Happy Cyber Monday and thanks for stopping by for this week’s menu! I didn’t host Thanksgiving this year so I don’t have really any leftovers. I have cranberry sauce that I made and forgot to bring to my in-laws house (OOPS!) and mashed potatoes that they sent me home with. I do have a couple of boxes of stuffing in my pantry and some rotisserie chicken, so I’m going to make a Thanksgiving casserole with some of those items and I’ll serve it with a salad. Easy, done!
We got to have Grace home for Thanksgiving and that was so nice. Cadáin even remembered her! We also had family in town, so probably for like many of you, it was a busy and full weekend. It’s always sad to see a holiday end, but I love a good work-week reset.
