Try something "gourmet" with this chive & goat cheese soufflé! You'll love the flavors...and having something different for breakfast, lunch, or dinner!Have I ever told you about Josh's dumpster diving days? I haven't? Well, prepare to be enlightened because it's kind of a funny thing he likes (maybe liked) to randomly do.

Way back when (six to seven years ago?) we were living in a pretty nice (pretty nice to us) apartment complex. This apartment complex wasn't like other apartments we'd lived in. Outside our particular building there was a beautiful water fountain surrounded by well maintained (and green!) grass. We had two balconies. The larger one connected our living room to our bedroom and then my daughter Grace had her own private balcony as well. Did I mention we also had two walk in closets? Weekly Menu | Catz in the Kitchen | catzinthekitchen.com | #menu #mealplanToday is a beautiful day, guys! Not only is it the beginning of the week which is always nice for a fresh start and a welcome back to routine (at least for me) but today is also my daughter Eden's birthday! Today, my darling girl turns eight years old and I would be lying if I said I wasn't a bit emotional about it. I remember as if it was yesterday holding her for the first time. This kid is pure sunshine and music (literally - she's always singing) and she's always happy. I wish you could meet her because she is simply enchanting (not that I'm biased or anything, of course...).

Usually, for birthdays, we let the kids pick out a birthday dinner. Eden requested cheeseburgers and hot dogs (she really is a little foodie - one of her favorite foods is shrimp! - but she loves herself some good 'ole Americana fare)! We scheduled the cheeseburgers for Thursday, but yesterday evening was so warm and beautiful, we couldn't wait and grilled them up early! Tuesday we're probably eating corn dogs at the county fair, which means today will be our regularly scheduled Meatless Monday and we're skipping our Taco Tuesday completely for the week (sadness!).  [Read more...]

This Chicken Shepherd's Pie may look like a pan full of mashed potatoes, but it is flavorful and zesty, filled with the flavors of Swiss cheese, sage, and thyme! 

This Chicken Shepherd's Pie may look like a pan full of mashed potatoes, but it is flavorful and zesty, filled with the flavors of Swiss cheese, sage, and thyme! I can remember the first time I was introduced to this dinner. It was last April and we were in the process of moving into our new home. We had been so busy painting (nearly every room in the house with the help of several willing family members), unpacking boxes, and cleaning our rental house that the only meals we had been eating were fast food and pizza.

You can only eat so much fast food and pizza.

My sister-in-love Jewel offered to bring us a meal one night and I can't even begin to tell you what a lifesaver that was. After four days of eating burgers, pizza, and tacos, I was so happy to eat home-cooked meal! She brought us a salad, rolls, cookies, and this chicken shepherd's pie! [Read more...]

1. I am not one to play games on my phone hardly ever. I went through a phase where I was consumed with FarmVille back in the day and I quit it one day cold turkey and never looked back. The only games you will see me play are Scrabble (with my mother-in-love and grandmother), solitaire, or occasionally Stratego on my phone. I'm just not much of a mobile game person. However...curiosity got the best of me and I downloaded Pokemon Go... It's kind of something fun to do when I have a free moment, so if you've got tips on how to play the game, I would love to hear them. :)

2. If you're looking for a page-turning, hard to put down book series to read, I highly suggest the Mark of the Lion series. I just finished A Voice in the Wind (book 1) and I am eagerly working my way through the second and third books in the series.

3. We just used chalk paint for the first time a few weeks ago on some furniture (part of an upcoming DIY post!) and we LOVED IT! Have you used it before? What have you painted with it? [Read more...]

Weekly Menu Aug 8We made it through our first week back from vacation!! Usually that first week back to reality is struggle city (and it was, workout-wise...just ask my muscles!), but we we were fortunate to have a pretty relaxing, easy week. I got to see Josh more than usual due to a few fun things his job had going on for an associate appreciation week and the kids and I got some of our post-vacation to-do list checked off by Wednesday. Speaking of checking things off the to-do list, we put up our second DIY post on Saturday, an easy one for window boxes and shutters - hope you like it!

Josh and I even watched a movie on Friday night!!! I know...we sure know how to live it up! [Read more...]

Chels and I have been working on a few DIY projects this spring and summer that we haven't shared with you yet (we did recently share the farmhouse style dining room table we built last fall, and we've just finished a less formal round table that we'll share soon!). Those are perhaps a bit more ambitious projects, but if you're looking for something super easy...look no further than these easy window boxes and shutters! 

We live in a "development," like so many Americans in the suburbs. Each house is designed to have a bit of character out front - alternating elevations, rooflines, paint colors, finishing materials, and landscaping, to keep things from looking too cookie cutter. In back, however...other than color, everything looks the same! It's a big flat wall. That's fine, of course, and from the developer's point of view, makes all the sense in the world. We spend quite a bit of time in our little backyard, though, and so we started looking at little ways to personalize it. We haven't done much yet, though we have lots of ideas! Some of them are spendy...so let's start with one that's definitely not. Each of these little projects (window box and/or shutters) can be built for around $10, so they're not going to be breaking any banks! I've been wanting to share this recipe with you for months! But I've held back. Why? Well, I feel like I've posted a lot of Mexican-type food a lot over the past few months, like fish tacos and cheese enchiladas and taco salad and I didn't want you to think that's all we ate! (Even though it pretty much is...) Josh and I keep saying to each other, if we were stranded on a desert island and could only eat one type of food, it would be Mexican food.

But...who gets stranded on a island and is only allowed to eat one genre of food? In some ways, that doesn't sound so bad. Can we make it a tropical island instead of a desert island? But back to the vacation for a moment. I know it was quiet on the blog and on the Facebook page and you know what, it's okay. I could have scheduled a lot different things to share in advance, but I just felt like that was even a lot of work on top of packing up an entire household so I skipped it all together. But...we had a really relaxing fun time away from everything! A break is nice and so is coming home. By the end of the week, believe it or not, I was ready to come back home. I think it helps when you enjoy where you live!

Overnight Blueberry French Toast is a recipe that is simple and indulgent. When you make it the day before, the morning meal is tasty and effortless!We recently had some of our family staying with us, which was a real treat because not only did that mean that we got to spend time with family, but also that our guest room was finally going to be put to good use! We've lived in our house for over a year now and the only use it's had was when Josh's brother stayed with us for two nights (and when Josh works from home and sets up a desk in there so he can work) - otherwise, it doesn't get any use.

While our guest room is not huge, it does have enough space for a queen size bed, a dresser, two night stands, and a closet - and we discovered we could squeeze in two pack 'n play cribs and a changing table...probably a partridge in a pear tree, too, if we had tried really hard! Luckily, our guests weren't picky about extra leg room...
