Tuesday's Tidings for August 19, 2014

1. The fair came to town last week and we always go on a kids get in free night. This year, I managed to snag some pretty good coupons for ride tickets at a really good deal. Both Grace and Eden got to go on 6 rides which is kind of unusual for us. Usually we stick to around 2-3 rides per kid because it is so expensive. Of course, I like going to the fair purely for the food. Haha!

2. Have you seen this trailer that's floating around that is like if "Michael Bay directed the movie UP?" It's pretty funny. Reminds me of all the trailers they did for "Frozen."


3. My sister in love, Jenn sent me an email a few weeks ago inviting me to try out thredUP. Have you guys heard of it? In short-it's like an online Goodwill, but for nice brand name clothing. (YOU ALL KNOW HOW MUCH I LOVE GOODWILL!) I explored the site every few days just trying to get a feel for it if was something I would actually use. I grouped all of my favorite brands together so I could see what's out there and you know what? It's a really neat site.  I bought my first purchase today- 2 shirts from The Loft and one Lauren Conrad shirt that I had seen at Kohls earlier this spring. But also, I requested a bag that I could fill up with a bunch of clothes and shoes from my closet that I don't wear anymore-which just came last night and I've already got the bag pretty full. They will basically buy the clothes from me and I can use the money to purchase more clothes or from what I understand-take a pay out and get a check in the mail. Pretty Cool right??  It is another referral based site-so if you take my invite-not only will you get $10 to shop with, but so will I. So it's really cool.

4. I tried to read the book "Wild" and I got about a chapter in when I returned it to the library. I cannot handle a lot of language in books or talking about God in such a shameful way. Which is sad, because I really wanted to read the book. The story sounded interesting. Josh got me the Night trilogy for my b-day so I'm going to read that instead for now.

5. It looks like I'll be having a very minor day surgery in October for a blocked sinus cavity and wisdom tooth removal, so I'm on the hunt for some good books because my doctor told me the recovery could be about a week long. So give some ideas of some nice clean books to read.

6. Eden turned SIX on Friday. She had a really fun birthday party on Saturday and today we're going to take her to Oaks Park-our local amusement park and then out to dinner. I don't know who's more excited. Me or her.

7. This Saturday-we're redoing our daughter's room in a Parisian theme. I'm so excited-it's going to look great!

8. I'm thinking I ned to make these Salted Caramel Peanut Butter Cups for Josh soon.

9. While he's eating those Peanut Butter Cups, I'll eat this Browned Butter Skillet Blondie! :)

10. This upper 80, 90 degree weather-it's gotta stop. I can't take it anymore.

Weekly Menu 8/18-8/24

This past weekend...I'm surprised I'm still standing it was so busy. A full weekend of birthday excitement. Eden turned 6 yrs old on Friday and she spent the day eating her favorite lunch, going to out to ice cream with her b-day twin, her Boppy (my mother in love), picking books out at the library, eating pizza for dinner, and settling down with Rio 2 with the family with a huge bowl of popcorn. Saturday morning, Josh whisked her away to a birthday breakfast, just the two of them and then home to get ready for her birthday party/bbq/sleepover. Sunday, we had church and after church, I went through all of our homeschooling supplies to make a new list of what we needed and was able to get everything at the store before heading out to Josh's parents house to celebrate his mom's birthday.

It was quite the weekend. I happen to love birthdays. Lot's of laughter. Lot's of cake. Lot's of celebrating another year of a person's life. What could be better than that?

Eden's festivities are ending quite yet though. Instead of getting Eden a bunch of gifts, we got her a few small things (puzzle, infinity scarf, and a My Little Pony Build a Bear Costume)-her big gift from us is an afternoon at Oaks Park (our local amusement park) and have dinner out afterwards and she is thrilled about it. :) Me too-I love rides!


Since we are running low on a lot of pantry staples, because we haven't made it to Cosco in the last few weeks, this week's meals are made up of what's on hand and in the freezer. :)

Catz on the Move: River's Edge Hotel & Spa (Portland, OR)

Chels and I have toyed around with the idea of putting up occasional posts under the heading "Catz on the Move" (inside joke of sorts) to do little reviews of restaurants, hotels, and family activities. Realistically, we don't travel that much, so the hotel reviews would be pretty few and far between (we'd like to change that!), but we could probably field an opinion on the occasional restaurant, etc.

Well, very recently, we had the opportunity to get away overnight to celebrate our eleventh wedding anniversary. It was the first time we'd gone away from the kids overnight in seven years (Hey, we're not complaining - we like our kids! Also, they had gone away from us - we just hadn't gone away from them...), so I wanted it to be special, even if it was just here in Portland (we live in a suburb about 10 miles southeast of the city). Unfortunately, the weekend our anniversary fell on happened to be a very popular weekend in downtown Portland, and I was seeing hotel room prices above $500/night for a decent room. A small room sans balcony, jacuzzi tub, etc, could be had for around $300, and I was about ready to just do that when I came across a little hotel about two miles south of downtown called the River's Edge Hotel & Spa.

The hotel is situated in an area I know well. Previously a largely commercial space, Portland's South Waterfront has recently begun to be built up with high-rise condos, a few restaurants, and a streetcar, among other things. At the moment, though, it's still a bit of an uncomfortable mix of commercial office space and leisure / living establishments. That being said, it's a very pleasant area - far enough out of downtown to be quiet and easier to get around in, but not so far that it takes more than five minutes to be in the heart of the city. In fact, a popular biking / jogging path connects the South Waterfront to downtown, which is not a bad way to make the trek during the summer months. Most of all, though, it's still right on the river, as the name implies.

As it happens, the River's Edge was previously called the Avalon. I'm not sure what prompted the name change and the remodel, but it's a beautiful facility now. The exterior is trendy but unassuming, exuding relaxation. The lobby and public areas are much the same way - modern, but not cold; upscale, but not ostentatious or pretentious. The key piece for me, as you might have guessed, was discovering that being two miles out of downtown meant my money went a lot further. While I believe the standard room price is around $160-180/night, I saw specials frequently in the $130 range. There are about seven or eight different types of rooms (suites, river view, hillside view, etc), but after seeing the prices downtown, I decided to go all out and grab the "Deluxe Riverside Suite," on the top (fifth) floor. Getting what was for all intents and purposes this hotel's "penthouse suite" for the price of a standard room downtown made my day, and was just the sort of special flair I was looking for for this night out.

AMENITIES: The hotel features a enormous spa in the front of the building, and I'm sure it's very nice, but it's clothing optional and gender-segregated, so not exactly what we were looking for on our anniversary evening. It does have free coffee essentially all the time, which was great for me! The only parking available is valet, which normally runs $25/night. Because we booked through Orbitz, the parking was complimentary, and we also received 20% off at the adjoining restaurant, "Aquariva" (which I may write about later...). Our room was huge, over 1000 square feet, with a kitchen, wet bar, dining room, living room, floor-to-ceiling windows overlooking the river and restaurant, a gas fireplace (not useful in August, but would be nice most other times of the year), an incredibly comfortable king size bed, two flatscreen LED TVs, a full bathroom with a separate shower and jacuzzi tub, and an additional "powder room" half-bath. The bedroom had it's own balcony overlooking the river, and the rest of the suite had a separate wrap-around balcony with a table and chairs overlooking the river and the restaurant. The WiFi was free, though a faster speed was available for an additional fee. Bikes were available at no charge on a first-come first-serve basis (which is a very Portland thing to do). Oh, icing on the cake for iPhone owners - the in-room stereo / alarm clock features a Lightning dock. Between that and the free WiFi, we were never without music to fit the mood. Sitting on a balcony overlooking the Willamette River while soft jazz plays in the next room is...very nice.

PROS: For the money, this suite was an incredible value. While I paid a bit more, I have seen it advertised at other times for as little as $265/night. At a hotel in downtown Portland, let alone Seattle or San Francisco, you would pay $800+ for a room like this, easily. The staff was very attentive and helpful, honoring my request for a top floor room, early checkin, and even spreading rose petals around the suite for a few extra dollars. The valets were all quick and professional. The hotel is quiet, and the atmosphere is relaxing. We trekked into downtown Portland later in the evening, but it was actually very nice to be able to retreat back to the peace and quiet of the South Waterfront afterwards. While initially I was disappointed not to be downtown, that "downside" ended up being a plus.

CONS: Not many! One mirror in the master bathroom looked like it had been recently manhandled by a previous patron, and was precariously attached to the wall. The air conditioning was pretty loud in the bedroom when it came on, but it was hot outside, so we really didn't mind too much. Other than that, the room was clean, beautifully furnished, and incredibly comfortable, the staff was attentive and professional, and the price was right. What's to complain about?

I would strongly recommend this hotel to locals looking for a relaxing weekend or romantic evening, or even to anyone visiting who doesn't mind a quick trek up to the city. Take the streetcar or ride a bike. When in Portland... And if you don't feel the need to book the big suite, save a few bucks for dinner and get one of the smaller king suites on the river. They looked just as nice. We had a perfect anniversary evening away together, and I think it's safe to say we'll be back!

Here in the Pacific Northwest it's blackberry season and blackberries are abundant everywhere right not. We even have a ton in our yard that my kids enjoy picking and tossing into fruit salads.

Oven Baked Turkey Tacos

Let's get one thing straight. I am not into sports. While I enjoy running, I'm not a fast runner. While I enjoy badminton, I dislike tennis (except for the cute outfits). When I think of the world's most boring sport, golf comes to mind.

BUT I LOVE MINI GOLF SOMETHING FIERCE.

Did I mention that I'm completely awful at it?

I've been dropping hints to Josh left and right about my "NEED" to go play mini golf on a date with him. I think it is the coolest thing since sliced bread. Josh, I'm sure doesn't think it's the coolest thing since sliced bread, but he thinks I'm pretty much cooler than sliced bread, so he planned a surprise outing for us the day after our anniversary to play mini golf.

AND HE WON!

And I swung my ball into all the little streams the outlined the 18 courses we played through. It's all good. I swung with gusto! We had a fantastic time. We laughed all afternoon and we get to do it all over again this weekend for my Mother in Love's birthday.

These baked tacos are also fantastic and easy and addicting. I found a pin for these on Pinterest because I thought the method was cool, and then I got a comment from my step-mom reminding me that this was how she used to make our tacos when I was little. Then I remembered her cooking them this way! I've always said that my step-mom's tacos were the best in the world. Now, my tacos are the best in the world, haha! Josh liked these so much he asked me to make them the following week, and I did, because of how simple they are to throw together - and we liked that we could serve the tacos right from the table!

Oven Baked Turkey Tacos

Oven Baked Turkey Tacos

Yield: 10-12
Prep Time: 20 minutes
Cook Time: 10 minutes
Total Time: 30 minutes

Saucy taco meat, gooey melted cheese, and crisp taco shells make taco night a snap when you bake it all together and serve it at the dinner table.

Ingredients

  • 1 lb ground turkey
  • 1 packet taco seasoning
  • ¼ cup La Victoria sauce (we like mild)
  • 1 box taco shells
  • 1 cup shredded Mexican cheese blend
  • 2 cups shredded iceberg lettuce
  • 2 large hot house tomatoes, diced
  • 1 (15 oz can) black olives, sliced
  • Sour Cream for topping
  • Hot Sauce for topping

Instructions

  1. In a large skillet, brown the ground turkey meat. Once browned, follow taco seasoning packet preparation directions and add La Victoria sauce, simmering for 10-15 minutes. Remove from heat.
  2. Pre-heat oven to specified baking temperature for the taco shells (generally around 325 degrees). In a baking dish, line the taco shells up in rows. Spoon the taco meat evenly into all the taco shells and top with shredded cheese. Bake for 10 minutes-just long enough to melt the cheese and warm the shells up.
  3. Top each taco shell with shredded lettuce, tomatoes, and olives. Serve with sour cream and hot sauce.

Tuesday's Tidings for August 12, 2014

1. Josh and I went kayaking for the first time on Saturday. It was a perfectly gorgeous day (as you can see from the pic). The temps weren't to hot because we went in the morning and it was so much fun to spend the morning doing something neither of us were real familiar with, but that was also active. If you live in the Portland, OR area, I highly recommend Alder Creek and have Chris or Patty take you on a guided tour. They are awesome!!

2. Beware... if you haven't seen the finale of The Next Food Network Star, then go no further. ***Spoiler Alert***


So I totally knew that Nicole wouldn't win. Josh thought Luca would win and I thought Lenny would win. Either one, equally deserved the opportunity and I loved them both for their very endearing personalities. I felt like I got to know the two of them the best. Aside from Sarah. Oh, Sarah. Poor Sarah's husband. Poor Bobby Flay.  Hahaha!

3. Very sad news about Robin Williams. He was so talented. Mrs. Doubtfire, Patch Adams, Hook, Aladdin, DEAD POET'S SOCIETY, Jumanji-just to name some of my favorites. I grew up on his laughter. It's so very sad.

4. Anyone watching Cutthroat Kitchen? We're kind of obsessed. Beat Bobby Flay anyone?? Awesome entertainment.

5. Today was 102 degrees. Have Mercy! That is too hot!

6. Dinner with a view. I love a good view.

7. These bars. Swoon!

8. I do believe now that I've slept in a king size bed, that I must have one.

9. I kind of want to do this.

10. I just started watching 19 Kids and Counting on Netflix-kind of addicted. The Duggars are such a sweet family. Aside from their conservativeness-(which I find nothing wrong with) there is nothing not to like about them. They have raised a wonderful family.

Weekly Menu 8/11-8/17

Happy Monday! Josh and I are back from spending some time in Portland for our 11th anniversary. We went kayaking, ate a lot of good food, and relaxed. I've got a couple of posts I'll share with you soon about the hotel we stayed in and the food we ate, but today is about the menu.

Eden's 6th birthday is on Friday and we're having one over on Saturday for a birthday bbq and then Sunday is my mother-in-love's birthday party (she and Eden have the same birthday) and we'll be having dinner with them. Tuesday, the fair is in town and we'll be eating there. Can't wait! A busy and exciting week is ahead of us!

11 things I've learned in 11 years of marriage.

Hi friends-11 years ago, I was 19 years old. On August 9th 2003, I, a really blond, flirty teenager (ha, I was still a teen) married a handsome 18 year old pastor's son who had captured my heart from the first moment I met him.

You know what, he still captures my heart every single day.

Since today is our anniversary and we're going to be out spending one whole day and night together kidless-I thought I would share 11 things I've learned in 11 years about being married to this guy.

1. Making babies, having babies, and raising babies is not only the funnest thing to do with him, but it is also one of the most romantic things to do with him.

2. In order of importance, 1) Keeping God at the forefront of our marriage, with each of us taking time out daily to be in his word, as well as in our family. 2) Our marriage- Making sure that we take care of each other and are nurturing our spouses needs. Just like with a garden, you have to work  (although it doesn't feel like work) at it to keep the weeds out. 3) Our children-if we fail at number one...we will most certainly fail at #2 and #3.  Our kids need us, in every way.  Family and Friends are #4.

3. Josh doesn't like meatloaf. No matter how many different ways I fix it, he doesn't like it. I need to accept it and move on.

4. Respect him. It is important for me to show him respect on the days when I completely adore him and during the moments when I'm not as happy with him. My level of respect and the ways I show it should not ever change. He is my spouse, my best friend, the bread winner of our family, the father of our children, the son of his parents, and a child of God. He deserves my respect.

5. Do the things you did in the beginning. That can be challenging when children are involved. You can't go on spur of the moment dates out to dinner just the two of you when you have kids around all the time. But I find if you broaden your horizon about doing the things you did in the beginning.... we can't go out to dinner all the time, but we can create a romantic evening at home, cooking in the kitchen, with the kids around.

6. Be your spouses's cheerleader/and coach. Josh is the first person to get excited with me, be proud of me, and give me encouragement or advice on different things. I try to do the same for him. He loves to write and has started writing a book. I try to bring it up often so he knows I don't want him to give up on his dream, to encourage him, and also to show him I believe in him. Because I do. My husband has so much talent in his baby finger you could bottle it up and sell it. He also enjoys painting, singing, etc.

7. Listen to him. Much like with my children, if I'm not giving them or him my full attention when they/he are talking to me...they know it. Sit and listen. Close the book, put down the iPhone, shut the laptop. He is more important than any of that. He wants to talk to me. Share his day with me. The least I can do is be interested. I would except the same thing from him.

8. Be active together. Josh has limited mobility when it comes to his feet. He doesn't have full motion/bend-ability of his feet so while I love to run. He cannot run with me. We have to find things that are active to do together that don't put to much strain on his feet. Like biking, kayaking,  and walks. Getting out and doing active things together is not only great for health, but it allows us to try new things and find new interests together.

9. Be goofy together, no matter the hour. Last night is the perfect example of this. We had both turned out our lights and I was getting situated in the bed when Josh went in to give me a kiss and ran into my arm. I told him to hang on a moment, but the guy didn't listen. He rammed me again. Then he did it again on purpose and threw his head into my lap. We were both laughing so hard! Take the time to laugh. It is so good for your marriage.

10. Pray for him. Does he have a big meeting at work or meeting a new client? Did everything that could possibly go wrong that morning happen before he left for work. Say a prayer for him. He probably won't know you ever said it, (unless you tell him) and that's okay. Pray for him and then let God do the rest.

11. Remain lovers. I know a lot of people talk about how "once kids come along..." I'm sorry. I disagree 110%. That is only true if you let it be true. I know that by the end of the day, he and I are both tired. We've given ourselves to our kids, our jobs, family, etc that sometimes we feel like we don't have anything else to give. Sometimes all it takes is that one little explosive kiss to get the fireworks going.  ;)

These are only a sampling of things I've learned. I could keep writing. I could write a book. I find marriage to be the most fun I've ever had in my entire life and I love going to bed next to my best friend every night and seeing him the next day, whenever that is. No matter what time of day I see him again the following day, it's never soon enough. He and I just love being together. All the time. We don't get tired of each other, just hungrier for more time together. Luckily, I have my whole life to  spend with him.

 

Mocha Granita

Do you know how many cups of coffee my husband drinks a day? I've lost count. Actually, I've never counted. I'm sure it's somewhere between four and six. But that is just a guesstimate on my part. You would have to ask him for specifics.

Last week, I found out that Melissa d'Arabian had a new cookbook coming out.

*Squeal*

I adore Melissa. I watched her dominate her season of Food Network Star, then I watched her show "Ten Dollar Dinners," and then I got her Ten Dollar Dinners cookbook for my birthday one year- which I love!! Now she has a new cookbook coming out in December called Supermarket Healthy.

As soon as I found out about the cookbook, I texted Josh to tell him about it, because he likes her recipes too. Remember our first giveaway and those black bean nacho burgers that were out of this world good?

Josh's reply to me, "Oh, you mean the one I pre-ordered so you would receive it day one, December 30? That one?" Yes, that is a direct quote.

I was so tickled by his thoughtfulness that I decided he needed a treat. I had filed away this recipe in the back of my mind from one of Melissa's "Ten Dollar Dinner" episodes and decided that I needed to make it for him.

Let me tell you, this tastes just like a mocha. All you need to do is top it with whipped cream and a drizzle of chocolate syrup and you're in like Flynn. It tastes just like the beverage, but in a nice summery dessert form.

Yield: 4
Prep Time: 5 minutes
Cook Time: 4 hours
Total Time: 4 hours 5 minutes

Coffee lovers, this is a summer dessert for you! Tastes like a mocha, with brewed coffee, chocolate syrup, and sugar - frozen together to make an unforgettable, simple dessert.

Ingredients

  • 1 ½ cups hot freshly-brewed strong coffee
  • ½ cup milk
  • ¼ cup sugar
  • 2 tablespoon chocolate syrup
  • whipped cream and chocolate syrup for garnishing

Instructions

  1. Stir the coffee, milk, sugar and chocolate until well combined. Pour the mixture into an 8x8 glass baking dish. Freeze the granita until firm, stirring every 45 minutes, about 4 hours. Cover the baking dish and keep frozen.
  2. Before serving, scrape the surface of the granita with a fork until crystals form. Using an ice cream scoop, scoop out the granita and serve. Top with whipped cream and chocolate syrup.

Summer Pasta

Remember yesterday when I told you that I took three zucchinis from one of the sweet ladies in our church? I made the chocolate zucchini bread with one zucchini. I made this summer pasta with one of the other zucchinis I grabbed, along with the yellow squash I was given the previous week. A summer pasta full of fresh vegetables is the perfect dinner for our meatless Monday nights.

Josh was just saying last week that we needed to make more simple pastas. This is about as simple as it gets. Grilled vegetables, cooked pasta, and a light, flavorful sauce gently tossed together. We paired our pasta with my favorite garlic artisan bread and it was a perfect summer meal.

Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutes

A simple pasta dish that tastes, looks, and smells like summer without any hassle.

Ingredients

  • 1 lb (one box) fettuccine or linguini pasta
  • ¼ cup extra-virgin olive oil
  • ¾ cup grilled zucchini, chopped
  • ¾ cup grilled yellow squash, chopped
  • ¾ cup sliced cherry tomatoes
  • ¼ cup fresh ripped basil
  • 5 cloves garlic, roughly chopped
  • ¼ cup grated parmesan cheese
  • ¼ teaspoon red chili pepper
  • salt and pepper to taste

Instructions

  1. In a large pot, boil water and cook pasta according to package directions. Reserve about 1 cup of starchy cooking water, Drain.
  2. Slice the zucchini and squash length-wise and lightly drizzle with olive oil, salt, and pepper. Grill the zucchini and squash until grill marks appear but veggies are still firm. About 5 minutes. Chop the grilled veggies into 1-inch half moon slices.
  3. In a large saucepan, add the olive oil and garlic until soft and fragrant, about 5 minutes. Don't allow the garlic to brown. Add the grilled veggies, tomatoes, basil, chili powder, and salt and pepper to taste. Continue cooking on medium-high heat until the veggies are soft, yet firm. About 5-10 minutes.
  4. Add pasta and parmesan cheese. Add about ½ cup of the starchy water and gently toss pasta to coat. Toss with additional parmesan cheese.
