As back to school season sets in, baking up some of this oven barbecue chicken is a great, easy way to hang on to the flavors of summer!One of the things I always find myself missing after summer has departed and the cold weather sets in and it seems no longer feasible to grill outside...is barbecue chicken. There is just something about the way it tastes that makes me wish it was still summer. Especially this year because our summer seemed to skip by us. We got some weird combination of spring and summer...sprimmer, if you will. And I didn't like it one bit. I feel jipped and forgotten by summer (though, in all fairness...it's like 98 degrees outside today, so perhaps there is hope yet). 

In fact, one of the nights I tested this recipe out on family back in June was on a stormy summer night. I'm not kidding - the rain poured so hard that I thought we were going to get swept away and the wind and lightning was so bad that it took out our stop lights and power lines in town. My brother-in-law's car was hit by a falling tree branch that caught on fire! Thankfully he was unhurt, but his truck was another story - thank goodness for insurance. Needless to say, my brother didn't make it over to our house for dinner. But I sent him home a lemon bar I tested earlier that week - no barbecue chicken for him, though, poor guy.

Weekly Menu | Catz in the Kitchen | catzinthekitchen.com | #mealplanI know it's the last week of August...but how? I was just in Hawaii celebrating my anniversary, wasn't I? To say that this was a busy summer would be an understatement (aren't they always?). But I guess that's why I'm aching to cram every last bit of summer memories into each day as much as I can. 

Last week, I spent a few days soaking in that beautiful Central Oregon weather with almost all the writers from Club31Women. For the last three years, Lisa Jacobson has been treating us to the most wonderful retreat for all of her writers and I tell you, it refreshes my soul so much. I've made some of my best friends there - I'm looking at you Phylicia Masonheimer! I walk away so encouraged in my pursuit to know God more, to be a better and more authentic writer, and get to know my friends a little more than the previous year. I hope you follow me on Instagram, because over the course of this week, I'm going to be sharing all of these amazing women with you, including some of the amazing goodies that were in our swag bags that I think you will love. 

You know how when the end of the weekend approaches and you just feel good because you made good choices regarding how you invested your time - I mean, not every weekend is like that, especially for me. But this weekend was one of those positive exceptions. I've been soaking up time with my family since I got home Friday with our weekly "Pizza Fridays," watching Christian get better at learning how to ride his bike, enjoying the farmer's market, taking the kids to our local amusement park, enjoying "Sundae Sunday" at church, and ending the weekend with blackberry/peach picking and grilling up dinner outside. I don't feel like I wasted a minute...and that feels amazing!

This one pan sausage dinner recipe includes lots of bright, flavorful, and healthy summer vegetables, and it's easy to prepare - just chop those veggies!I feel really badly that we haven't taken the kids to our Farmer's Market yet this season. It's one of our favorite things to do with the kids, but this year it hasn't happened. It's been a busy season for us, as it has for a lot of people, and Josh and I are paying more attention to finding ways to slow down more and just simply rest. (Editor's Note: we've since been to the farmer's market with the kids twice! Yay!)

That being said, if you happen to have a garden or do head over to the farmer's markets on a regular basis, this dinner is for you because it features a lot of beautiful summer produce that tastes amazing when it's roasted in the oven. Also, this would be a great back to school dinner because it's all in one pan and the most time consuming part of this whole recipe is going to be...the chopping. Weekly Menu | Catz in the Kitchen | catzinthekitchen.com | #mealplanHappy Sunday, friends, I am coming to you this morning from my bed with a cup of coffee and clouds out my window. *sigh*  Our summer weather has been less than...summery. Josh and I were remarking last night that we've only had one night where it was warm enough to sit outside on our back deck and chat after the kids went to sleep. It's either been too windy or cold.

Despite the weather, we did have a fun week! We took Eden to The Piano Guys on Thursday - which was amazing (and, actually, the weather was great). I usually don't enjoy concerts because I always leave with a headache, but this one was so relaxed, beautiful, and funny! If you ever have the opportunity to see them live, I highly recommend it. It's a concert worth seeing. On Friday, we took our kids to the county fair - we go every summer and we always get corn dogs, ice cream, and funnel cake - I opted for Kettle Corn instead of funnel cake as it's not my fave. The kids went on a few rides (so expensive!) and Ruby LOVED looking at all the animals. On Saturday, we took the kids to our local farmer's market, and then we wandered through the Street of Dreams - which is a small collection of higher-end homes that have been decorated and upgraded with all the latest energy efficient tricks. Later that evening, Josh and I had our date night - we go out every other week and this time we went to the movies! We rarely go to the movies, so it honestly felt a little like being teenagers again! [Read more...]

Weekly Menu | Catz in the Kitchen | catzinthekitchen.com | #mealplanYou may have noticed (or maybe not!) that I was a little MIA last week. I was going to send an email out and explain to subscribers who don't follow me on Facebook or Instagram that I was taking a social media break for the whole week. In the end, just decided a silent sneak out the front door was best. Josh and I flew to Maui for a few days last week for our 16th wedding anniversary, and it was amazing! It was a perfect getaway to reconnect, reminisce, and relax. The funny thing is, Josh and I are not really lay-by-the-beach people - but we completely fell in love with Maui (it was our first time). The sounds, sights, and of course the food - a dreamy place, as I'm sure many of you already know!

But now I'm back and it's back to business, which is not such a bad thing because there's a lot to love in everyday life. Josh and I always say how nice it is to still love coming back to your life and home after vacation. I think it is an important aspect of gratitude, but you have to choose to see it that way! We haven't even begun to get our super hot days yet and we're already hitting the first week of August this week! Anyone else just floored by this?

While I sit over here shaking my head, let me recap our weekend. I used to do a little weekend recap in the past, but stopped because I thought you all might get bored, but so many of you have commented on FB and IG saying you enjoy watching our family and seeing what we're up too, so I'm going to share a bit!

We had an awesome weekend. Friday was busy. Eden had a birthday party she went to in the afternoon and while she was there, the kids and I grabbed lunch at Panera Bread - I had the Green Goddess Cobb salad (so good) and tried their new Summer Corn Chowder which was delish! If you haven't tried it yet, do!!! After we ran errands and picked up groceries, we relaxed the rest of the day. The kids played in the pool while I read, we had pizza for dinner - if every Friday afternoon could be this way!

On Saturday, we took the kids down to Cannon Beach for the day and the weather was beautiful and warm, which is a bit of a unicorn on the Oregon Coast!

This recipe originally appeared on Catz in June 2014. Since then, we've remade and rephotographed it, and it's simply too good and too easy not to share again! I will sheepishly admit that I forgot to season these with the smoked paprika before photographing them - my bad! But DON'T actually forget the smoked paprika! It's important!
Thank goodness, we're getting back into the season where it actually makes sense to plan an entire meal on the grill! For those of you who live in Arizona and Texas and have no idea what I'm talking about, well, just rub it in, why don't you. For residents of the great Northwest, we experience this strange natural phenomenon where water falls from the sky and the temperature often drops to a level humans find uncomfortable...for about three quarters of the year. That said, I have been known to drag my Weber kettle out just underneath the overhang, throw on a thick sweater, and grill up a couple of chicken breasts in the dead of winter. Sometimes you just can't wait for spring.

We got a few things done around the house, but not so much that we felt like we worked too hard, and we made time to relax a little and enjoy the sunshine. In fact, I'm writing this post outside on our deck and the sky is getting ready to sleep, there's a breeze gently tossing the flames of our candle back and forth, and we're listening to some slow country music. 

Sounds nice right? To be honest, Josh and I were both really convicted (I guess that's the best word) by the old(er) Craig Morgan song "That's what I love about Sunday." It's a funny way to realize something! Sometimes, it's hard to say no to all of the tasks you want to get done before Monday, but we've been feeling for awhile that we need to make changes to our weekends, particularly our Sundays, and make them more restful. To make this happen for us this Sunday, I started my laundry a day earlier so I wasn't overloaded and Josh mowed the lawn. But after that, we went outside and watched the kids play in the pool in the hot sun...and can I tell you something...it was really hard to sit there and do nothing. But how nice it felt to just do nothing for an hour or two! This needs to be a more regular thing for us on Sundays, I think. You've got to work a little harder to make time for that not-working-so-hard, but it's worth it. [Read more...]

This easy, preppable recipe does - for me it is the best macaroni salad!Anytime somebody makes a claim that something is "the best" I'm sure we all just shake our heads a little and think, "The best. Really? What makes this the best (insert recipe here) compared to other recipes?

I think what this usually means, or at least in my case means, is that within my circle of family and friends, the recipe has been received extremely well, maybe someone insists on getting the recipe for themselves, or even perhaps, I made a believer out of someone around a dish they formerly didn't like...which is the case with this macaroni salad!I've always loved the idea of macaroni salad, but never found one that excited me.
