Guys, I'm sorry. I know that you all really like the weekly menus, but I have been so so off my game it's not even funny. 

Josh and I are going to sit down and brainstorm a way for me to have more time to write and for us to recipe test. I mean, we've been doing a lot of cooking - I've got three really, really good chicken dinners headed your way - but I'm having a hard time finding the time to write the posts. Of course, I was also sick for an entire month and traveling before that. But still...some adjustments need to be made.

In the meantime, here is this week's menu and let me be honest here - this week, I'm literally just giving you dinner ideas for your week because when it comes down to it, I'm really not doing any cooking this week. The week somehow just ended up like that, but we're also winding down to the end of the school year. Adding to that, May is our busiest month of the whole year! I know I'm not the only one, so I'm going to focus on trying to slow down, calm down, and enjoy it while I can.

This will probably sound crazy, but we've really struggled with sliders. Not struggled to love them, of course - we LOVE sliders. A little oddly, our local French restaurant makes some of the best I've ever had, and someday, somehow, I'll reverse engineer those bad boys for home cooking. But THAT is exactly what we've struggled with! I always seem to have one of two major problems with sliders. Either the burger patty is totally dry and tasteless, or the slider is so tall and precarious it's both ridiculous looking and virtually impossible to eat. Or it's totally dry and tasteless and tall and precarious and ridiculous looking and virtually impossible to eat...all at the same time. WHY.

Chocolate Covered Blueberry Protein Smoothie

I've said this before, but we love smoothies. As a family, we make them at least once a week (typically the aptly named Sunday Morning Smoothie), and often more than that. I make one when I need a boost after a workout, we make them when we're needing a little Vitamin C boost, and almost always to accompany pancakes, waffles, or just about any other brunch. Basically, any excuse to make a smoothie, we're there. 

Problem is...sometimes we forget to replenish our supply of frozen fruit. Bananas going bad? We flash freeze them. Costco run? Grab a couple of pineapples for chopping and freezing. You get the picture. But, yeah, sometimes we miss that one is running low. 'Twas the case a couple of weeks ago when I went downstairs to whip up a tasty, greens-forward citrus-based smoothie for Chels after she was done working out. I quickly discovered a problem. There was no pineapple. No mangoes. Just bananas, and while Chels tolerates bananas, there was no way she was going to enjoy a basically banana-based beverage. Saturday morning, Grace came back down with it after feeling normal on Thursday and Friday! We've all got coughs, congestion, and stuffed ears and we're not all too happy about it. The good news (at the moment) is Josh still holding out. He's a little congested, but he definitely hasn't been hit like the rest of us, which I think is a good thing because he is the bread winner of the family, after all...

The (other) good news is that I didn't really cook dinner at all last week. The reason that's good news is it means I still have a week's worth of groceries in this house to cook from, which is good. But for all of you guys, I don't think you want a repeat dinner menu, so I'll come up with new dinner ideas for all of you. [Read more...]

This post originally appeared on Catz in March of 2013. Since then, it's been re-made, re-photographed, and the recipe has been updated. It remains a wildly delicious cake, a nice elevation of a traditional carrot cake, and a wonderful Easter dessert. 

I have a problem with raisins. Like a BIG PROBLEM! I HATE raisins. I don't see what is so appetizing about dried up little grapes. My kids looove raisins. I think there must be something wrong with my kids. They certainly didn't inherit the raisin-despising gene from me, so they must have inherited the raisin-loving gene from my husband! Shame on him!

Which brings me to the point of this post (aside from the fact that it is an Easter post) - I've had really bad luck with carrot cakes. Every single one that's ever been placed in front of my face has been full of raisins. I just don't understand what is wrong with people that they would want to ruin a perfectly good cake. Those people must have also inherited raisin-loving genes! It's just so wrong. I feel sorry for those people. (Editor's Note: Wow, babe.)

I'm just going to put it out there and say that I have no pranks or jokes for ya. I'm not really a jokester anyways, so this probably isn't a surprise to anyone who knows me. 

Remember how in last week's menu I said that Christian was sick and it never fails, we get sick every spring break? We're holding fast and true to that record. Starting with Christian, this bug has just gone through every one of us. I got hit with it on Sunday. Woke up and just felt off and progressively got worse as the day went on. So far, Josh is the lone survivor. Will he make it without through the week without getting this crud? I certainly hope so. 

Aside from being sick, last week was just not a very productive one. I guess some weeks are like that, but I'm hoping that maybe aside from today (I plan on resting today), this week I'll get a few more things done for the blog. I did do a few things last week and if you watched my stories, you might have an idea about what it is I made.

Which is probably good because Christian came down with a cough this morning and by this evening he was just not himself, poor guy. 

It never fails. Somehow, someway, one of us always ends up getting sick over spring break. I don't know how this happens, but it does, so I almost always purposefully leave this week free for this reason. However, Grace who is feeling fine may have plans to get together with some of her friends, so I'm grateful she has a life, at least!

Here's a question for ya. Why do babies and toddlers fight sleep. I mean why? I'm tired. Aren't they?? I was just telling Josh yesterday that if I could go back and take back all of the naps I missed as a toddler, I would gladly take them now, because I am tired.

In other news, I've done a lot of recipe testing over the last few weeks. Which means a lot of testing and not photographing because I want to get it just right for you. So if there are a few slow weeks here, that's why. Trying to keep up with the kids, home life, school, family, and of course the blog (which I love)...just being real here guys, not enough hours in the day. 

Bur for this week, here's the menu. It's fairly simple and straightforward, but I don't think you guys mind. I know Easter is a month away, so here are some ideas from our Easter Pinterest board. It still feels a little early to be moving onto the next holiday, but, I know that there are a few planners out there right?

Well, this post has been a long time coming. We completed our wood deck covering for the front of the house back in the spring of 2017, and published that post at the same time I actually started this project, which was a much larger undertaking! Shockingly to me, that post about turning a cement porch into a wood deck has become one of the most popular posts here at Catz, and I've had a number of people ask for this post about the back deck. My plan was to publish it last summer, but it ended up being a surprisingly busy season for us, so here I am shooting for this spring!

If you read the post about the front porch, then you already understand the overarching reasons why we were considering creating a wood deck in the back as well. Not only is the concrete slab not warm or welcoming, it's also uncomfortable for bare feet and challenging to create a real outdoor living space out of. Unlike the front porch, though, which was already covered, the back patio was not - just a big 'ole concrete slab. As we started thinking about patio coverings, though, Chels and I realized we had two big concerns. First, what about our light? The back wall of our house has very large windows, and a huge percentage of the downstairs gets its natural light from them. A traditional metal or shingled back patio roof would dramatically reduce the amount of natural light getting through. Second, how to avoid the outdoor space seeming a little claustrophobic? The roof would obviously have to be slanted for rain runoff, and a ceiling of seven or eight feet could quickly feel suffocating.

An idea began to develop, and after sketching it out and doing some research, we decided it was plausible - a peaked, 12-foot, clear roof to cover the new deck. It was certainly going to be a little more complicated than a straight, slanted roof, but we thought the potential benefits were worth it. At 12 feet, it would be high enough in the center to feel open and airy, while the clear roofing would let lots of light through during the many, many gray days here in the Pacific Northwest. We flew into Dallas last week and then drove to Jackson, Mississippi for Josh's grandfather's funeral (via the entire state of Louisiana, much to my children's amazement), and then drove back to Dallas, resting for a couple of days before flying home. We found out that our "recoup and regroup" time in Dallas happened to coincide with Spring at the Silos, so we made a quick run down to Waco one afternoon as well. We're thinking about writing up a blog post on that sometime soon (you can, of course, read our previous blog post about visiting the Magnolia Silos).

As much as Josh's grandfather's service was an incredible celebration of the life of a godly, inspirational man, it was still a tough, emotional trip, and it does feel good to be home. After a week of eating out for every meal and being off our routines, it will be good to jump back into it all and cook food at home again. [Read more...]

Homemade Fettuccine Alfredo

Okay, it's not healthy, but every once in awhile you really just need butter, cream, garlic, pasta, and cheese...you need homemade fettuccine alfredo.

Okay, it's not healthy, but every once in awhile you really just need butter, cream, garlic, pasta, and cheese...you need homemade fettuccine alfredo. I don't recall eating a lot of pasta as a kid in our house. Of course we had spaghetti once and awhile and my mom's baked macaroni and cheese, or even tuna casserole. But I loved it when she would make fettuccine alfredo. She never made her spaghetti sauce or alfredo sauce from scratch. I think for her, as it often is for me, it was just easier to buy it already made from the store. I'm not going to fault her for it. I get it, and frequently do the same! There is almost always some good quality jarred spaghetti sauce in my pantry. Sometimes, going that extra step at dinnertime just feels like too much for the day you're in. 

 I'm just here to tell you that making Alfredo Sauce from beginning to end is not hard, difficult, or even that time consuming. It is actually really easy. Is it as easy as opening a jar, pouring the contents into a saucepan and heating it up? Well, no. But it is almost as easy as that.
