Black Beans and Sausage

Lately, I've all been about using up some of the things I have hanging out in my freezer and making meals out of them. A lot of times, I'll buy things on a really good sale, and combine coupons together so I can save money. One of the things I buy almost every time it's on sale are the Hillshire Farms Smoked Sausages. We buy all sorts of different varieties and we use them in a ton of dishes. Josh makes a great southwest breakfast bowl with these sausages, and they work perfectly in the slow-cooker too!

Awhile back, I had pinned this Martha Stewart recipe and completely forgot all about it. While I was trying to make up my menu for the week (a few weeks back) I remembered I had a couple of those smoked sausages in the freezer and found the recipe in one of my many boards, and voila! The recipe was added to the menu. We actually didn't get around to making this recipe for a few more weeks because of weather and other things going on, so I just kept re-adding the recipe to the menu until we finally made it last week!

Unfortunately, due to the way the week worked out with my menu planning, this recipe which was supposed to be a Thursday night dinner got switched into a Wednesday night dinner instead. I normally don't make dinners longer than 30 minutes on Mondays, Wednesdays, and Fridays due to those being are workout nights (although, that's going to change a bit soon in October with our Fall schedule). Since I go to the gym and workout and Josh works out at home, he normally finishes his workouts first since I have to drive to and from the gym, so I had all the ingredients prepped ahead of time for him to go ahead and start dinner without me, and then I would join him as soon as I got home.

I'm so glad I kept this dinner on the menu and thought to prep the ingredients ahead of time because we would of missed out on a fantastic dinner that I would happily make again.

Black Beans and Sausage

A hearty skillet dinner that is easy to prepare and packed with flavor!

Serves: 4

Prep Time: 15 minutes
Cook Time: 20-30 minutes
Total Time: 40-50 minutes

Ingredients
2 teaspoon extra-virgin olive oil
1 pound kielbasa or other smoked sausage, cut into 1-inch pieces ( We used a chicken sausage)
3 medium carrots, diced small
2 shallots, diced small
Salt and pepper
2 cloves of garlic, minced
2 can (15 oz) black beans, drained and rinsed
2 cups chicken broth
3 TB chopped fresh parsley, plus more for serving
¼ cup plain greek yogurt, for serving

Directions

  1. In a large skillet, heat oil over medium-high heat. Add sausage, and brown on all sides. (If sausage is not already pre-cooked, you will want to cook it until browned...about 8 minutes.) Transfer to a plate.
  2. Add carrots and shallots to skillet and cook until beginning to soften, about 2-4 minutes; season with salt and pepper. Add garlic and cook for about a minute. Add black beans and broth and bring mixture to a boil. Add sausage, reduce heat to a rapid simmer and cook until carrots are tender and the liquid mixture has reduced, about 12-20 minutes. 
  3. Remove from heat and stir in parsley. Serve in bowls, top with more parsley and a dollop of plain greek yogurt. 

Tuesday's Tidings for September 17, 2013

1. Today is Christian's 9 month Birthday!!! Isn't that amazing! He has officially been out for as long as he's been in. For some reason, I scheduled his 9th month well checkup today! You know that that means right? The poor guy had to get pokies today :( He had his hemoglobin in his blood checked which looks at his iron level. Not only was that perfect, but he didn't even feel the prick in his finger. But he also got the flu vaccine today, er phase one of the vaccine. He's gotta go back in a month and get round 2, but he was so good about that today too. So here are the stats: Mr. Man weighs 18 lbs and 12 ½ oz!! That's almost no more rear-facing carseat weight! He's also 27 inches in height. So he's kind of a rotund shorty ;) For his age, he's still hanging out in the 20th percentile of everything and right on pace! Yahoo!

2. It's apple season and this time of year, Honeycrisp is my favorite, along with half of the rest of the world. Is it just me, or are they expensive where you live too? Like seriously, are they like the elite of the apple class? I bought one apple on Sunday because it was $3.99 lb! A POUND PEOPLE! That is just plain out highway robbery!


3. I'm already in the midst of planning next week's menu. Josh will be gone and it will just be me and the kids. Grace has already asked for a meatloaf I made a couple of months ago. Josh despises meatloaf, and I keep trying different recipes on him hoping to change his mind. ( I doubt it will ever happen.) I think it's a texture thing for him. So I'm planning on making that for us, along with a few other easy dinners that the kids never get or that I don't make that often. I've got 3 dinners planned out with an idea for the 4th dinner, but I told the girls to pick something that I can make. But if they choose something I don't want, then I'm vetoing it and going with my back up dinner idea.

4. The doc said I can start Christian on cheerios. I don't remember when I gave the girls cheerios, but I'm pretty sure they had teeth. Christian is teething but still very toothless. I don't think it will be long now though. Watch, he'll finally cut the tooth and figure out crawling the week Josh is gone. It will be just my luck!

5. The last two days, I've gotten up at 5am! I AM SO NOT A MORNING PERSON! Monday was by my own choosing because it was Josh's first day at the new job and I wanted to spend the morning with him and it was a good thing I woke up anyways, because Christian woke up at 6am. But then this morning, Christian got me up at 5am and I was dead asleep. I'm feeling kind of cranky.

6. I got some pumpkin goodies when we went grocery shopping on Sunday. Last year, I saw the bagels and the english muffins at the store once and then they were gone the rest of the season and I was really mad...ya know, I was pregnant and craving pumpkin! So when I saw the last bag of the bagels AND english muffins the other day I threw them in the cart. Josh told me to put one back. I threw a fit! LOL, like literally, the store was already more crowded on a Sunday than it usually is because of this huge sale going on, so I was already on edge, but then he tells me to pick ONE! I'm sorry...WASN'T GOING TO HAPPEN WITHOUT A FIGHT! The point is, I won and we were still basically where we needed to be budget wise and I'm thrilled. The Pumpkin Spice Bread is the Franz brand and my mom picked it up for her and I to share. So I got half a loaf and she got the other half. I'm dying!

7. The only thing I'm missing is my Pumpkin Eggnog...which is apparently, high in cholesterol! I say, who cares! It only comes out once a year! Live a little!

8. It feels like Fall today :)

9. Last night I dreamed that I woke up in the morning to the kids not doing as their instructed in the morning and I went ballistic on them and the fire department showed up and my neighbors were staring at me. I woke up at 8am ( this was after I had put Christian back to bed this morning) and I heard Grace already in the shower and Eden singing in her room. I assumed Eden wasn't making her bed and getting dressed like she was supposed too, but Grace was in the shower and I was overjoyed! So I made a huge deal about how much I appreciated her listening and doing as I've been asking and just getting the day started without my prompting. Also, I've been a super, awesome-sweet mom today. I was determined not to be the scary mom version of me today.

10. I don't feel like going to the gym today. Is it okay if I just skip it?

Weekly Menu 9/16-9/22

The weather has finally gotten cooler. We've had thunder storms and some rain! YES! I'm all to ready to break out my fall recipes! Speaking of fall foods, have you tried the new Salted Caramel Mocha from Starbucks? I've had it twice now, once with all the fatty goodness and one non-fat version and guess what...I can't tell the difference, so I'll be drinking mine all skinny-like! Also, you've got to try the Butternut Squash and Sage Croissant. Josh brought it home for me the other day and it knocked my socks off. It is amazing!!!

Josh starts his new job today. Did I tell you guys that Josh is working in a different area of the bank? He is no longer a banking center manager. He'll be working for the treasury department within the bank. He's pretty stoked about the change and all the new things he will be learning. He's one of those guys that LOVES to learn. But next week, that learning is taking the form of training and he'll be heading to Washington for a week. Me, a single parent...for a week! I'm just gonna keep singing in my head, " I will survive!"

Tuesday's Tidings for September 10, 2013

1. Last Monday and Tuesday was so crazy that I never got around to posting Tuesday's Tidings. Sorry bout that!

2. I just cleaned up my garden. I pulled out some of the herbs we never used, the corn which died, and cut back the mint (which is always out of control) and pruned my tomato plants and it looks so much better. I did all this in the heat and I came in super hot and smelling like mint and tomato!


3. Josh and I finished reading 2 Samuel Saturday night and we started 1 Kings on Monday. What is your fave book in the Bible?

4. I went to another cooking class last Thursday! It was so much fun. I arrived a bit late as my car was freaking out and it was raining really hard so I was a bit flustered when I got there. I had totally intended on writing another post about the class, but I forgot to take my phone out and snap pics. I promise, next month will be different.

5. It's supposed to be in the 90's today, tomorrow, and Thursday. Please, put me out of my misery now. I just want to decorate my house in normal weather.

6. I have 22 emails in my inbox right now. 99% of them are my food subscription emails to different blogs I follow. How did I let my inbox get so backed up!!!???

7. I'm thinking about growing out my bangs. I chopped them off in July for a change, and now I'm getting tired of them. I love that they blow dry perfectly the first week and a half after a trim, and then they get longer, and then I have to play with them more. WHO'S HAS THE PATIENCE FOR THAT?? I'm growing them out. I can't take it anymore.

8. Can I just tell you how much I dislike working outside when it's hot out? I feel all itchy afterwards and I swear I have bugs crawling all over me now.

9. I have a $10 giftcard for Williams-Sonoma and I'm dying to go to their store with my hubby. I love walking through there. It always smells so good!

We had a glimpse into "fall" this past week and it was fabulous. I got to wear my jeans for a few days. A sweater, scarf, even my coat! I can't wait for some more autumn-like weather. However, this week...we're sky-rocketing back into the 90's and I'm dreading it. Ugh!


Since I'm already in the midst of planning next week's menu, I can promise it will be more festive since the weather is predicting a few showers. YAY!

Spiced Pumpkin Custard Pie

My girls spent the night at my in-love's house last night which is awesome for them, but not so awesome for me. I love when they get to go over there, but I think I've told you before that having three kids in the house is easier than one right? Well, when two of the kids are gone, that leaves little old me to play single parent during the day, and it is hard work.

So, I was also set to make this pie in the morning, right? Ya know, morning light is way better than late afternoon light...especially in Oregon...and ya know living in Oregon, we all know the clouds are right around the corner. Anyhoo, so it's just me and the little man. I finally got Mr. Christian down for a nap and I sit down for like five secs when my phone rings and it's my mom. We end up chatting for over an hour! AN HOUR, PEOPLE! I love my mom to death and I love talking to her and it was a good thing that I took the time for her, no regrets, but I was kind of bummed when I got the ingredients for the pie out a few minutes later and found that my little guy was awake! Oy!

But ya know what, alls well that ends well. I got Christian to stay happy and entertain himself long enough for me to get the pie in the oven and wash all the dishes.

Speaking of dishes, OHMYGOSH, am I the only one who seems to dirty every dish and bowl in the house when baking? I try to be prepared and have everything ready to go before hand, but ya know, I always find more things to dirty.

So, this pie...I know it's only the first week of September, but you guys, I just couldn't wait any longer. I am SO over summer! We're having annoying humid, hot, cloudy, sunny weather and it is ANNOYING! Like, I'm just done! This weather needs to just make up its dang mind and figure out whether it wants to be sunny or cloudy and just give me the appropriate corresponding temperatures to go along with it. Preferably something that allows me to wear a scarf and a cute long sleeve shirt. Ya know? I mean, really, is that to much to ask for?

Back to pie, it is everything this season is about! It is full of pumpkiny goodness, fall spices, and topped with sweet whipped cream! I'm not sure there is anything better that that! Oh wait, yes I do, weather that cooperates with my wardrobe of choice, haha!

Spiced Pumpkin Custard Pie

The fall season wouldn't be anything without a creamy pumpkin pie full of elegant spices!

Prep Time: 25 minutes
Bake Time 40-45 minutes, plus cooling
Total Time: 1 hour and 10 min.

Ingredients
¾ cup chopped pecans, toasted
1 cup plus 2 TB all purpose flour
½ teaspoon ginger
½ teaspoon salt
7 TB shortening
2 TB plus 1 teaspoon ice cold water

Filling:
2 eggs
¾ cup sugar
1 teaspoon ground cinnamon
¾ teaspoon ground allspice
½ teaspoon ground ginger
½ teaspoon salt
1 (15 oz can) pure pumpkin
1 (12 oz can) evaporated milk
Whipped Cream, optional

Directions

  1. Pre-heat oven to 350 degrees. Place pecans on a baking sheet and bake for 5-10 minutes, until toasted. Allow to cool. Place cooled pecans in a food processor; cover and process until finely ground. In a large bowl, combine the pecans, flour, ginger, and salt. Cut in shortening with a pastry cutter until the mixture resembles coarse crumbs. Slowly add water, tossing with a fork until the dough forms into a ball. Press dough onto a 9-in. pie plate, on the bottom and up the sides. 
  2. In a large bowl, beat the sugar, eggs, spices, and salt until smooth. Beat in pumpkin. Gradually beat in milk. Pour into crust. 
  3. Bake at 400 degrees for 40-45 minutes or until a knife comes out clean. Check the pie the last 15 minutes of its baking time. If the edges start to over brown, cover the edges with foil. Cool on a wire rack and garnish with whipped cream. Refrigerate leftovers.

Happy Labor Day!! I'm sorry for not getting this post up sooner. It's been a crazy weekend and we just got the grocery shopping done today and our plans for the week have changed a little bit, so I spent a good portion of the afternoon re-working the menu.


Originally our girls were going to go camping with my parents for the week, but the weather is looking questionable, so they are going to have a 2 day sleepover instead with maybe a fun outing on Friday as well.

We finally got a few back to school supplies this afternoon. We already have their homeschooling books, but we needed spiral notebooks, glue, and etc. and sheesh, our store was picked over. But we got the basics of what we need and we can fill in the gaps later once we've actually started school in October. Do your kids start school tomorrow or Wednesday?

This post for crockpot taco soup originally appeared on Catz in August of 2013. The recipe and the photos have been updated (and we still make it ALL the time). 
There are two kinds of people. The first kind, are the people that can't wait to let go of summer. They are ready to say," so long, short shorts and hot & sweaty days!" The second kind of group are the ones that cling to summer nights, tank tops, and warm weather. I do not fall into that second group at all! I'm all to happy and willing to welcome fall with open arms. I'm tired of having to shave my legs every other day, wear shorts and tanks, and kick the covers off of me at night because I get to hot. I'm ready to bundle up with a blanket in the evenings with a cup of tea. Pair scarves with cute shirts, and cover myself with sweaters and drapey cardigans. Also, I would like to sleep inside my bed sheets without the fan circulating above my head. (I have this fear that one day that fan is just going to spring right out of its socket and come flying down on me in the middle of the night and kill me.)

Tuesday's Tidings for August 27, 2013

1. A few weeks ago, I bought "The Hiding Place" because I've been hearing about this book for close to 11 years. Every night, I would read a few pages to a few chapters every night before bed. Last night, I stayed up after Josh and I kissed each other goodnight and read the last few chapters. It was just getting to hard to put it down. I was not disappointed. I've never read a story by a survivor of the holocaust who was as full of hope as Corrie is in this book. So beautifully written and so full of wisdom and God's hope and promises to us all. I think when Grace becomes old enough to handle a book like this that she will love it too!

What should I read next? I'm thinking Helen Keller's biography...

2. A few nights ago, Josh and I have started watching Downton Abbey again. I forgot how much I missed this show. I cannot wait until the next season starts up.


3. I took Eden shopping the other day for her birthday. We ended up going to The Children's Place and I wanted to dress Eden in all of the clothes. We finally decided on a few items and she looks so adorable in it. As soon as I take a picture, I'll show you all.

4. I ordered a shirt the other day and I was so excited to get it and I thought I ordered it in my size. Well, apparently, the medium I ordered was more like a large on me. I was swimming in it. It was so cute in the picture too and not exactly the fabric I was expecting either. So, I sent it back in the mail on Saturday. I'm looking forward to getting my money back. I found another shirt at H&M I'm drooling over.

5. Have you guys tried these new Greek Blended yogurts from Yoplait? They are so good! I've only tried the coconut and blueberry and was impressed with both. I'm looking forward to other flavors too. Have you guys tried these yet?

6. I am so ready to dress my house up for fall! The weather was awfully fall like here yesterday and I got to wear long sleeves all day. It was fabulous!

7. Have you guys been playing the app Lumosity? Josh's sister got Josh started on it and then he went and stuck it on my phone. I swear, 95% of the games make me feel stupider. Blah, and yet, I still continue to play it. I don't think I'm improving my brain...only making it more stupid!

8. I play Draw Something with Grace and it's a lot of fun. She is pretty clever at figuring out my pics. Sometimes I just write the questions out too. Is that cheating?

9. I need to get some blackberries. Grace keeps asking me if I will make a blackberry pie.

10. I didn't want the VMA's. After what I've heard, it doesn't sound like missed much. I'm sure my eyes are thanking me. :)

Weekly Menu 8/26-9/1

Can you believe the 1st of September is at the end of the week? Crazy right? My girls are going on one last camping trip after this week and I'm already missing them. A week without my girls means, extra quiet days, a cleaner house, and a messed up menu. Whatever will I do?

I had last week's menu already written up and decided by last Wednesday. How's that for organization?  The weather is supposed to be cooler this week, like in the 70's-HALLEUGHIA! (Hmm, I guess I spelled it right since my spell check isn't freaking out on me. ) I for one, am done with the hot days. Not like the heat bothers me so much anymore now that we have some a/c units downstairs and in our bedroom. Christian, however, his room gets really hot, and I spend from about 3-9pm trying to cool it down in time for him to go to bed. But you know what? He has never complained. Such a good boy.

I'm thinking that maybe next week, I should start breaking out all the pumpkin recipes I've got plans for! Who's ready?
