Aren't you surprised to see a weekly menu after several weeks of it being absent? We had family in town for about two weeks and during that time we all got together for dinner nearly every night! But now, all our family has left...and so here we are with a menu!

However, next week we'll be on vacation so we may or may not have one for that week. Not sure yet. But, let's focus on this week. How's your summer been so far? Our weather has taken a weird turn to cloudy days that end up either chilly or humid with a random hot, sunshiney day thrown in just to mix things up.  These pineapple teriyaki burgers are simple, practically foolproof, relatively healthy, and make-your-tastebuds weep yummy. Make, eat, repeat.

This post originally appeared on Catz in August of 2011 - one of our earliest burgers! It continues to be one of our all-time favorite summer recipes, and one we make over and over again every year. This year, we've started making it with fresh pineapple, hence the reshoot, update, and reshare! Canned Dole pineapple is excellent, and will certainly do if you don't have a whole, fresh pineapple handy, but if you can get your hands on one of these tropical beauties, use it - there's nothing quite like it!

It is only appropriate to begin this post by stating that there are few things in this world as wonderful as pineapple. It's important to get that out of the way at the onset, as well as to ensure that we share common ground in this area. There's an episode of The West Wing (my all-time favorite television series) where a character remarks that he loves to race sailboats, and he sometimes has difficulty communicating with and understanding people who don't race sailboats.   1. I started another "new" book the other week. I got Mere Christianity for my birthday back in December and this is the first chance I've had to begin reading it. So far, loving it - though it's intellectual, it's not hard to follow.
  2. Our grocery store (we shop at Fred Meyers which is owned by Kroger) has just launched online shopping called ClickList! Have any of you used this feature yet? I tried it out last Friday and it made my life a million times easier. Somethings I'm still having to figure out, but I was impressed and who I came home from the store, I wasn't exhausted like I usually am. I actually had time to play with the kids! Best Friday EVER!
  3. We get asked about this a lot, so in case you're wondering, I will tell you kitty caps work! If you aren't sure what they are, they are little rubber claws that go over the existing claws. I would say they last for two weeks on average. One of our cats doesn't mind us putting them on her and our other cat just hates them. But it saves our furniture a little bit and some of it is just beyond saving, lol!
  4. For you Gilmore Girls fans, if you haven't seen this little video yet, it's kind of a hoot and completely promoting the new Gilmore Girls installment, but who cares because it's classic Rory and Lorelei!

This recipe is a serious melding of savory and sweet, where serrrano chiles meet Oregon raspberries! Try these Savory Black Raspberry Goat Cheese Crêpes!

Way back in the good ole days (that would be 2013), we discovered this amazing and slightly spicy recipe for a savory blackberry sauce. At the time, of course, we were using it to douse pork chops in...and it was good for that. Like, really good for that. We were all a bit blown away by how deep and delightful the sweet and savory flavor was.

On the sweet side (we'll get to savory in a minute), you've got honey and sweet, succulent (local!) Oregon berries, be they blackberries, which we used for the pork, or black raspberries, which we are using in this recipe. We're utterly spoiled with the abundant goodness of Oregon's berry crop every year, and though we try not to take it for granted, sometimes it's hard to remember that we're pretty blessed to have easy access to such a dynamic, healthy, and natural ingredient!  [Read more...]

But next week, however, should be a bit longer weekend for ALL of you with Monday being the 4th of July! I love the 4th, but I always seem to get eaten alive by all the mosquitos. I need to remember to bring a second change of clothes that includes jeans, long sleeves, and socks. (Don't) remind me to tell you about the year that I got ten bites on the top of one of my feet. It itched, it was red, it looked like I had some sort of foot disease...

We decided to try this DIY Farmhouse Formal Dining Table project, despite having no experience with building - and we're so glad we did! It's perfect!Chels and I have been toying with the idea of sharing some DIY experiences with you in addition to the recipes and meal planning and random Tuesday ramblings you've come to expect from Catz. The thing is...we really don't have any experience DIY'ing. At least, not with anything major. But, we realized that's probably where most of you are. I'm sure there are a few of you out there who are just regular DIY geniuses, can build anything with enough toothpicks and bailing wire, and have a garage stocked with every tool imaginable, just like there are probably quite a few of you who are far more talented in the kitchen than we can ever hope to be! 

But, claiming expertise in any particular area has never really been the point of Catz. Chels started randomly blogging recipe experiences back in 2010 with the simple objective of inspiring herself to be more creative with our family meals. Our aim hasn't changed, with the added goal of inspiring and encouraging creativity around your family tables, too! So, in that same spirit, we'll share with you a few initial forays into the rather daunting (for us) DIY space. And we'll start with our first real project - this incredible farmhouse-style dining table, built using the amazing plans published by Shanty 2 Chic. If you're not familiar, sisters Ashley and Witney are really quite brilliant when it comes to making this kind of DIY project accessible to a novice - I certainly would not have been as confident undertaking it without their great tips and clear instructions! Looking for a quick and easy meal you don't have to babysit on the grill? These Grilled Chicken Sausage Foil Packets are tasty, fun, and flexible!Do you have a Costco near you? We do, and like apparently everyone else in the world, we do our "monthly Costco trip" on a Saturday. We like to go when it's busy because...samples!

Sometimes Josh and I wonder if we're crazy or just plain stupid (or both) for doing a Costco run on a half-empty stomach just so we can enjoy the samples. But in order to get these "coveted" samples, you have to carefully park your cart out of the way of the sea of people and patiently stand there and wait for the sweet (often older) people to hand out the samples.

The longer you wait, the more hangry you get. And let's just say "first come, first serve" isn't always applicable in these situations because there are always the people who jump in front of you and take the last sample that you were calmly impatiently waiting for. [Read more...]

It is not like that today. You guys, I'm tired! (By the way, "I'm tired" is the theme of my week, it seems...). By the time Josh and I get the kids in bed - which we aim to do about 8:30 every night, I am (we are) just beat.

Weekly Menu | Catz in the Kitchen | catzinthekitchen.com | #menu #mealplanHow was everyone's Father's Day? We celebrated with, of course, pie! I made this pie again per Josh's request and we had his parents over for a dinner. We made our teriyaki turkey burgers, but swapped the turkey for chicken and it was delicious!

We were all a little pie'd out from the afternoon so we skipped dessert, haha!

Remember last week when I told you we were starting a meal prep Sunday? Last Sunday's prep went so well and it was so nice and easy to pull out our breakfast and lunch when we needed it and everything was done! So we decided to give it a go again this week. This week, along with the overnight oats (I prepared ten jars yesterday!), we also made chickpea falafel patties with a quinoa tabbouleh salad to go together and Parmesan chicken wraps.

Let me tell you, I'm getting excited about lunch now...whereas before, it was the least exciting meal of the day!

With that, I'm going to leave you guys with this week's menu. Make sure you take a peek at older menus if you want some more great dinner suggestions. Enjoy the first day of summer/longest day of the year with your family tonight...maybe roast some s'mores?!
