I hope you’re having a wonderful Monday and that you had a great weekend! We’ve been busy getting ready for our trip! We leave this week! Eeek! I’m still writing a weekly menu, though, because we all have to eat, right? My menu this week is going to be heavily influenced by easy, but while my own personal menu will reflect easy, it won’t be exactly what I’m sharing today (but there is a fun little something in there for Earth Day).
