Our kids finished school last week, so we're officially on spring break and this homeschooling mom is ready to take a break from school and focus on just having fun and lightening up the mood with movies, games, and baking. Which is perfect because the weather is supposed to be on the rainy side all week - typical spring break weather for Oregon, I'm afraid.

I'm working on two more recipe roundups for you guys during this whole quarantine/lockdown/stay-at-home thing. Last week, we shared a post on easy pantry and freezer meals that you can make. We were flattered to be included in a Parade Magazine round up featuring 20 recipes from various food bloggers that are easy, cheap meals from the pantry. The two recipe roundups I'm currently working on are for recipes that use ground beef and then meatless, vegetarian, and vegan meals. I don't do a ton of vegan cooking, but we

have a few meals that work for that category. Stay tuned for those!

Last week was a busy week in the kitchen for me - I'm working a lot of recipes ideas! Josh made a pasta dish that we plan on sharing soon with you guys that is a total pantry meal and so easy! I swear the whole thing comes together in 30 minutes or less. And I'm working on developing a slow-cooker carnitas recipe for ya, too. Sadly...that one needs more work. The flavor was so good, but I need to work on the cooking temperature (I think). I hope in a month or two to get that one perfected and blog-worthy.

Tonight, I'm remaking a shepherd's pie I tested a few weeks ago - hopefully we'll get that photographed - and then testing two more recipes, plus I'm getting back on Instagram Wednesday night to try out another Instant Pot Recipe. Last week's turned out really good. This week, I'm roasting a chicken in the instant pot - wish me luck.

We want to try to be a helpful source of delicious, easy, pantry-friendly recipes for you, always, but especially during this time. One thing I noticed when I was at the store over the weekend that almost all of the pasta was gone, except for the manicotti and jumbo shells. This tells me that maybe a lot of people are unfamiliar with how to use this ingredient...or are intimidated by it, perhaps? We're pretty comfortable with these types of noodles, so we will work on bringing you some recipes that use them.
