Weekly Menu for the Week of June 1

Hey friends! We’re back from a week of out of town. Vacation for most of us, except Josh, who still had to work, but we all had a relaxing time in Central Oregon. We went on a lot of bike rides, read outside in the sun (it got hot outside!), grilled, saw some friends, and played games. I think we all feel a little more relaxed and ready to take on a fairly normal schedule again.

We did eat out a few times, but I thought I would share a few recipes we did make while we were gone. The night we had some friends over, we made our Teriyaki Pineapple Burgers – which are so good! And then we tried a new recipe, these Hawaiian Hot Dogs from The Endless Meal. They were delicious and so easy! We did leave off the red onion and jalapeño for the kiddos, though.

I’m going to be totally honest with you…we are not going grocery shopping until Friday! We did some grocery shopping while we were away, and now that we’re home, I’m fairly confident that I can pull together enough lunches and dinners so that we don’t need to go shopping again. We will need a few things like orange juice and bananas. And I don’t have a lot of produce because…it would have gone to waste while we were away. But I love getting creative with what I have on hand, and I’m keeping it fairly simple here. But, the menu I share with you today won’t reflect exactly what I’m making here at the house. For example, I have some bone-in chicken thighs and legs in my freezer, so I’ll share my oven bbq chicken, but we’re going to grill bbq chicken instead because I have bbq sauce in my fridge that I need to use up.

That kind of thing. Ultimately, whether coming home from vacation or coming of a regular week for you, utilize items you already have and plan dinner from there so nothing is going to waste and you’re not bringing more items to an already full fridge.

This week, I thought I would share my Asian Eats Pinterest Board. It’s a fairly new board, but it’s growing in pins and there are so many delicious flavors and textures with Asian food – and honestly, I’m kind of craving it. Challenge yourself and find one thing from that board to add to your own menu.
