December 1, 2015 By Chelsia Rief Leave a Comment

If you are looking for a festive addition to your holiday brunch gathering, make these Cranberry Almond Popovers. Not only are they beautiful, but super yummy, too!

After putting off buying a new pair of running shoes for nearly a year, I finally found a pair that were majorly on sale at DSW at the beginning of November - and super cute, too! I do a lot of my workouts at home (only venturing out to our local gym for the treadmill), so I was able to break in the shoes in the comfort of my own home doing Zumba, HIIT, stationary bike, and several other workouts without blistering my feet and bumbling around like a dork at the gym.

The first week was tough. The shoes were tight on my feet and I was going through the phase where you almost regret buying new shoes. But after purchasing some thinner socks and stretching out the shoes a bit more, I was in business and no longer teetering on the edge of regret.  [Read more...]

Tuesday's Tidings for December 1, 2015

Tuesday's Tidings

Hers

  • How many of you Black Friday'd and Cyber Monday'd? I did a little  Cyber Monday shopping myself yesterday. But if you are planning on doing anymore online shopping I suggest you shop through Ebates so you can get cash back on all of your purchases! It's kind of genius because you're getting paid to shop!
  • What's your favorite Christmas movie? I really love Miracle on 34th St. and The Nativity Story but for fun we like Elf and we always watch The Polar Express with the kids.
  • Sometimes I shop at TJ Maxx and I think these Tips will come in handy the next time I shop there. Something to keep in mind if you are going to be shopping for home goods, clothes, etc.

Weekly Menu for the week of Nov 30

Weekly Menu | Catz in the Kitchen | catzinthekitchen.com | #menu #mealplanThanksgiving is over and we're officially in the full swing of the holiday season. Which means I'm ecstatic! (Btw, how was your Thanksgiving? Ours was wonderful, mellow, and full or good food!) I took down all of my Fall decorations on Friday and hung up my Christmas wreath on our front door and we've begun playing Christmas music (like full-on loud, lyric songs!) in the house, especially while we cook dinner.

Did any of you brave the stores on Friday? The kids and I went grocery shopping and that was it. I took advantage of our store's notorious sock sales and snagged Eden a set of tights and Christian some socks, but that was it. I didn't do any shopping online either...maybe I will today, though, for Cyber Monday.

Josh and I have this ongoing date-night tradition of sharing my Birthday burger and split a Gingerbread Shake from Red Robin (my birthday is the 24th) and then we go do Christmas shopping together and I find it really enjoyable. It's low-key (not "Loki" as my kids would say) cozy, and kind of romantic. I look forward to it every year!

This week's menu has a few favorite dishes that we make often and a couple of new ones I haven't tried yet. Between the Thanksgiving turkey on Thursday and our Mini Turkey Pot Pies on Friday and turkey sandwiches on Sunday, I'm a little turkey'ed out. But if your looking for a few previous menus to help inspire you, check out our Pinterest board.

This post originally appeared on the blog in November of 2013. We've changed up the recipe a little bit and updated the photos, but it's still just as yummy as ever, and the perfect brunch for any post-Thanksgiving company you may be entertaining over the weekend!

I told you we blogged about French Toast a lot. Obviously, I wasn't kidding. I think we're going to change the name of this blog to French Toast in the Kitchen, possibly a more appropriate title, since we don't really write about cats very often. However, to keep the funky spelling in play, it would probably need to be Phrench Toast, but that's a whole new conversation...

Ale, Cauliflower, & White Cheddar Soup

Ale, Cauliflower, & White Cheddar Soup | Catz in the Kitchen | catzinthekitchen.com | #whitecheddar #soup #beer

I should be posting a Thanksgiving recipe today, but I'm a multi-tasker and I can't just focus on one thing. I have to stop and move on to something else, otherwise I burnout! But because I love you all, I do have a Pinterest board with every Thanksgiving dish your little heart desires. And let's not forget, I did share one mighty fine looking autumn dessert with you on Wednesday.

However, winter is upon us and I'm thinking about you in the long run, not just the short run (i.e., holiday dishes), which is why I'm sharing a warm, delicious, rich, bold soup with you today.

You can't just eat pumpkin pie, stuffing, and rolls everyday now can you?

For the rest of the calendar year that is not holiday driven, you gotta eat real food! [Read more...]

Pumpkin Cranberry Cheesecake

November 17, 2015 By Chelsia Rief 2 Comments

This recipe for Pumpkin Cranberry Cheesecake is simply bursting with fall flavors, from its sweet cookie crust & creamy filing to its tart festive topping!

Pumpkin Cranberry Cheesecake | Catz in the Kitchen | catzinthekitchen.com | #dessert #pie #cranberries #Thanksgiving

I've been promising my daughter Gracie that I would follow through on her request and make her a cheesecake. You see, she asked if I would make her one for her birthday back in May, but we were very busy with the whole moving into a new house thing and Grace's birthday happened to fall smack-dab in the middle of it.

So you see, I owed her big time.

Back when I went through all the recipes that I wanted to make during pumpkin season, I knew I wanted to surprise Gracie with this Pumpkin Cranberry Cheesecake. I knew she would love it as much as I loved the idea of it simply because she shares my affinity for #pumpkinflavoredeverything!

Is she a keeper or what? [Read more...]

Tuesday's Tidings for November 17, 2015

Tuesday's Tidings

Hers

  1. Let me preface this by saying I am not the biggest Oreo fan. I like them. But I don't love them. When we picked up the new holiday Gingerbread Oreos from Target last week, imagine my surprise when I discovered that I LOVE this flavor combination! Seriously, this is one package of Oreos I would gladly inhale!
  2. I'm just sending out a Thred Up reminder to all of you wonderful readers to consider shopping from their online consignment and thrift shop during this holiday season. We're no doubt going to be invited to fun holiday parties and we're going to want to look nice. Don't spend an arm and a leg, instead shop online at Thred Up and from now until December 14th, all orders have free shipping! To get you started I'm giving you $20 toward your first purchase (for new members only) and this helps me out too, because when you use your $20, I get $20 too! Which is great for me because then I can find something for the kiddos or...perhaps...myself...
  3. Last week, we watched two new movies. The first one was Inside Out which was literally the cutest movie EVER! A great gift idea, I might add. The other movie Josh and I watched was Mr. Holmes. It was very well acted, but I found myself to be slightly bored during it. Of the two, rent Inside Out. It really is a great family movie!

Weekly Menu For The Week of Nov 16

Weekly Menu | Catz in the Kitchen | catzinthekitchen.com | #menu #mealplan

Weekly Menu | Catz in the Kitchen | catzinthekitchen.com | #menu #mealplanSo, the countdown is on. It's the week before Thanksgiving. Yes, I just said that, and no, I can't believe it either. Since next week is Thanksgiving, we won't be posting a weekly menu. Of course, I'll still be making one, but we have quite a few things going on in our household that week and after Wednesday, our week will be in flux - much like yours, I'm sure!

But that's next week and we're talking about this week. This week is busy, too (holiday weeks - no surprise!) and we've got our church's annual Thanksgiving potluck, so my menu is hanging out on the easy side - easy, but, oh, so tasty!

I love weeks like that, don't you? Okay, everyone, have a great week. Make this week easy on yourself, because next week you'll either be helping provide, hosting, or traveling for the big event!

Okay, I gave you two full weeks off from any pumpkin recipes.

And I still have one more waiting in the wings to share next week, too! After that, believe it or not...that will probably be it until next fall. I'm not sure how I feel about that.

I'm grieving a little at just the thought.

Maybe I'll slip in one or two more if I can. Would you guys like that or should I just move on to all things eggnog and peppermint? [Read more...]
