I think, like many of you, we just got caught up in our three day weekend. I can honestly say that I never even opened my computer this weekend...which means I've got about 200 emails to still go through! Oh well, it was worth it!

Did you guys do anything fun over the weekend? On Saturday, we took two of our kids (one was away with family) to the Japanese Garden here in Portland. They loved it! Especially Christian (our three year old son). The giant koi fish were his favorite!

Here's something you may not know: if you're a Bank of America cardholder you can get into a ton of museums and fun places (like the Japanese Garden) in your area for free on the first full weekend of every month! All you have to do is show you BofA card and your ID. Keep that in mind going forward through the next few months. Catz Review: The Freshy Bag

Freshy BagOn most normal week days, Josh brings a lunch to work. It's ridiculous how fast eating lunch out everyday adds up. Add that to a coffee habit, and you can virtually kiss any extra spending money goodbye! Anyway, usually on Sundays, we do a meal prep thing where we make our overnight oats for the week, little snack bags full of nuts, and some sort of lunch that splits up well into multiple days. We've tried enchiladas, mini chicken pot pies, falafel, and more.

This week however, we're just having sandwiches. Sorry, Josh, maybe next week you'll have something more exciting!

When we run errands over the weekend, we'll do a similar thing with our lunches. I really don't like buying fast food, so if we can pack some sandwiches, carrot sticks, apple slices, and maybe a couple bags of crackers or chips, we all really enjoy eating that. This recipe for French plum cake, also known as a "tatin" will surprise and delight your palette! It's the perfect way to showcase this special fall fruit!I sometimes wish I could live in California. I mean, hello, they have Disneyland...and Oregon does not. We have Enchanted Forest, I guess, which is our miniature version of the happiest place on earth. But...California also has fruit trees! Fruit trees galore! Orange trees, avocado trees, lemon and lime trees... I'm envious. I would love to be able to grow lemons or limes in my backyard!

So, for all of you who live in California, YOU are so lucky!!! At least for that reason. I know it's expensive and hot and you don't have water. So there's that.

We do have fruit trees here in Oregon, though. We can grow apples, peaches, pears, cherries, and plums, to name a few! We are not entirely without, it would seem. Our neighbor directly behind our house has such a beautiful front and back yard with tons of different flowers, several raised garden beds and lots of lovely trees. Some of those trees bear cherries, plums, and apples every spring and summer!

2. I love these back to school hacks from the Dollar Store! These are some great ideas for parents and teachers on a budget.

3. I wandered into Charming Charlie's for the first time a few weekends ago and was in accessory heaven. It's a bit overwhelming in there because there is so much to look at. Weekly Menu | Catz in the Kitchen | catzinthekitchen.com | #menu #mealplanI hope you all had a beautiful, sunny week! We nearly reached triple digits on Friday and I was thankful that I had gotten out early enough in the day to run my errands and get my groceries before it was too unbearable! Saturday cooled down by 10 degrees and while my daughters went to a birthday sleepover, Josh and I took Christian (our littlest) on a 10 mile bike ride - it was beautiful! (If you're local to the Portland area, check out the Tualatin River Greenway Trail Project - we really enjoyed it!)

I don't know about you, but our temps are set to drop this week and projected to stay out in the 70's for the next couple of weeks - we might even have some rain on Wednesday! I'm excited about the slightly cooler temperatures and upcoming autumn season; it's my favorite season, you know. I loved riding along the bike trails and seeing all the trees changing colors and dropping their leaves - so lovely!

So, you're having a family game night. Or an informal get together with friends. Or you're just really, really snacky.

Okay, you'd have to be pretty dang snacky to want to fix yourself a whole cheese plate...

Anyway, the point is - what's your go-to? Do you order pizza? Pickup some Chinese takeout? Maybe you're one of those special blessed people with a taco truck on the corner? We do all of those things, depending on the crowd (and our taco truck is only about two miles away, so I shouldn't complain...) and there's nothing wrong with that.

Fresh, a little rustic, and oh-so-tasty, this Tomato Basil Pie recipe is just the dish to showcase those tomatoes bursting out of your garden this fall!Something strange is going on in my garden. I can't quite figure out how it happened, but I am up to my ears in tomatoes! We only planted two plants (plus one cool little hybrid plant that grows cherry tomatoes on top and potatoes on the bottom - "ketchup and fries"!).

I didn't do anything special to the garden this year. In fact, I left the planting to Josh and the kids because I was under the weather back in April when we planted. The only thing I can think of is that maybe ALL the sun we had in April and May jumpstarted the tomatoes' growth process.

1. This weekend, Josh and I visited the Street of Dreams. Josh and I go almost every year just to get a few ideas and walk around while we look at pretty houses. One house (our favorite) was almost straight out of Fixer Upper (except for being so huge) and it was gorgeous. It had shiplap and my heart fluttered through the whole thing. If you live locally here in Portland, Oregon, you should definitely check it out.

2. I FINALLY went to Salt & Straw! It's a bit of a crime that I haven't visited one of their locations before. Walking up to the shop with all of that freshly made ice cream greeting me on the sidewalk had me like, "Aaaaaah!" It smelled so good. I had the Coconut Mint Chip Whoopie Pie, which was so delicious! I realized after I ate it that it was completely vegan - but I couldn't tell. Josh got the Stumptown Coffee & Burnside Bourbon and he was in a bit of flavor heaven, I think. I've never seen someone take so long to eat a cone as he did, savoring every bite! Haha!

3. You guys, I found the most perfect scarf at Loft on Sunday with a whale on it!! How excellent is that for my weekend of whale watching? It's even a sperm whale, so...obviously...I named my whale Moby Dick! (No brainer, right?) I lucked out because Loft is having one of their crazy 50% off sales - which is always one of my favorite times to go because they are marking down spring and summer items, and I can always find some great staples to go with jeans and leggings, so make sure you don't miss the sale because it's a good one! Weekly Menu | Catz in the Kitchen | catzinthekitchen.com | #menu #mealplanI hope you all had a wonderful weekend! We had quite the full weekend ourselves! Our three kids spent the entire weekend with my parents while Josh and I celebrated a belated anniversary weekend. We ate (a lot of) good food, spent a lot of time talking and hanging out, and went on a whale watching cruise! That definitely was the highlight of the weekend and so, so much fun!

I actually think we might even wrote a post about it, as the details of that kind of excursion might interest some of you!

But now that the kids are back home and the laundry is going, it's time to get back to the weekly menu! It's a full seven day menu this week with some of our favorites, a few requests from the kiddos, and one new recipe I'm working on.

Our weather this week is a little schitzo, today actually only getting to the mid 70's and by midweek we hit the 90's again...and then come back down a bit for the weekend. We should be taking this opportunity to grill a bit...but I'm trying to use up tomatoes and some pantry staples I have on hand...
