Weekly Menu | Catz in the Kitchen | catzinthekitchen.com | #mealplanThey say we're supposed to get snow this week. But, I've heard them say that before and not deliver, so between me and you, I just don't believe them. And by them I mean the meteorologists. My kids are still young and naive, though, so they totally think it's going to happen. ❄️

Poor things. 

It's currently Sunday afternoon and we're waiting for puff pastry to thaw so we can use little smokies and make pigs in a blanket with puff pastry instead of crescent rolls. Trust me. If you've never tried this version of a pig in a blanket, you're missing out. It is so much better than hot dogs and crescent rolls. We are particularly fond of using the all beef lil smokies from Trader Joes. The flavor is delicious and the quality (I think) is really good, too.

We've been working on adjusting how we spend our Sundays as a family - working hard (slightly ironically) to make a more concentrated effort on keeping a "Sabbath." As in, no work, including this post, which I desire to get written on Fridays vs. Sundays. No chores. I did all my laundry yesterday and I'll fold it tomorrow. I cleaned the bathroom yesterday. Spend time eating simple food - we plan on using leftovers in the fridge to make a nacho for dinner and playing games as a family. The kids love and I love it - so I think it's something worth making more of a priority.

This week's menu, I think, is one you're going to like. Delicious. Simple. Easy. Comfort food. One of the things I'm throwing on the menu for you are the Chicken Tinga Tacos I made on Saturday for Josh's birthday! It had been so long since we made them and I had forgotten how good they were...and how simple. I doubled the recipe to serve 14 people and we still had leftovers! If you haven't made them before, I highly recommend it. Then we have Garlic Spaghetti (oh my gosh, so good), tater tot casserole, chicken pot pie, pizza (of course), and a few weekend goodies. 

I hope you enjoy this week's menu, and if you need more comfort food ideas, may I suggest my Pinterest pasta board. I love pasta this time of year, don't you?
