Weekly Menu 7/28-8/3

Last week didn't exactly go as planned for us. Both, Christian and Eden fell under the weather...though I'm not entirely sure what they had was a bug. I'm not exactly sure what it was at all. But we had to skip a few meals because we had itty bitties who didn't feel great. However, they are much better today. Eden is still a little emotional and tired, but other than that, things are looking up! Knock on wood that Josh, Grace, and I don't get it!


Now that August is basically upon us, when does school start for most of you? We won't start till October and I feel blessed to homeschool and basically choose which month we start and etc. It does make it all a bit easier.

Tuesday's Tidings for July 23, 2013

1. Is this not amazing? Josh has been taking these gorgeous pictures of the moon phases and I'm completely in love with them. He did an awesome job!


2. So we had mahi mahi last night! OMG! So good! What's your fave kind of fish?

3. Gracie and her best friend got stung by a couple of yellow jackets the other day. First time ever for Grace. I felt so bad. But hydrocortisone and toothpaste are awesome and now you would never know she got stung.

4. We got to visit with some of our friends, Jared and Karen...I've mentioned them before on here. We finally got to meet their adorable little son, Ethan. I'm totally going to steal him and keep him for myself!

5. So the Royals had a bouncing baby boy! I'm so happy for them! A child, no matter what the gender is such a blessing and I think Kate will be a very hands on mom, much like Diana. I pray that they just enjoy this time, because it is such a short time when they are so little.

6. Can you believe this guy is 7 months old? It just kills me! Josh has him standing and holding himself up on our couch and I keep telling him to knock it off, lol! I don't want him to grow up any faster than he needs too.

7. Just in case you missed our post on Saturday, Taste and Tell Blog, did a blogger spotlight on Catz! I would love it if you you hop over and let me know what ya think, and while you're there, check out Deborah's blog. It is such a fantastic one with some pretty delicious recipes.

8. We watched 42 the other night. Have you seen it? I'm not a big sports fan at all. But I do like baseball. This movie was well done! The actors were great, but you know the thing I took away from it...why don't woman dress like they did then? I loved the style. So classy!

9. Is this backyard ice cream party not the coolest thing you've ever seen? I want to go out and have me one of these parties, like yesterday!

10. Am I the only one who dislikes people trying to sell you stuff at your front door? Josh just got me a No Soliciting sign! Why I didn't get one sooner is beyond me! Ha, take that you people trying to sell me stuff I don't need!

Happy last full week of July! Can you believe that this is the las FULL week? August starts next week and I would be in shock if it weren't for all the back to school advertisements I'm seeing everywhere.

I had to share this picture Josh snapped of this dragonfly type bug that hangs out in our backyard. Very cool, but his eyes are wayyyy freaky!


This is like our first normal menu for July. We did a real life grocery shopping trip yesterday and shopped for everything. It felt so good to walk out of the store with a full cart. I cannot wait to get back to doing cooking in my kitchen this week too. Last week didn't go as planned. Grace got some sort of stomach thing and I had to put her on the brat diet for 24 hours. Thankfully, by Thursday, she was back to her old self again. How was your week last week? Did you do anything fun?

I've been going to Hospitality and Cooking Classes

Over the last month an a half, I've been attending a Cooking Class that focuses on hospitality and cooking. Normally, I don't do things like this. I rarely venture out on my own and do something just for me...unless you count getting my hair done every 2 ½ months. Normally, I'm just to shy or nervous. But I met Lisa through her blog- Simply...This, that, and the other a few years ago, and then we got to meet in person too,  not long after that. Lisa has been hosting these classes for sometime now and I finally took the plunge and went to one. At the first class we focused on breads. We made Artisan bread, cinnamon rolls, pizza dough (which I already make, but like seeing what other people do), and dinner rolls. I had so much fun the first time that I could not wait for her to host another one.

I went to another class last Thursday and this time I took Grace with me. I thought it would be a fun experience for her and I to do together and also what a great thing for her to begin learning. She wants to go to culinary school, so I thought this sounded perfect for us. Last week's class focused on Summer Breakfasts and Hospitality. We made scones (which believe it or not, I had never made before), quiche (which Josh always makes, but Grace was thrilled to be a part of) , freezer jam, and eggs in a basket!

She learned how to grate cheese (which she calls grading cheese), she mashed the berries for the jam, measured out ingredients, and took a lot of notes. She even got started on her own recipe binder!

What I really enjoy about the class is not only that it's about cooking and I'm picking up all sorts of new information, but that for us as woman, it focuses on how, we can help use these talents of cooking and serving others. It doesn't just have to be in our own home. We can bake up a batch of scones and jam and deliver it to someone who's been under the weather and needs some encouragement, or dropping it by someone's house just because you thought they might like it.

I think cooking has such a unique way of bringing people together, encouraging others, supporting people, and fostering closeness and togetherness. Isn't that why we all come together as a family at the end of the day and eat dinner and share our stories? I think for Grace, this is so important for her to begin learning. She's growing into a beautiful lady, and I want her focus to be on other people and how she can help them.

The classes are on break now for the summer, which is a bummer...but I totally understand. Even though I wish there was another one right around the corner. Lisa said she will pick them up again in the fall and I'm really looking forward to it. Grace may not be able to come to all of them if they continue to be on Thursdays because she has Awana that night, but I'm going to try and go to as many as I can. 
I wish everyone had an opportunity like this. It is so neat, and if you have a kid old enough, what a fun thing to do together.

This recipe originally appeared on Catz in July 2013. Since then, we've made some updates to the recipe, and, of course, updated the photos! It continues to be one of our all-time family grilled favorites - we hope you love it as much as we do! 

Truth be told, this was probably one of the first things I ever grilled beyond the standard hotdogs and hamburgers fare. Chels found the recipe online or on the back of a box or something (I'm pretty sure it was a kraft recipe originally - a way to use a new dressing they were promoting), and we made it over and over and over again, making small changes and adjustments here and there. The biggest change was simply to dramatically increase the amount of the "bruschetta" style topping the recipe calls for - trust us, with this topping, more is better!

Tuesday's Tidings for July 16, 2013

1. We went berry picking early Sunday evening. Christian had such a blast-he kept trying to eat the raspberries out of Josh's hand.

2. My freezer is stocked with raspberries and marionberries. But I need more. I have a problem. I need to go to berry hoarders anonymous club. Do they have those kinds of clubs?


3. My hanging flower baskets are infested with a bud worm. I'm not to thrilled about this. So now I need to go buy some sort of spray. Blah!

4. Did you hear? The Pioneer Woman's new cookbook comes out in Fall and it's all holiday dishes! SWOON- I cannot wait!

5. Josh has started taking pictures of the moon over the past few nights. This was last night's moon. Isn't she pretty?

6. Last Thursday, I took Grace to a cooking class hosted by one of my friends I met through blogging. She is the sweetest lady and Grace had such a blast!

7. Last night was the first night since Thursday that Christian has gone down to sleep without a fuss and in his own bed. He's been teething these last few days and fighting sleep and only sleeping in his swing.

8. I'm craving cake. What kind of cake do you think I should make?

9. What are your thoughts on printed pants? I know they are all the rage right now, but I can't understand why? It is a trend I'm looking forward to leaving. I just don't think it's flattering on any figure type.

10. It is supposed to be in the 90's today. Please help me!

What a busy last few weeks! I'm still trying to catch my breath! This week is slowly settling down. However, we're still pretty busy. My girls are going to spend a few days with my parents and then later this weekend, some of our dear friends and their little baby will be here to visit. I'm so excited!!


Unfortunately, our menu has not made a come back completely, but we have planned out a few meals. And I don't know about you guys, but I'm so happy to be back in the kitchen doing some cooking.

Homemade Thin and Crispy Pizza Dough with Step by Step Pictures

One of the things my family loves eating for dinner is pizza. We used to buy the frozen pizzas from the grocery store, but they all taste like cardboard (however Totinos still carry a soft spot for me).  I've always loved the idea of making our own pizzas, and that means making the dough too. This pizza dough is so easy to throw together. I like to make a batch every week and freeze it. One batch makes two pounds of dough which means it makes two pizzas! So I've always got pizza dough in my freezer and on the nights we make pizza for dinner, I let it thaw out in the fridge and then about a half an hour before we start making the pizza, I let it come to room temperature on the kitchen counter. Doesn't that sound like a piece of cake?

I've put together a series of step-by step photos to help ease you into this because I know a lot of people are intimidated by using yeast. I know I was when I first started, but once I got comfortable with it, it's no big deal.

To make the yeast mixture, take one cup of warm water, (warm like bath water) 1 teaspoon of honey, and 1 pkg (2 ¼ tsp) of pizza crust yeast. Combine it all in a bowl and let it sit for a few minutes until the yeast forms bubbles and gets a little foamy looking.

While the yeast is forming, combine your dry ingredients in your Kitchenaid mixing bowl or a large bowl. You'll need 3 cups of flour, 2 teaspoon sugar, 1 teaspoon sea salt, 1 teaspoon Italian seasoning, and 1 teaspoon of ground cinnamon. I always add cinnamon no matter what. I think it adds a really special flavor to the dough. But you can change the seasonings. Sometimes, I'll add fennel seed to the dry ingredients as well. It's just a matter of preference. If you're using a Kitchenaid mixer, you'll want to add the dough hook attachment. If not, you can always go old school and mix everything by hand.

By the time you've mixed all of your dry ingredients together, your yeast should be done. It will look something like this. Sometimes I have more bubbles and sometimes I don't.

Pour the yeast into the mixing bowl with 2 tablespoons of extra-virgin olive oil. Lock and load your mixer, and mix on low speed for a few minutes.

One it starts to come together, speed it up a bit and let it knead the dough until it all comes together into one smooth ball.

Remove the dough from the dough hook and on a very lightly floured surface, knead the dough by hand for like a minute or two. I think this step is more for me because I like to feel the texture of the dough and kind of play with it.

Grease a large bowl with non-stick cooking spray and roll the dough around the bowl until the dough is lightly coated.

Cover the bowl with plastic wrap and throw the bowl into a preheated oven at 200 degrees. Turn the oven off and set a timer for 30-60 minutes. Let the dough rise until doubled in size. I usually let it sit in the oven for an hour or longer because I'm always doing a million things and I forget about it, but it will be done in 30 minutes too.

This is what my dough look liked when it doubled in size. Nice and Fluffy looking.

Take a fist and punch the dough down.

Gather the dough in the bowl and divide it into two sections and form it into a ball. If you're planning on using one ball of dough the night of, just set it aside in a bowl or place it in a bowl and stick it in the fridge till you are ready. But if not, go ahead and throw the balls of dough into two large freezer ziploc bags.

That's all there is to it! It is so easy and this dough is really tasty. You can use this dough for pizza pockets, stromboli, calzones, and it works beautifully on the grill. You can't go wrong with this recipe!

Homemade Thin & Crispy Pizza Dough
An easy, flavorful pizza dough that has endless possibilities!

Makes: 2 lbs of pizza dough

Prep Time: 15 minutes
Rise Time: 30-60 minutes
Total time 45-85 minutes

Ingredients
1 pkg (2 ¼ tsp) pizza crust yeast
1 teaspoon honey
1 cup warm water
3 cups all-purpose flour (you can use whole wheat flour too)
1 teaspoon sea salt
1 teaspoon ground cinnamon
1 teaspoon Italian seasoning
2 teaspoon sugar
2 TB extra-virgin olive oil
(Optional seasonings: Fennel, Oregano, etc)

Directions

  1. Pre-heat oven to 200 degrees. In a small bowl, mix together yeast, honey, and warm water. Let sit for a few minutes until yeast is foamy and bubbly.
  2. Using a mixer with a dough hook (or by hand with a wooden spoon) mix flour, salt, sugar, cinnamon, and Italian seasoning together. Pour in yeast mixture and extra-virgin olive oil, mix on a low speed for a few minutes or until the dough begins to come together. Increase the speed until the dough forms a smooth ball.
  3. Remove dough from hook and gently knead for a few minutes on a lightly floured surface. Spray a large bowl with non-stick cooking spray and place the dough in the bowl, turning to coat. Cover with plastic wrap until dough has doubled in size, about 30-60 minutes.
  4. Dough is ready when it stretches when pulled. Divide the dough into two halves. Form into two balls and place in large freezer ziploc bags.
  5. If using dough right away, prepare pizza dough as the directions to your pizza recipe instruct.
  6. *To thaw pizza dough, simply throw the ziploc bag into the fridge until completely thawed. 30 minutes before preparation, allow the dough to sit on the kitchen counter (in the bag) and come to room temperature.

This post is originally from July 2013. The recipe has been reformatted and rephotographed, but it's still as easy and wonderful as ever! The first paragraph, about Josh eating at Taco Bell, is a little humorous now as he's not much of a fast food fan anymore, but the general concept holds true - these potatoes are delicious! Thanks again to Kimi Harris for this easy recipe that has become a family favorite. 

I feel like a total oaf for not making these sooner! One of Josh's favorite things to order from Taco Bell are the Crispy Potato Soft Tacos. For the price, they are pretty good. Josh really enjoys them because he likes the flavor of the potatoes in the soft tortilla. Why I haven't diced up potatoes for him in the past is beyond me. It took us going up to Washington for my sister-in-love to make these for us to see what we had been missing out on. Funny enough, Jenn (my sister) said she found the recipe from Grace's guitar teacher's wife's blog. Small world, huh?! Our family has adopted it, and now we make it all the time!
