Weekly Menu for the Week of Mar 1

Hello, friends! I know it's been awhile since I've gotten on here with a recent weekly menu, but it's for a good reason, I promise! If you head to our main blog page, you may have noticed that the blog looks a little different...that's because we're in the process of a new look for our site! I think it's looking pretty good so far, but we're still working on integrating the look we want, especially as it relates to the home page, which is a bit of a challenge...


Aside from the new blog layout, you may have heard that Oregon got pummeled with quite a massive snow and ice storm. We ourselves were without power for several days, including cell service, and some of our family was out of power for over a week!

We've all been recovering from that and trying to get back into the swing of things, which ya know, doesn't just happen overnight. With the blog makeover and the time that has taken, plus all of the weather stuff, taking a mini break seemed like the right move for us.

Sadly, due to weather, school, and ya know life, I haven't been in the kitchen experimenting at all - but I plan to make time for that this week. In the meantime, I do have a new weekly menu for this week!

Here's what we're cooking this week:

Stuffed Peppers

This family-friendly recipe for stuffed peppers takes a bit to cook, but you can prep them in just 20 minutes, and they're only about 300 calories!

Breakfast Chorizo Hash

There's something about it that just says spring to me...it must be all of the bright, vibrant flavors in those recipes.
