I hope you all had a wonderful Memorial Day last week and good weather for it, too! We had very nice weather for an Oregon holiday. We don’t always have temps in the upper 70’s and sunny skies this time of year! There have been many rainy Memorial Days in the past. We hosted a BBQ at our house for all of our family – it’s kind of like our official launch of summer even though technically, summer is still a few weeks off. We kept the menu really simple with hot dogs, baked beans and corn bread muffins (which are two recipes I’ve been working on), and then we asked people to bring drinks, ice cream sandwiches, chips, and two different kinds of salad, and macaroni and cheese. As usual, we had an abundance of food and enjoyed leftovers for dinner for awhile!
However, this week is not as lovely (so far – they claim the forecast will change). It’s like a full on wind and rainstorm right now and in a way, I’m okay with it. Mondays are usually a busy day for me and the stormy weather makes it easier to get those things done, somehow.
As for this week’s menu, I’m keeping it simple. Here’s what we’re cooking this week:
Bacon-Wrapped Cheese Dogs
This is so easy, it's barely even a recipe! Instead of plain ole' hotdogs, why not punch it up with some bacon wrapped cheese dogs?
Grilled Honey Lemon Chicken
This scrumptious recipe for grilled honey lemon chicken is incredibly simple, and, not counting the 30-min-marinade, takes less than half an hour to make!
Chicken Pesto Burgers
Chicken Pesto Burgers change it up! Smoky chicken instead of beef, fresh tomatoes, spicy arugula, and zesty pesto instead of bacon and cheese!
Slow-Cooker Korean BBQ Beef Tacos
These Slow-Cooker Korean BBQ Beef Tacos have everything - texture, flavor, and timing! They're quick, easy, and oh-so-tasty!
Grilled Burrata Salad
This grilled burrata salad recipe is the kind of simple and rustic (but elegant) late summer dish we love - the torn croutons are amazing!
Grilled Blueberry French Toast
Made on the grill or the campfire, this Grilled Blueberry French Toast is smoky & decadent, but still fresh and sweet, thanks to the blueberries and syrup!
Cilantro Lime Rice
Looking to jazz up taco night with a delightful, simple side dish? Look no further than this easy recipe for cilantro lime rice!
Farmhouse Blueberry Pie
Have some blueberries around the the house this summer? This farmhouse blueberry pie is a classic, simple, and approachable way to use them up!
And since the berry farms are beginning to open up for U-picks and such (at least in our area) I thought it would be fun to share recipes for my favorite summer desserts – cobblers and crisps. I love a good cobbler or crisp so much, I have yet to meet one I don’t like!
Have a great week everyone!
