor, but I LOVE it! Maybe, I should listen to him more often. Hehee!

2. I finally got Josh to go through all of his clothes in our closet and donate the ones he no longer wears or that are worn out. I'm just so happy because things are so much more organized and I LOVE organization. [Read more...]

Weekly Menu Feb 9-15

How was everyone's weather this weekend? It was downright grey and drizzly and I would be truly lying if I said it wasn't starting to get me down a little. I got a little used to some of the sunshine we had over the last few weeks, and this rain just makes spring seem farther away...which is quite funny since spring (or, more accurately, allergy season) is the time of year I dread the most.

Despite the rainy weather, I did have a very nice weekend. Josh and I got some stuff done, and I got to meet Lisa from Club31women.com in person - as well as three of her daughters, which was such a treat! I love it when I get to meet real-life bloggers outside of the internet. It has really been a blessing for me. [Read more...]

Slow-Cooker Black Bean Soup

Slow Cooker Black Bean Soup

Slow Cooker Black Bean Soup PIN

Why is it that on some days my son will take naps and then on other days, he fights me on it. I don't get it. On Monday, he ended up not getting a nap and he was wreck come 4 pm. He went to bed early that night. Actually, all the kids went to bed at 7:30 pm because we were all so tired, and Josh and I just needed some time to unwind afterwards. No blog work. No serious topics. Just sitting on the couch, cuddled up with each other watching Downton Abbey.

On Tuesday, Josh and I had a meeting in the late afternoon, so I knew I needed to get Christian down for a nap as soon as possible. Homeschooling was done for the day, breakfast was finished, and I got Eden and Christian bathed. While I was drying Christian off and getting him dressed for the day, he let slip several yawns.  [Read more...]

Tuesday's Tidings

Tuesday's Tidings

1. We made these tacos last night and they were so so good! Thankfully, I've got leftovers, so I'm thinking nachos!

2. What's your favorite HGTV show? I started watching House Hunters on Netflix while I was folding laundry the other day and I love trying to decide what house will be it! I think it is such a fun concept for a show.

3. Yesterday, I took the kids on a little field trip to Goodwill for some new (to us) books. Grace bought two more Nancy Drew books, Little Women, and a Mary Poppins book - which she was thrilled about. Eden found two Raggedy Ann & Andy books and this cute little book about a cat that thinks it's a mouse. I found Blink and The Hound of the Baskervilles. Seriously, I love Goodwill for their book section. I have found so many amazing books there. It's such a great place to build a library. [Read more...]

Weekly Menu for Feb 2 - 8

Oh my gosh - it's February! Where did January go? But yet, it feels like January should have been over weeks ago.

Did everyone celebrate the Super Bowl? We were celebrating my father-in-love's birthday yesterday, so I caught a glimpse of the game here and there.

I don't know if anyone else gets hit with this at this point in the season, but this is the time of year where I get a little tired of winter and ready for spring. Granted, I love the chilly, sunny wintery days. However, the rain is back, and while I enjoy the rain and love the way it sounds as it lulls me to sleep, I do get a wee bit tired of all the grey. I actually just bought a few springy skirts from Thred Up the other day and just putting them on to make sure they fit (they did!) got me excited.  [Read more...]

Chicken Gyros

This recipe for easy chicken gyros with tzatziki sauce is simple, filling, and fast. It can be on the table in 30 minutes and is easy prep ahead of time! Chicken Gyros | Catz in the Kitchen | catzinthekitchen.com #Greek

Ever since we made these Chicken Gyros in my homemaking & hospitality class at the beginning of January, I've been excited to share them. I came home from the class just talking about how much I loved the recipe.

It's not unusual for me to get pumped up about a recipe, I mean, hello - Food Blogger! But this was one of those recipes that I couldn't wait to make again and again and again. [Read more...]
